RASPBERRY CRUMBLE BARS
Steps:
- Preheat the oven to 350 degrees.
- Place the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and mix on medium speed just until combined. With the mixer on low, add the vanilla.
- Sift the flour and salt together and, with the mixer on low, slowly add to the butter mixture, mixing until it almost comes together in a ball. Turn the dough out on a board. Lightly pat two-thirds of the dough evenly on the bottom of a 9-inch square baking pan and about 1/4-inch up the sides. Spread with the jam, leaving a 1/4-inch border. Mix the granola into the remaining dough with your hands. Break the dough into small bits and distribute it on top of the jam, covering most of the surface. Sprinkle the almonds on top. Bake the bars for 45 minutes, until lightly browned.
- Cool completely and cut into 9 or 12 bars. Sprinkle lightly with confectioners' sugar.
INA'S HOMEMADE GRANOLA
This is Ina Garten's recipe (The Barefoot Contessa) and I think it is delicious. However, I have never made any of her recipes that I didn't think was delicious. I love this over yogurt.

Steps:
- Preheat over to 350 degrees.
- Toss, oats, coconut and almonds together in large bowl and set aside.
- Whisk together the oil and honey in small bowl and pour over the oat mixture and stir with wooden spoon until all the oats, coconut and nuts are coated.
- Pour into a 13x9 baking pan and bake. Stir occasionally with spatula until mixture turns a nice golden brown about 45 minutes.
- Remove granola from oven and allow to cool, stirring occasionally. Add the apricots, figs, cranberries and cashews. You can put whatever mix of dried fruit in that you please. I have even started to put in a cup of dark chocolate chips after the oats mix has cooled.
- Great snack!
- Store cooled granola in airtight container.
HOMEMADE GRANOLA

Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.
- Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.
CHERRY, ALMOND AND CINNAMON GRANOLA
Steps:
- Preheat the oven to 350 degrees F.
- Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Add the cinnamon, and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 25 to 30 minutes.
- Remove the granola from the oven and allow to cool, stirring occasionally. Store the cooled granola in an airtight container.
ROASTED HAZELNUT GRANOLA
Steps:
- Preheat the oven to 350 degrees.
- To make the granola, toss the hazelnuts, cashews, oatmeal, almonds, coconut, oil, and honey together in a large bowl until they are completely combined. Pour onto a sheet pan and bake, stirring occasionally with a metal spatula, until the mixture turns an even golden brown, about 20 minutes.
- Remove the granola from the oven, scrape the pan with the spatula to loosen the granola, and allow to cool, stirring once.
HOMEMADE GRANOLA BARS
These granola bars make the store-bought ones taste like cardboard! Experiment with your own combinations of fruits and nuts. You'll never get bored. I saw Ina making them on her Food Network show "The Barefoot Contessa" and knew I had to bake them. After I made them I knew I had to share them with my fellow bakers.

Steps:
- Preheat the oven to 350 degrees F. Butter an 8 by 12 inch baking dish and line it with parchment paper.
- Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.
- Reduce the oven temperature to 300 degrees F.
- Place the butter, honey, brown sugar, vanilla and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dates, apricots and cranberries and stir well.
- Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into 2" squares. Serve at room temperature.
- If you eat the granola bars immediately after cutting, they will be very crunchy. Store them in an air tight container and they will soften a lot over the next 3 days. I think they taste better too.

Steps:
- pre-heat oven to 350F degrees.
- place 1st four ingredients on cookie sheet and toast in oven for 15 minutes.
- While that is toasting, add all other ingredients in large bowl and mix when complete.
- When oats and nuts are done toasting, let cool for 10 minutes so they don't melt the chocolate chips. While they cool, grease a 9x11 baking dish and line bottom with parchment paper or foil.
- mix all ingredients until well blended. spoon into baking dish and press down until flat and smooth (you will want to oil your hands so they dont stick).
- bake for 25 minutes. let cool for 5 minutes and cut along sides with knife or spatula and dump out onto a cutting board (parchment/foil will make it not stick to bottom). Cut into 12 bars. if they break apart, mold them back together. these will harden when fully cooled.
