Number Of Ingredients 8

5 cloves garlic, smashed
Kosher salt
4 Yukon gold potatoes, cut into a medium dice
Olive oil
1/2 Spanish onion, cut into a small dice
1 pinch crushed red pepper
Splash of chicken stock, as needed
1 bunch fresh chives, finely sliced

Steps:

  • Add 3 cloves of smashed garlic, a few large pinches of salt and potatoes to a large pot and cover with cold water. Bring to a boil over high heat and cook until potatoes are just tender, about 10 minutes. Drain potatoes and discard the garlic. Transfer the potatoes to a sheet tray lined with a clean dish towel to dry slightly.
  • Add enough oil to coat the bottom of a large skillet and heat over medium heat. Add the onion and cook, stirring, until just translucent, about 5 minutes. Add the crushed red pepper and the remaining 2 cloves garlic and cook, stirring, until soft and tender, about 3 minutes. Increase the heat to medium-high and add the cooked potatoes. Cook, stirring frequently, until the potatoes start to get crispy and golden brown on all sides, about 5 minutes. (If the potatoes get too dry, add the chicken stock.) Remove from the heat and stir in the chives.

1 russet potato, scrubbed
1 sweet potato, scrubbed
3 tablespoons salted butter
1 cup chopped red bell peppers
1 cup chopped yellow squash
1 cup chopped zucchini
1/2 red onion, chopped
Salt and freshly ground black pepper
4 large eggs

Steps:

  • Pierce both potatoes a few times, put in the microwave and cook on high until cooked through, 5 to 10 minutes. Carefully remove the skin from the sweet potato. Dice both potatoes and set aside.
  • In a medium skillet, melt 2 tablespoons of the butter over medium heat. Add the bell peppers, squash, zucchini and onions and cook for a few minutes. Add the diced potatoes to the veggies and cook until golden brown. Season with salt and pepper.
  • In a separate pan, melt the remaining tablespoon of butter over medium heat and crack in the eggs. Cook until the whites have set, 3 to 4 minutes.
  • Serve up the hash with a fried egg on top of each portion.

A quick and delicious potato dish. Great for a weeknight meal. This dish goes very well with the Succulent Roasted Game Hens in a Jiffy recipe. Note to World Tour participants - this dish, the ingredients, and the cooking method, are typical for the Southwest U.S. region. If you add some hot peppers, it will also be typical for U.S./Mexico border cooking.

1 tablespoon olive oil
1/2 red bell pepper, diced
1/2 red onion, thinly sliced
2 stalks celery, sliced
1/2 teaspoon paprika
1 1/2 teaspoons minced thyme leaves (or 1/2 tsp dried thyme)
2 tablespoons minced parsley
salt and pepper
1 -2 russet potato, cut into 1/2 inch cubes, patted dry
1 cup chicken broth or 1 cup vegetable broth

Steps:

  • Heat oil in heavy skillet over high heat.
  • Add bell pepper, onion and celery.
  • Cook, stirring often, until soft, about 5 minutes.
  • Add paprika, thyme, parsley, salt and pepper to taste.
  • Stir in potato.
  • Add broth; heat to boiling.
  • Lower heat to simmer; partially cover pan.
  • Cook, turning occasionally, until potato is tender, about 10 minutes.
  • Keep warm until ready to serve.

2 tablespoons unsalted butter
4 scallions, chopped
1 pound Yukon gold potatoes, peeled and cut into 1/4-inch dice

2 cups shredded beef from Italian Slow Cooker Beef Sandwiches with Giardiniera Aioli (recipe follows), chopped
3 tablespoons chopped flat-leaf parsley
4 pounds boneless beef chuck roast, quartered
2 red, orange or yellow bell peppers, seeded and sliced
1 small onion, halved and thinly sliced
2 cloves garlic, chopped
One 15-ounce can diced tomatoes with basil and oregano
One 15-ounce can diced tomatoes with basil and oregano
2 teaspoons Italian seasoning
1/2 teaspoon whole fennel seeds

Steps:

  • Melt the butter in a large nonstick skillet over medium-high heat. Add the scallions, potatoes, 1/2 teaspoon salt, and pepper to taste. Cook, stirring occasionally, until the potatoes are golden brown and just tender, about 10 minutes; reduce the heat slightly if necessary to prevent the potatoes from burning. Add the beef and cook, stirring, until hot, about 5 minutes. Season with salt and pepper, and stir in the parsley.
  • Combine the chuck, bell peppers, onions, garlic, tomatoes, Italian seasoning, fennel seeds, 2 1/2 teaspoons salt, and some pepper in a slow cooker. Cook on the low setting for 8 hours. Use a ladle to remove some of the excess fat from the surface, then coarsely shred the beef with two forks. Season with salt and pepper.

This is a great side dish for when you are grilling, or camping (in a cabin that is). A friend of mine came up with the inital idea for the dish one night, but I have added to it as time passed. It is a favorite recipe among family and friends.

7 large potatoes, chopped (do not peel)
1 green bell pepper, diced
1 medium red onion, diced
4 ears corn
1/2 cup olive oil
0.25 (6 ounce) jar steak seasoning (I use a local seasoning called regas, but I am sure any steak seasoning would work)
2 tablespoons ground pepper
0.5 (12 ounce) can beer (I prefer Miller High Life for this recipe)
2 cups cheddar cheese (shredded)
sour cream

Steps:

  • Heat oven to 500 degrees.
  • Cut corn kernels off of the cobs and put in a lage mixing bowl. Add the potatoes, onion, and belle pepper and mix until blended. Stir in the oil until everything is well coated and then add the pepper and steak seasoning.
  • Pour into a greased 9x13 glass pan. Pour the beer over the top and cover with foil. Bake for about 30 minutes or until juices are bubbling. Remove foil and bake for another 30 minutes.
  • Remove pan from oven and stir in cheese until melted then serve. Top with sour cream if you like.
