Kutsinta - Philippines Brown Rice Cake image

This recipe posted for ZWT II - Asia. Kustinta is a brown rice cake, a favorite snack in the Philippines and is good with freshly grated coconut. The Lye Water (potassium carbonate solution) can be purchased in most Asian Food Stores.

1 cup rice flour
2 cups brown sugar
3 cups water
1 teaspoon lye water
freshly grated coconut

Steps:

  • In a mixing bowl, combine all the ingredients and mix well.
  • Pour into muffin cups, until half full.
  • Steam in a large pan with a cover; the water should be 2 inches deep.
  • Cook for 30 minutes or until a toothpick inserted comes out clean.
  • Add more water if needed until cooking is done.
  • Remove from the muffin pans and serve with freshly grated coconut.

  • In a bowl, put all the dry ingredients. The all-purpose flour, glutinous rice flour and brown sugar. Mix well.
  • Add ½ cup of water at a time to the mixture. Mix every time you add water until mixture is thoroughly dissolved and smooth.
  • Add lye water and the achiote mixture. (Note: Take the water to dissolve the achiote from the 1 ½ cup this recipe calls for.)
  • Get another bowl and pour mixture through a strainer to get rid of lumps for a smoother consistency.
