Categories     Salad     Side Dish

Time 40m

Number Of Ingredients 11

6 medium white potatoes or Yukon golds ( , about 2 1/2 to 3 pounds, skin on and quartered)
3 tablespoons white vinegar
2 celery stalks (ribs) (, diced)
6 green onions (, diced)
5 hard boiled eggs (, peeled)
1 1/2 cups Miracle Whip or mayonnaise
1 tablespoon yellow mustard
1 1/2 teaspoons celery seed
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
paprika for garnish

Steps:

  • Add the potatoes to a large pot of cold water and bring to a boil. Reduce the heat to a lightly rolling boil over medium heat and add 1 teaspoon of kosher salt. Cook for 20-25 minutes or until the potatoes are easily pierced with a fork or paring knife. Drain and set aside until cool enough to handle.
  • Peel the skins from the potatoes and cut into 1/2" to 3/4" square pieces. Transfer the warm potatoes to a large mixing bowl and sprinkle with the white vinegar. Toss the potatoes with the vinegar and set the potatoes aside to cool, about 15-20 minutes.
  • Add the celery and the green onions to the potato mixture. Chop 4 of the hard boiled eggs and add to the potato mixture.
  • In a medium bowl, mix the Miracle Whip or mayonnaise, yellow mustard, celery seed and salt and pepper. Fold into the potato mixture and season with more salt and pepper to taste. Slice the last egg into thin slices and place the slices on top of the salad. Sprinkle with paprika if desired. Chill for at least 1 hour or overnight before serving.

KURT'S POTATO SALAD

Kurt's Potato Salad image

This is from the book Beat This and it is the only time I will ever use Miracle Whip. The recipe is from a reader in Winnipeg, so with this post I pay homage to him. Cooking time is actually chilling time.

Time P3DT30m

Yield 6-8 serving(s)

Number Of Ingredients 11

8 medium red potatoes, boiled with skin, peeled when cool
3 ounces garlic ring sausage, diced (see note)
2 slices bacon, thick cut (drain well)
2 medium tomatoes, seeded and chopped
2 hard-boiled eggs, chopped
2 medium dill pickles, drained and minced
2 tablespoons onions, minced
2 tablespoons fresh parsley, minced
1 tablespoon chives, chopped or 1 tablespoon green onion
2/3 cup mayonnaise, plus more if needed
1/3 cup Miracle Whip, pluse more if needed (see note)

Steps:

  • In a large bowl, mix everything together except mayonnaise and Miracle Whip.
  • Add the mayo and Miracle Whip.
  • Taste for seasonings.
  • If you want salad moister, add the mayo and Miracle Whip using the same 2:1 proportions.
  • Chill the salad for several hours (or up to 3 days), but bring back to room temperature before serving. It tastes better.
  • NOTES: Garlic ring sausage is also Kielbassa Sausage. If unable to find substitute salami and add a cloved of minced garlic.
  • Miracle Whip is VERY IMPORTANT. The recipe needs it because salad dressing has sugar and vinegar in it and provides just the right combination of mayo mix. I know people may not like Miracle Whip but please, just this once.

HEALTHIER POTATO SALAD

Healthier potato salad image

Swap most of the mayo for yogurt and crème frâiche and cut the fat of classic new potato salad by almost two thirds

Provided by Angela Nilsen

Categories     Buffet, Lunch, Side dish

Time 20m

Number Of Ingredients 9

750g Charlotte new potato , skins left on
2 tbsp good-quality mayonnaise (we used Hellmann's)
3 tbsp natural yogurt
3 tbsp half-fat crème fraîche
1 tsp Dijon mustard
1 tbsp semi-skimmed milk
8 spring onions , ends trimmed, halved lengthways and sliced
3 tbsp snipped chive
1 tbsp chopped tarragon

Steps:

  • Cut the potatoes into 2.5-3cm chunks (step 1), so that they are all the same size and will cook evenly. Put them in a pan of boiling water. Once the water has returned to the boil, lower the heat slightly and cook for about 10 mins or until just cooked and still keeping their shape. Tip them into a colander to drain well, then transfer to a large bowl.
  • While the potatoes are cooking, mix together the mayonnaise, yogurt, crème fraîche, mustard and milk. Add the spring onions, then most of the chives and tarragon to the potatoes (step 2). Season with pepper and a pinch of salt.
  • Spoon the dressing over the potatoes while they are still warm (step 3), then toss gently together so that they are well coated but don't break up. Tip the potato salad into a serving bowl and scatter over the remaining chives and tarragon. Serve cold - but the flavour is best if not served straight from the fridge.
