KURT GUTENBRUNNER'S POTATO AND CUCUMBER SALAD
Kurt Gutenbrunner is a New York chef, and this potato salad is quite different from the normal mayonnaise-based but very flavorful.

Steps:
- Put cucumber slices in a bowl and toss with 2 teaspoons salt and set aside.
- Put potatoes in saucepan and cover with water and add a generous pinch of salt and caraway seeds.
- Bring to a boil and cook until potatoes are just tender.
- Drain, peel, and slice into a bowl while still warm.
- Season with salt and pepper.
- In a saucepan, bring stock and onion to a simmer.
- Add to potatoes, and toss gently until silky and lightly thickened.
- Fold in mustard, vinegar, and oils.
- Drain cucumbers well, squeezing out excess liquid. (Liquid can be used in soups or sauces.).
- Fold cucumbers into potato salad.
- Add more salt, pepper, and vinegar if needed.
- Add sour cream, creme fraiche, or yogurt if wanted.
- Serve as first course or side dish.

CLASSIC POTATO SALAD

- Boil, peel and cube 2 pounds russet potatoes; toss with 2 tablespoons cider vinegar and 1/2 teaspoon salt. Mix 2 cups mayonnaise, 2 chopped scallions, 1 chopped celery stalk, 1 tablespoon each dijon mustard and vinegar, 1 teaspoon sugar, and salt. Toss with the potatoes.
MY GRANDMA'S BEST POTATO SALAD RECIPE
Steps:
- Add the potatoes to a large pot of cold water and bring to a boil. Reduce the heat to a lightly rolling boil over medium heat and add 1 teaspoon of kosher salt. Cook for 20-25 minutes or until the potatoes are easily pierced with a fork or paring knife. Drain and set aside until cool enough to handle.
- Peel the skins from the potatoes and cut into 1/2" to 3/4" square pieces. Transfer the warm potatoes to a large mixing bowl and sprinkle with the white vinegar. Toss the potatoes with the vinegar and set the potatoes aside to cool, about 15-20 minutes.
- Add the celery and the green onions to the potato mixture. Chop 4 of the hard boiled eggs and add to the potato mixture.
- In a medium bowl, mix the Miracle Whip or mayonnaise, yellow mustard, celery seed and salt and pepper. Fold into the potato mixture and season with more salt and pepper to taste. Slice the last egg into thin slices and place the slices on top of the salad. Sprinkle with paprika if desired. Chill for at least 1 hour or overnight before serving.

KURT'S POTATO SALAD
This is from the book Beat This and it is the only time I will ever use Miracle Whip. The recipe is from a reader in Winnipeg, so with this post I pay homage to him. Cooking time is actually chilling time.

Steps:
- In a large bowl, mix everything together except mayonnaise and Miracle Whip.
- Add the mayo and Miracle Whip.
- Taste for seasonings.
- If you want salad moister, add the mayo and Miracle Whip using the same 2:1 proportions.
- Chill the salad for several hours (or up to 3 days), but bring back to room temperature before serving. It tastes better.
- NOTES: Garlic ring sausage is also Kielbassa Sausage. If unable to find substitute salami and add a cloved of minced garlic.
- Miracle Whip is VERY IMPORTANT. The recipe needs it because salad dressing has sugar and vinegar in it and provides just the right combination of mayo mix. I know people may not like Miracle Whip but please, just this once.

Steps:
- Cut the potatoes into 2.5-3cm chunks (step 1), so that they are all the same size and will cook evenly. Put them in a pan of boiling water. Once the water has returned to the boil, lower the heat slightly and cook for about 10 mins or until just cooked and still keeping their shape. Tip them into a colander to drain well, then transfer to a large bowl.
- While the potatoes are cooking, mix together the mayonnaise, yogurt, crème fraîche, mustard and milk. Add the spring onions, then most of the chives and tarragon to the potatoes (step 2). Season with pepper and a pinch of salt.
- Spoon the dressing over the potatoes while they are still warm (step 3), then toss gently together so that they are well coated but don't break up. Tip the potato salad into a serving bowl and scatter over the remaining chives and tarragon. Serve cold - but the flavour is best if not served straight from the fridge.

- Peel potatoes; keep in cold water till ready to use.
- Shred onion on large holes of grater.
- Shred potatoes on small holes.
- Drain potatoes/onions in colander, pressing out excess liquid.
- Place in large mixing bowl, stir together with egg, flour, salt and pepper In 10" skillet heat about 1" of cooking oil.
- Drop in about 1T of mixture at a time for each latke.
- Cook over med heat till golden brown.
