GRILLED KOREAN-STYLE SKIRT STEAK

1 3/4 to 2 pounds skirt steak, trimmed and cut crosswise into 4-inch pieces
3 tablespoons sesame seeds
4 cloves garlic, smashed
1 cup cola
1/4 cup soy sauce
1/4 cup packed dark brown sugar
1/4 cup toasted sesame oil
Kosher salt and freshly ground pepper
1 large white onion, cut into 2-inch-thick wedges
6 to 8 slices thick-cut bacon
2 to 3 banana or Cubanelle peppers

Steps:

  • Pierce the steak a few times with a fork. Toast the sesame seeds in a skillet over medium heat until golden, shaking the pan, 2 to 3 minutes. Transfer to a plate to cool.
  • Combine the sesame seeds, garlic, cola, soy sauce, brown sugar, sesame oil, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl, stirring to dissolve the sugar. Add the steak, onion wedges and bacon, turning to coat. Cover and refrigerate 4 hours or overnight.
  • Remove the steak and onion wedges from the marinade with a slotted spoon and transfer to a baking sheet. Heat a grill pan over high heat. Grill the onion wedges and peppers, turning, until charred, 8 to 10 minutes. Transfer to a platter. Grill the steak until charred, 4 to 5 minutes per side for medium rare. Add to the platter.

3 tablespoons toasted sesame seeds
3 tablespoons salad oil
1/4 cup soy sauce
1/3 cup onion, finely chopped
1/4 cup green onion, finely sliced
1 garlic clove, crushed
1/4 teaspoon pepper
1 slice fresh gingerroot, slivered
2 teaspoons sugar

Steps:

  • Remove tendon, trim, pound and score steak. May substitute with shortribs or chicken.
  • Cut into 3x4 inch pieces.
  • Combine marinade ingredients and spread on steak.
  • Marinate for 1 hour.
  • Broil for 4 minutes. Turn; broil 3 minutes on other side.
  • Serve hot.

4 pounds beef chuck, tied
Coarse salt and freshly ground pepper
1/4 cup safflower oil
1 large onion, peeled and chopped (2 cups)
6 large garlic cloves, peeled
1/4 cup minced ginger
1/2 cup sake
1/4 cup mirin
2 cups low-sodium chicken broth
3 tablespoons gochujang (Korean pepper paste)
4 carrots (9 ounces), cut in 2-inch pieces, halved lengthwise if large
1/2 pound shiitake mushrooms, stemmed and sliced (3 cups)

Steps:

  • Preheat oven to 350 degrees. Season beef with 1 tablespoon salt and 1/2 teaspoon pepper. Heat 2 tablespoons oil in a large 6-quart Dutch oven over medium-high. Add beef and brown on all sides, about 15 minutes. Pour off fat and wipe pot with a paper towel.
  • Reduce heat to medium and add remaining 2 tablespoons oil, onion, and garlic. Cook 3 minutes, stirring occasionally and scraping up brown bits on bottom of pan, until softened. Add ginger and cook, stirring, 1 minute. Add sake, mirin, broth, and gochujang. Bring to a boil, stirring to dissolve gochujang. Return beef and accumulated juices to pan and bring back to a boil. Cover and transfer to oven. Cook, flipping a few times and adding carrots halfway through, 2 hours. Remove pot from oven and stir mushrooms into sauce. Cover and cook until meat is fork-tender, about 30 minutes more.
  • Transfer beef to a cutting board and let rest 20 minutes. Meanwhile, remove vegetables to the board with the beef using a slotted spoon. Skim fat from sauce and bring to a boil. Cook until thickened like gravy, about 5 to 10 minutes more. Keep sauce warm until serving.
  • Remove string from beef; slice 1/4 inch thick. Serve with vegetables and sauce.

My sister gave me this some years ago. It is wonderful for the bbq, camping or just a summer dinner. Can be marinated up to 3 days before cooking. If you have a Food Saver, you can marinate it much faster if you are in a rush.Can be marinated only 1 to 1/2 hours. Tastes like you marinated it over night. (using your Food saver).

1 flank steak, scored
3 tablespoons sesame seeds
1/4 cup oil (I use 2 T. instead)
1/2 cup soy sauce
2 garlic cloves, sliced
1/2 teaspoon black pepper
1/2 teaspoon ground ginger
1/4 cup brown sugar
2 green onions, sliced

Steps:

  • Put flank steak in a 1-gallon zip-lock bag and add above combined ingredients.
  • Marinate at least 24 hours.
  • Broil or barbecue approximately 5 minutes per side - do not overcook.
  • Slice meat on diagonal cross grain.
