Turkey, Cranberry and Cream Cheese Sandwich with Sprouts and Sunflower Seeds image

The best reason for Thanksgiving turkey is this sandwich for the day after!

Number Of Ingredients 7

2 slices sandwich bread
1 Tbsp Mayonnaise
4 ounces sliced turkey breast
3 Tbsp Cranberry Sauce
2 oz Cream Cheese
2 tsp Roasted Sunflower Seeds
Alfalfa or Clover Sprouts

Steps:

  • Smear some mayonnaise on bottom bread slice and season with a small amount of salt
  • Layer turkey on top of mayonnaise
  • Cream cheese goes on next on top of the turkey.
  • Dollop generous spoonful of cranberry sauce on top of turkey and spread to edges.
  • Put a small handful of alfalfa or clover sprouts on top of sauce.
  • Sprinkle with toasted sunflower seeds; spread mayonnaise on 2nd slice of bread and top off sandwich.
  • Cut in half and serve with chips and/or pickle spears.

1 cup water
¾ cup white sugar
1 (12 ounce) package fresh cranberries
1 cup apples - peeled, cored and diced
½ cup cider vinegar
½ cup raisins
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground allspice
⅛ teaspoon ground cloves

Steps:

  • In a medium saucepan combine the water and sugar. Bring mixture to a boil over medium heat. Add the cranberries, apples, cider vinegar, raisins and spices. Bring to a boil, then simmer gently for 10 minutes stirring often.
  • Pour mixture into a mixing bowl. Place plastic wrap directly on the surface of the sauce. Cool to room temperature and serve or cover and refrigerate. Bring chutney to room temperature before serving.

This French appetizer made of bread, KRETSCHMAR® Turkey Off The Bone and Cranberry Chutney is great for serving at parties and is easy to prepare.

¼ pound feta cheese, crumbled well
¼ pound cream cheese, at room temperature
½ cup heavy cream
1 pinch Salt and pepper
¾ pound KRETSCHMAR® Turkey Off The Bone, sliced thin
1 French baguette, sliced 1/4 inch thick
⅓ cup cranberry chutney

Steps:

  • Combine first four ingredients and mix until smooth, add more cream if needed.
  • Lightly brush the baguette slices with melted butter and Italian herbs and brown in a flat pan, on stovetop, low heat. Once lightly browned, remove bread slices from the pan and place onto cutting board for assembly.
  • Assembly: Spread the cheese mixture evenly over each piece of browned baguette. Place a rolled slice of turkey on each piece. Top with a dollop of cheese spread and chutney and serve. Garnish optional.

4 cups fresh cranberries
1 cup white sugar
½ cup brown sugar
1 cup water
2 teaspoons ground cinnamon
1 ½ teaspoons ground ginger
1 ½ teaspoons ground cloves
¼ teaspoon ground allspice
1 tart apple, peeled and diced

Steps:

  • Bring cranberries, white sugar, brown sugar, water, cinnamon, ginger, cloves, and allspice to a boil over medium-high heat in a large saucepan; cook and stir for 20 minutes. Stir in apple; cook and stir until apple is tender and sauce is thick, about 5 minutes. Refrigerate until cold.

Once again, I have to give Taste of Home credit for this recipe. I have made a slight alteration to suit my likes. I cooked this for the first time last night to take to a Thanksgiving meal we had at work. I have already had to give the recipe to others. It has a wonderful tart/sweet flavor and it is just as good served over dressing as it is served over meat.

1 lb fresh cranberries
2 1/2 cups sugar
1 cup water
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 medium onion, chopped
1 medium tart apple, peeled and cubed
1 medium pear, peeled and cubed
1 cup raisins
1/4 cup lemon juice
1/2 cup chopped walnuts

Steps:

  • In a saucepan, combine the cranberries, sugar, water, salt, cinnamon and cloves.
  • Bring to a boil; reduce heat.
  • Simmer, uncovered, for 10 minutes.
  • Add the onion, apple and pear; cook for 5 minutes.
  • Remove from the heat; stir in raisins and lemon juice.
  • Cover and refrigerate for 8 hours or overnight before serving.
  • Just before serving, stir in the walnuts.
  • Serve with meat or dressing.

1 cup white vinegar
1 cup water
1 cup white sugar
1 cup dark brown sugar, well packed
1/4 cup fresh lemon juice
2 teaspoons salt
3 cups cranberries, fresh
1 cup raisins
1/2 cup candied peel
1/2 cup chopped onion
3 cloves garlic, minced
2 whole cloves
2 teaspoons celery seeds
1 teaspoon ground ginger
1/2 teaspoon dried chili

Steps:

  • In a saucepan combine; vinegar, water, white and brown sugar, lemon juice and salt.
  • Bring to a boil, stirring until the sugar has dissolved.
  • Add cranberries, raisins, candied peel, onions, garlic,cloves, celery seed, ginger and chillies.
  • Boil gently, stirring often, uncovered for 45 minutes.
  • Pour into hot sterilized jars,seal, hot water bath for 15 minutes, good for up to a year.
  • You can make this recipe put in jars and refrigerate for up to one week but if you want to keep it longer do the water bath.
