1/2 cup KRAFT Shredded Parmesan Cheese
1/2 cup dry bread crumbs
1/2 cup KRAFT Zesty Italian Dressing
1/4 cup chopped Italian parsley
1/4 cup chopped red peppers
1/4 cup finely chopped oil-packed sun-dried tomatoes
1/2 tsp. dried oregano leaves
1 beef flank steak (2 lb.), pounded to 1/4-inch thickness
1-1/2 cups CLASSICO Tomato and Basil Pasta Sauce

Steps:

  • Mix all ingredients except steak and pasta sauce until blended.
  • Place steak, top side down, on work surface; spread with cheese mixture to within 2 inches of edges. Roll up steak, starting at one short end. Tie closed with kitchen string.
  • Place in slow cooker sprayed with cooking spray; top with pasta sauce. Cover with lid.
  • Cook on LOW 4 to 6 hours. Remove and discard string before serving roll-up.

2 cups beef broth
1/2 cup KRAFT Zesty Italian Dressing, divided
6 ancho chiles, crushed (about 1 cup)
1 Tbsp. dried oregano leaves
1 beef flank steak (2 lb.)
1 small potato, peeled, shredded
1 medium carrot, shredded
1 serrano chile, finely chopped
4 slices OSCAR MAYER Bacon, cooked, drained and chopped
1/4 cup chopped cilantro, divided

Steps:

  • Place broth, 1/4 cup of the dressing, the ancho peppers and oregano in blender; cover. Blend on medium speed 1 min. Pour into large resealable plastic bag. Add steak; seal bag. Turn bag over several times to evenly coat steak with the broth mixture. Refrigerate overnight to marinate, turning occasionally.
  • Mix potatoes, carrots, serrano chiles, bacon and 2 Tbsp. of the cilantro; set aside. Remove steak from marinade; reserve marinade in bag. Place steak on clean work surface. Spread evenly with potato mixture to within 1/2 inch of edges. Roll up tightly, starting at one of the short ends. Tie securely with kitchen string at 2-inch intervals; set aside.
  • Heat remaining 1/4 cup dressing in large skillet on medium-high heat. Add steak; cook until browned on all sides, turning occasionally. Add reserved marinade; bring to boil. Reduce heat to low; cover. Simmer 1 hour 45 min. or until steak is medium doneness (160°F). Transfer steak to cutting board; let stand 10 min. Remove string; cut steak into 1/2-inch-thick slices. Place on serving platter. Spoon broth mixture over steak slices; sprinkle with the remaining 2 Tbsp. cilantro.

2 Tbsp. butter or margarine, divided
1 stalk celery, sliced
1/2 cup chopped onions
2 cups plain croutons
2 Tbsp. water
1/2 cup KRAFT Grated Parmesan Cheese, divided
1 beef flank steak (2 lb.)

Steps:

  • Heat oven to 350ºF.
  • Melt 1 Tbsp. butter in large ovenproof skillet on medium-high heat. Add vegetables; cook and stir 5 to 7 min. or until crisp-tender. Remove from heat.
  • Stir in croutons, water and half the cheese.
  • Use sharp knife to partially cut steak horizontally in half, starting at thickest side of steak and being careful not to cut through to opposite side of steak. Open steak. Spread vegetable mixture onto one cut side of steak; roll up, starting at one long side. Tie closed with kitchen string.
  • Melt remaining butter in same skillet. Add meat; cook 7 to 8 min. or until evenly browned, turning occasionally. Place skillet in oven.
  • Bake 35 min. or until steak is medium doneness (160ºF). Remove from oven. Top steak with remaining cheese; let stand 10 min. Remove and discard string before slicing steak.

3 tablespoons extra-virgin olive oil
1/2 cup onions, diced
3 tablespoons diced garlic
1 flank steak, about 2 pounds
Salt and freshly ground black pepper
1/2 cup thinly julienne carrots
1/2 cup roasted julienne red bell peppers
1/2 cup julienne oil packed sun-dried tomatoes
1/2 cup julienne green onions
3/4 cup shredded mozzarella
1/4 cup chopped parsley leaves
2 (6-inch) bamboo skewers
1/2 cup all-purpose flour
2 tablespoons Italian seasoning
1/2 cup white wine
1 cup fire roasted tomato sauce
1/2 cup chicken stock

Steps:

  • In a small saute pan, add 1 tablespoon olive oil, onions, and garlic and cook until translucent. Remove and let cool.
  • Tenderize flank steak with a meat mallet and cut into 1/4-inch pieces, approximately 5 by 8 inches long. Lightly season with salt and freshly ground black pepper.
  • Place carrots, red bell peppers, sun-dried tomato, and green onions in separate layers over the first 5 inches of the steak lengthwise. Top with garlic and onion mixture, then evenly coat with shredded mozzarella cheese and parsley.
  • Roll flank steak, starting with end that has vegetables, firmly without pushing out vegetables. Secure rolled steak with skewers.
  • To a rimmed plate stir the flour and Italian seasoning together and dredge the rolled flank steak, coating evenly.
  • Preheat oven to 300 degrees F.
  • In a medium saute pan heat 2 tablespoons olive oil and when hot add the rolled flank steak, searing on all sides for about 4 to 5 minutes until golden brown. Remove the flank steak from the pan and place on a baking sheet. Place in preheated oven for 15 minutes or until internal temperature reaches 135 degrees F. on an instant-read thermometer.
  • Place the saute pan back on burner and deglaze with the white wine. Stir, and reduce for 2 minutes, then add tomato sauce and chicken stock. Let mixture continue to reduce for 2 more minutes. Remove the steak from the oven and let rest. Slice on the bias 1/2-inch, shingle out, and top with sauce.

Making a stuffed flank steak is an easy way to have an elegant dinner for a large number of people. This is one of my favorite stuff flank steak recipes. One time I didn't have a loaf of bread and tore up a pita instead and it worked well, so don't feel like you need to use crusty hard bread.

2 lbs flank steaks
2 tablespoons butter
1 cup onion, chopped
3 garlic cloves, minced
1/4 mushroom, chopped
1 cup canned tomato, drained and chopped
1/4 cup fresh parsley, chopped
2 cups breadcrumbs
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon pepper
1 egg, slightly beaten
oil
1/2 cup red wine

Steps:

  • Preheat oven to 350°F.
  • Score the steak on both sides.
  • Saute the onion, garlic and mushrooms in butter over low heat. Turn off heat and add bread crumbs, tomatoes, egg, parsley, and seasonings. Blend well and spread over flank steak.
  • Roll the flank steak lengthwise like a jelly roll and tie in several places.
  • In a flameproof casserole, brown meat on both sides in a little bit of oil. Add wine, cover and bake for 2 hours.

1 beef flank steak (2 lb.)
1 medium onion, chopped
1/2 cup A.1. Original Sauce
1/2 cup KRAFT Zesty Italian Dressing
1 cup chopped fresh parsley
3 cloves garlic, minced
1/2 cup chopped roasted Anaheim chiles or poblano peppers
1 medium unpeeled potato, cut into thin strips
6 slices OSCAR MAYER Bacon, chopped
2 cups no-salt-added beef broth
1 bay leaf

Steps:

  • Place steak in shallow glass dish or large resealable plastic bag. Top with onions and steak sauce; cover. Refrigerate at least 1 hour to marinate.
  • Remove steak from marinade; reserve marinade for later use. Place steak on cutting board; cover with plastic wrap. Pound with rolling pin or meat mallet until slightly flattened. Remove plastic wrap. Combine dressing, parsley and garlic; spread evenly onto steak. Top with peppers and potatoes. Roll up tightly, starting at one of the short ends. Tie securely with kitchen string at 2-inch intervals.
  • Cook bacon in large skillet on medium heat. Remove bacon from skillet, reserving drippings in skillet. Set bacon aside. Add steak to skillet; cook until browned on all sides, turning occasionally. Add broth, bay leaf and reserved marinade; bring to boil. Reduce heat to low; cover. Simmer 1 hour or until steak is cooked through and potatoes are tender, turning every 15 min. Transfer steak to cutting board; let stand 10 min. Remove string; cut steak into 1/2-inch-thick slices. Remove and discard bay leaf. Spoon broth mixture over steak slices; sprinkle with the reserved bacon.

This is a delicious flank steak. The stuffing makes it much more filling, but there's never any left over! Can also be cooked in the microwave. Just cover and cook at medium setting (50 per cent) in a microwave-safe dish for 30 minutes, rotating dish halfway through cooking. Serve with sauce from the pan.

1 cup boiling water
2 tablespoons butter or margarine
1 ½ pounds flank steak, pounded thin for easy rolling
2 green onions, chopped
1 red bell pepper, chopped
1 (10.5 ounce) can mushroom gravy
¼ cup red wine
1 clove garlic, minced
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the stuffing mix, water and butter or margarine. Mix well and let stand for 5 minutes. Spoon the stuffing onto the steak, leaving a 1 inch border. Add the green onions and the red bell pepper.
  • Roll from the long edge of the steak and secure with wooden toothpicks. Place steak seam side down in a 9x13 inch baking dish.
  • In a separate small bowl, combine the gravy, wine OR apple juice, garlic and cheese. Mix well and pour over the steak.

1 cup CLASSICO Roasted Garlic Pasta Sauce

Steps:

  • Heat oven to 350ºF.
  • Melt 1 tsp. butter in medium ovenproof skillet on medium-high heat. Add celery and onions; cook and stir until 2 to 3 min. or until crisp-tender. Stir in 1/4 cup water; bring to boil. Add stuffing mix, parsley and 6 Tbsp. cheese; mix lightly. Remove from heat.
  • Butterfly steak by cutting it horizontally in half, cutting into thickest long side of steak and being careful to not cut all of the way through to opposite side of steak. Open steak like a book; spread bottom 3/4 of steak with stuffing mixture. Roll up, starting at bottom end; tie securely with string.
  • Melt remaining butter in same skillet on medium heat. Add steak; cook 5 min. or until evenly browned on all sides, turning occasionally. Mix pasta sauce and remaining water until blended; pour over steak. Place in oven.
  • Bake 30 to 35 min. or until steak is done. Remove from oven; cover loosely with foil. Let stand 5 min. Transfer steak to cutting board. Remove and discard string. Slice steak. Serve topped with pasta sauce and remaining cheese.
