Extra-virgin olive oil
1/4 cup diced onions, cut 1/4-inch
Kosher salt
1/4 cup diced zucchini, green part only, cut 1/4-inch
2 eggs, beaten until smooth with 2 tablespoons water, seasoned lightly with salt
1/2 cup grated fontina cheese
1 tablespoon finely chopped fresh chives, divided
Mesclun Salad with Balsamic Vinaigrette, recipe follows
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
1/2 cup extra-virgin olive oil
1/2 clove garlic, smashed and finely chopped
Kosher salt
1 1/2 cups mesclun mix
1/2 cucumber, peeled, sliced and slices cut in half
1/2 cup cherry tomatoes, cut in half
1/4 small red onion, thinly sliced
1 small block Parmigiano-Reggiano

Steps:

  • Coat a small, nonstick saute pan lightly with olive oil. Add the onions, season with salt, and bring the pan to a medium heat. Cook the onions, stirring occasionally, for 3 to 4 minutes.
  • Add the zucchini and season lightly with salt. Cook the onions and zucchini, stirring occasionally, until the zucchini is soft, 3 to 4 minutes.
  • Add the beaten egg mixture (be sure that the mixture is smooth-no hunks of egg white). Using a small, heatproof rubber spatula, stir the zucchini mixture throughout the eggs. Don't worry about messing up the eggs, they will smooth out. Tilt the pan to allow the uncooked egg mixture to run to the sides of the pan to create a wide, flat "scrambled egg". Swirl the pan around occasionally to loosen the eggs from the bottom of the pan.
  • When the eggs are three-quarters of the way cooked through, sprinkle the middle third of the omelet with the grated fontina and most of the chives (save some chives for garnish). Turn off the heat.
  • Using the spatula, fold the left third of the omelet over the cheese/chive mixture. Press gently to secure.
  • Gently shake the pan to be sure that the omelet is loosened from the pan. Gently lay the right third of the omelet down on a serving plate and flip the other 2/3 of the omelet on top. The omelet should be folded like a letter.
  • Garnish the top with the remaining chives and serve with Mesclun Salad with Balsamic Vinaigrette.
  • For the vinny: In a small mixing bowl, combine the vinegar and mustard. Mix until smooth. While mixing, start adding the oil into the vinegar/mustard mix drop by drop. Really-one drop at a time! One the drop has mixed in, add the next drop-this shouldn't really be an arm workout.
  • When the mixture starts to look smooth and velvety, the oil can be added a little bit faster. Continue this way until all the oil has been added. When done, it should look very smooth, shiny, and homogeneous.
  • Add the garlic and season with salt. Taste it, it should taste good! Season with salt again, if needed.
  • To assemble the salad: Toss together the mesclun, cukes, tomatoes, and onions. Dress lightly with the vinaigrette. (You will not need to use all the dressing you made. Store the extra in the fridge and bring to room temperature when ready to use.)
  • Season vinaigrette with salt, if needed. Taste! The salad should be very flavorful but not soggy.
  • Plate the salad, piling it up so the lettuce looks fluffy and healthy and is adorned with the veggies. Using a veggie peeler, shave the cheese on top.

3 large eggs
Salt (to taste)
2 teaspoons plus 1 teaspoon unsalted butter (or extra virgin olive oil)
1/2 medium onion (about 3 1/2 ounces / 100 grams; finely chopped )
4 ounces / 125 grams crimini mushrooms (cleaned, trimmed, and thinly sliced; about 1 1/4 cups sliced)
Optional: 2 tablespoons shredded cheddar (or other favorite cheese)
Optional: freshly snipped chives

Steps:

  • Crack the eggs into a bowl and add a pinch of salt. Whisk until well beaten , then set aside.
  • Melt 2 teaspoons of butter (or warm the oil) in a 9- or 10-inch cast-iron or heavy nonstick skillet set over medium heat. Add the onions and sauté until soft and translucent, about 3 to 5 minutes. Add the mushrooms and sauté until they release their juices and become soft, about 3 minutes more. Transfer the onions and mushrooms to bowl and set aside.
  • Wipe out the skillet and add 1 teaspoon of butter or oil, swirling to coat the bottom of the pan. Pour in the beaten eggs. When the edges begin to set, run a silicone or rubber spatula around the circumference, pushing the edge aside slightly, and tilting the pan to let any uncooked egg run under the omelet.
  • When the surface of the egg is almost entirely set, top one side of the omelet with the reserved sautéed mushrooms and onions. Sprinkle evenly with cheese, if using. Use a spatula to carefully fold the other side of the omelet over the filling. Gently flip the stuffed omelet and cook for another minute, until the cheese melts and the egg is set.
  • Transfer to a plate and garnish with freshly snipped chives, if desired. Serve immediately.

Steps:

  • Steam the broccoli, either in a microwave or steamer, until tender and reserve.
  • Melt the butter in an omelet pan or small skillet over medium-high heat. Add the tomatoes, onions, peppers, and mushrooms and cook, stirring frequently until the onions soften and the tomato juices evaporate, about 5 minutes. Add the broccoli to the pan and season the vegetable mixture with salt and pepper. Pour the eggs over the vegetables. Cook until the eggs begin to set 2 to 3 minutes. 1 tablespoon unsalted butter
3 tablespoons warm Sauteed Mushrooms, recipe follows
2 tablespoons diced triple or double creme cheese, such as St. Andre, Brillat-Savarin or Fromager d'Affinois
Pinch of chopped fresh thyme or other herb, optional
1 tablespoon olive oil
1 pound mushrooms (any assortment), sliced
1/2 teaspoon minced garlic
Kosher salt and freshly ground pepper to taste

Steps:

  • Crack the eggs into a small bowl, and use a fork to beat them with the salt and pepper.
  • Heat an 8-inch omelet pan or shallow skillet (preferably nonstick) over medium-high heat. Add the butter, let it melt and swirl the pan so it coats the bottom evenly. Pour the eggs into the pan and quickly shake and swirl so the eggs completely cover the bottom. Let the eggs firm up on the bottom, about 30 seconds, then use a rubber spatula to lift the edges of the omelet up so any uncooked egg on the top runs underneath.
  • Sprinkle half of the eggs with the sauteed mushrooms and cheese and let it cook for another 30 seconds; the top should be moist but not quite runny (unless you like it runny). Flip the uncooked side of the eggs over the filling, and slide it onto a plate. Garnish with fresh herbs, if desired.
  • Heat a very large skillet over medium high heat. Add the oil, then the mushrooms and garlic, season with salt and pepper and saute until the liquid has evaporated and the mushrooms have turned nicely browned, about 10 minutes. Taste, adjust seasonings and serve hot.

8 ounces cremini mushrooms, very thinly sliced
Freshly ground pepper
2 tablespoons unsalted butter
1 cup shredded gruyère cheese (about 2 ounces)
4 brioche rolls, split
Dijon mustard or dijonnaise, for serving
1 tablespoon white wine vinegar
1 teaspoon chopped fresh tarragon
1 large head frisée, torn (about 8 cups)

Steps:

  • Whisk the eggs with 1/2 teaspoon salt in a large bowl. Heat 1 tablespoon olive oil in a large nonstick skillet over high heat. Add all but 1/2 cup of the mushrooms and season with 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring, until the mushrooms brown, about 5 minutes; remove to a plate.
  • Wipe out the skillet and melt the butter over medium heat. Add the eggs and cook, stirring with a rubber spatula, until small curds form and the eggs are mostly cooked. Spread any uncooked egg to fill in the gaps and cook, undisturbed, until just set on the bottom, about 5 minutes. Remove from the heat and sprinkle with the cheese. Arrange the cooked mushrooms down the middle and fold in the sides. Slide the omelet onto a cutting board and cut crosswise into 4 pieces. Spread the rolls with the mustard and fill with the omelet.
  • Whisk the vinegar, tarragon, remaining 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Add the frisée and reserved mushrooms; toss. Serve with the sandwiches.

MUSHROOM, TOMATO AND ONION OMELET WITH HOME FRIES AND BACON

6 slices bacon
4 Yukon Gold potatoes
1 clove garlic
Kosher salt
1 medium onion
4 cremini mushrooms
2 Roma tomatoes
Extra-virgin olive oil
4 eggs
1/2 cup shredded fontina cheese
Chopped fresh chives, for garnish
4 slices pumpernickel bread, toasted

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the bacon on a baking sheet and bake to the desired crispness, 12 to 15 minutes.
  • Meanwhile, quarter the potatoes and place them and the garlic in a medium pot with cold water to cover; add salt. Bring to a boil over high heat, then lower the heat and simmer until potatoes are fully cooked and soft, about 15 minutes. Drain well.
  • While potatoes are cooking, start on the omelet filling: Cut the onion into small dice; you'll need 1/2 cup. Remove and discard the stems from the mushrooms, then thinly slice the caps. Seed the tomatoes and cut into small dice.
  • In a skillet over medium heat, sweat half of the onions, seasoned with salt, in some olive oil until translucent and soft, about 5 minutes. Add the mushrooms, season with salt, and continue cooking until slightly soft, another 5 minutes. Add the tomatoes; cook for 3 to 4 more minutes. Add salt to taste.
  • Whisk the eggs together with 2 tablespoons water and 1/2 teaspoon salt until fluffy. Set aside.
  • Heat a cast-iron skillet over medium-high heat; add olive oil to coat the pan. Add the remaining 1/4 cup diced onions and cook for 2 minutes. Add the potatoes; cook until golden brown and crispy, about 6 minutes.
  • Place a nonstick skillet over medium heat; add olive oil to coat. Add the egg mixture and cook until set, frequently moving the edges away from the pan with a rubber spatula. Sprinkle with a layer of shredded fontina, add the filling to the middle, and fold the omelet. Cook until the cheese has melted, another minute or two.
  • Arrange all--bacon, home fries and omelet--on a serving platter, sprinkle with fresh chives, and serve with pumpernickel toast on the side.

  • Make the ros:
  • In a medium sauté pan, heat the oil over medium-high heat until glistening, about 2 minutes. Add the onion and sauté until translucent, about 5 minutes. Add the tomato, ginger-garlic paste, turmeric, and chile powder and sauté, stirring occasionally, until the tomatoes begin to break apart, about 5 minutes longer. Stir in the coconut paste and garam masala and cook until everything is well incorporated and the smell of coconut perfumes the air, about 5 more minutes. Add a little water, if needed, to achieve a loose gravy texture. Season with salt and set aside.
  • Make the omelet:
  • In a large bowl, whisk together the eggs and season with the chile powder and salt. In a sauté pan, heat the oil over medium-high heat and sauté the onion and chile peppers, stirring occasionally, until the onions are translucent, about 5 minutes. Reduce the heat to medium and pour the eggs into the pan. Rotate the pan in a circle as the omelet cooks to ensure even distribution of the eggs. Once the center of the omelet is just set, 4 to 6 minutes, flip the omelet onto itself to form a half-moon shape. Season with salt, transfer to a plate, and spoon the warm ros on top. I found this recipe in a Japanese information booklette and it is origionally a Western-style restaurant dish in Japan, first served in 1902 by a restaurant called Renga-tei in Tokyo's Ginza district. It is still a very popular dish in Japan, and can be ordered in almost any restaurant. Something like a Japanese equivalent to the "Bacon and Egg Breakfast" over here in North America. To give credit where it is due, this recipe is nearly exactly the one from the book, which is from a restaurant called Taimeiken in the Nihonbashi district of

30 g onions
3 eggs
1 medium mushroom (discard stem)
30 g chicken thighs (preferably raw)
20 g butter
60 g steamed rice
2/3 tablespoon white wine (Sake best)
2 1/2 tablespoons ketchup

Steps:

  • Cut chicken thigh into 1cm cubes, Finely chop the onion and thinly slice the mushroom cap.
  • Keep all ingredients separate.
  • Melt 10g Butter in a hot frying pan.
  • Saute first the onion, then add chicken and finally the mushroom.
  • Once the onion is partly transparent and the chicken is nearly pink-free, season with the ketchup.
  • Add 60 g cooked rice, the wine and season again with some salt and pepper.
  • Saute until chicken is done and lightly brown.
  • Turn off the heat and leave in pan.
  • Break 3 eggs into a bowl and add a touch of salt and pepper.
  • Don't beat the egg!
  • Just mix it with 10 stokes of a fork or chopsticks.
  • Melt 10g of butter in a new frying pan over medium-high heat.
  • Pour in the egg mixture.
  • Spread the egg quickly with 3 broad strokes while moving the frying pan back and forth.
  • When the egg is half done, place the rice and chicken mixture in, offset to one side.
  • Take the frying pan off the heat and fold the chicken rice mixture free side of the Omuraisu almost all the way over the chicken rice mixture.
  • Roll the Omuraisu in the pan by raising one side and tapping the handle so that we gradually wrap the rice inside the omelette.
  • Keep rolling slowly until the edges of the Ouraisu are again facing up, and then roll once more onto the plate it is to be served upon.
  • The Omuraisu should have it's edges facing down in the final potition, so as to appear to be a regualr omelette.

Mushrooms are the most versatile of ingredients, with a meaty texture and a rich, deep flavor ideal for vegetarian dishes. When raw, they're elegant and delicious; when cooked, they become substantial. They are as welcome in a classic French omelet as they are in an Asian stir-fry. Mushrooms also are a nutritional bargain. Two ounces of sliced white mushrooms - about a cup - contain only 15 calories, and they are among the best dietary sources of B vitamins. Best of all, there are just so many mushroom dishes to try. This savory omelet is great for dinner or for brunch. If I'm making it for two, I make one large omelet in a 10-inch pan. It's just as easy as making two individual omelets, and both servings are ready at the same time.

2 tablespoons plus 1 teaspoon extra-virgin olive oil
1 shallot, minced
1/4 pound white or cremini mushrooms, rinsed briefly and wiped dry

freshly ground pepper to taste
1 to 2 garlic cloves (to taste), minced
2 teaspoons minced flat-leaf parsley
4 eggs
1 tablespoon minced chives
2 teaspoons low-fat milk
3 tablespoons grated Gruyère cheese

Steps:

  • Trim off the ends of the mushrooms, and cut into thick slices. Heat a large, heavy frying pan over medium-high heat, and add 1 tablespoon of the olive oil. Add the shallot, and cook, stirring, until it begins to soften, two or three minutes. Add the mushrooms, and cook, stirring or tossing in the pan, for a few minutes, until they begin to soften and sweat. Add salt to taste and the garlic, and cook, stirring often, until the mushrooms are tender, about five minutes. Stir in the parsley, season to taste with salt and pepper, and remove from the heat.
  • If making individual omelets: Heat an 8-inch nonstick omelet pan over medium-high heat. Break 2 eggs into a bowl, and beat with a fork or a whisk until frothy. Add salt and freshly ground pepper to taste, and 2 teaspoons milk. Whisk in half the chives. Add 2 teaspoons of the olive oil to the pan. When the pan feels hot as you hold your hand above it, pour in the eggs, scraping every last bit into the pan. Tilt the pan to distribute the eggs evenly over the surface. Tilt it slightly again, and gently shake with one hand while lifting up the edges of the omelet with the spatula in your other hand so as to let the eggs run underneath during the first few minutes of cooking. Spread half the mushrooms down the middle of the eggs. Top with half the cheese. As soon as the eggs are set on the bottom (the top will still be runny), jerk the pan quickly away from you then back towards you so that the omelet folds over on itself. Shake in the pan for another minute if you don't like the omelet soft on the inside; for a moist omelet, tilt the pan at once and roll out onto a plate. Keep warm in a low oven while you repeat with the remaining eggs and herbs, and serve.
  • If making 1 large omelet, heat a 10-inch nonstick pan over medium-high heat. Beat all 4 eggs in a bowl with the milk, salt and pepper, and the chives. Heat the remaining tablespoon of olive oil in the pan, and follow the instructions for the 2-egg omelet, pouring all of the eggs into the pan. The eggs will take longer to set, and you may want to flip the omelet in the pan again after it's rolled, if the middle seems too runny. Roll the finished omelet onto a platter, or cut in half in the pan, and serve.
  • Add 2 teaspoons of the olive oil to the pan. When the pan feels hot as you hold your hand above it, pour in the eggs, scraping every last bit into the pan. Tilt the pan to distribute the eggs evenly over the surface. Tilt it slightly again, and gently shake with one hand while lifting up the edges of the omelet with the spatula in your other hand so as to let the eggs run underneath during the first few minutes of cooking.

  • Finely chop mushrooms in processor. Melt 2 tablespoons butter in medium skillet over medium-high heat.
  • Add mushrooms and 3 tablespoons onions; sauté 3 minutes. Add vermouth and boil until evaporated, about 1 1/2 minutes. Season with salt and pepper.
  • Whisk eggs, 1 tablespoon water, salt, and pepper in medium bowl to blend. Melt 1 teaspoon butter in small nonstick skillet over medium heat.
  • Add half of egg mixture. Stir with back of fork until edges begin to set.
  • Cook until omelet is set, lifting edges with spatula to let uncooked egg flow underneath, about 2 minutes.
