APPLESAUCE DUMP CAKE WITH SPICED DUSTING SUGAR
An easy to make from scratch applesauce dump cake. You can mix it in the baking pan or in a bowl if you prefer. Optional serving suggestions are included. The spiced dusting sugar is also good on French toast. I often double the dusting sugar recipe to keep it on hand for other desserts.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- In an 8-inch square pan, or a large bowl, dump the ingredients as listed.
- Mix all ingredients together with a fork.If mixing the batter in the baking pan, scrape into the corners with a spatula to make sure everything is mixed well.
- Bake on middle shelf of oven for 30 to 40 minutes, or until cake tests done.
- Place cake on rack to cool.
- Serving:.
- Cut cake into squares and sprinkle each serving with the spiced dusting sugar ingredients mixed together, or use plain sifted icing sugar.
- Or, serve each square of cake with a dollop of whipped cream on top and sprinkle with sifted cinnamon or the spiced dusting sugar.
- Or, ice the cake with Martina's Caramel Frosting Recipe #69561 (delicious).

- Preheat the oven to 350 degrees F. Adjust the racks to the center of the oven. Spray a Bundt pan with nonstick spray.
- Whisk together the flour, baking soda, cinnamon, salt, ginger, cloves and nutmeg in a large bowl. Beat together the butter and brown sugar in a separate bowl with an electric hand-held mixer until light and fluffy, about 4 minutes. Add the eggs, one at a time, until incorporated. Alternate adding the flour mixture and the applesauce, ending with the flour, being careful not to over-mix. Transfer the batter to the prepared Bundt pan and bake until a toothpick inserted into the middle of the cake comes out clean, 55 minutes. Cool completely before inverting. Sprinkle with powdered sugar if using.
APPLESAUCE CAKE
In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

- Preheat oven to 350 degrees F.
- In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
- In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

- Bring applesauce to a boil in a small saucepan; remove from heat.
- Stir in oats and raisins; cover and let stand 20 min.
- (Mixture will be thick and will thicken up more while standing, so you should have the rest of the batter ready by the time the 20 min. are up.) Beat butter at medium speed with an electic mixer until fluffy.
- Gradually add sugar, beating well.
- Add egg and beat well.
- Combine dry ingredients and add gradually to creamed mixture, mixing just until blended after each addition.
- Stir in applesauce mixture.
- Pour batter into a 9-in. square pan that has been sprayed with nonstick spray.
- Bake at 350 for 30-40 min. or until a toothpick inserted in center comes out clean.
- Cool in pan on a wire rack.
- (I found I liked this best served slightly warm.).

BACKCOUNTRY APPLE DUMP CAKE
This 3-ingredient recipe can be made at home in a conventional pan or in a dutch oven over an open fire. Super-easy and delicious! It is my "signature" dessert that I make for guests on packtrips, and at home I make a healthier version of it for myself (since I end up eating the whole thing).

- For conventional oven:.
- Spray bottom of a 9x13 inch pan with cooking spray and pour in the apple pie filling. (For a lighter version, use 1 1/2 cups unsweetened applesauce).
- Pour in the spice cake mix ontop.
- Cut up butter or margarine and place in dollops ontop of the cake mix. NOTE: When I make this at home I omit all butter and increase water to 1 cup to make it healthier, but if you want the real deal use the butter.
- Pour 1/2 cup of water slowly overtop.
- Bake at 350 degrees about 20 minutes*IMPORTANT* After the first five minutes or so take the pan out and stir the mixture so that the water gets evenly distributed throughout the cake, otherwise the top will burn.
- For Dutch oven:.
- Spray the bottom of a 10 or 12 inch dutch oven with cooking spray (I used 12 inch) and pour in the apple pie filling.
- Pour the spice cake mix overtop.
- Cut up the butter or margarine and put dollops ontop.
- Slowly pour 1/2 cup of water overtop.
- Place in the coals of a small/medium fire and shovel coals ontop of the oven for even baking.
- After about 5 minutes of baking, remove oven from fire and stir well the contents.
- ROTATE the dutch oven approximately every 5 to 10 minutes to prevent one side from burning. Depending on heat it takes 25-45 minutes to cook. Pull the dutch oven out of the fire when the center of the cake is springy but not hard, as the cake will continue baking until it is served.
