KOREAN PORK BULGOGI

Korean Pork Bulgogi image

Easy and delicious pork bulgogi can be served as lettuce wraps or use it in a rice bowl or even tacos.

Provided by Jennifer

Categories     Main Course

Time 50m

Number Of Ingredients 23

1 1/2 lb. pork tenderloin (silver skin and any visible fat removed)
1/4 cup soy sauce (low sodium recommended)
1 Tbsp white or brown sugar
1 Tbsp Mirin (or white wine, rice wine vinegar or water plus an additional 1 tsp sugar)
1 Tbsp sesame oil (or olive oil)
1 tsp sesame seeds
2 green onions (chopped)
4 garlic cloves (minced)
Pinch of black pepper
1/4-1/2 tsp Gochugaru Korean Red Pepper Flakes
1 Tbsp vegetable oil (or other neutral cooking oil)
Large lettuce leaves (from Boston or Leaf lettuce)
Cooked white or brown long-grain rice (or Basmati)
Sliced green onion
Sesame seeds
2 Tbsp gochujang Korean chile paste (or Sambal Oelek)
1 Tbsp soy sauce
1 Tbsp rice vinegar
1 clove garlic (minced)
2 tsp white or brown sugar
1 tsp sesame seeds
1 tsp sesame oil (regular or toasted)
1 tsp light or dark corn syrup (or maple syrup (optional))

Steps:

  • Remove the silver skin and any visible fat from the pork tenderloin. Slice into thin pieces, then cut those pieces into 3 or 4 thin and long strips. Place into a large bowl or a zip lock bag.
  • Mix up the marinade, by combining all the marinade ingredients and stir well. Pour over the meat in the bowl or bag and toss well to coat and combine. Cover and refrigerate at least 30 minutes or up to 8 hours.
  • When ready to cook, heat oil in a skillet over medium high heat. Add all the pork with the marinade to the skillet and cook, stirring, until almost all the liquid has disappeared, 5-7 minutes. *Bulgogi is usually cooked until fairly dry and browned, but if you want a saucy bulgogi for some reason, don't cook off all the liquid. Make a slurry of 1 Tbsp cornstarch and 1 Tbsp cold water and add a bit at a time to the hot skillet, stirring after each addition, until desired sauce thickness is achieved.
  • Serve with lettuce leaves and cooked rice and the optional Gochujang sauce (or any spicy Asian sauce will work here).

KOREAN BULGOGI PORK

Korean Bulgogi Pork image

A Korean inspired recipe of marinated pork tenderloin. Easy, quick, and loaded with bold flavors this Korean Bulgogi Pork is one of Korea's most beloved meat dishes.

Provided by Joanna Cismaru

Categories     Dinner     Lunch     Main Course

Time 52m

Number Of Ingredients 10

1 pound pork tenderloin
3 cloves garlic (minced)
1 tablespoon fresh ginger (peeled and grated, about 1 inch piece)
1/4 cup soy sauce (low sodium)
1 tablespoon red chili flakes
1/2 pear (grated)
1 tablespoon sesame oil
1 tablespoon light brown sugar
2 tablespoon vegetable oil (for cooking meat)
2 green onions (chopped for garnish)

Steps:

  • Prepare the pork tenderloin by cutting it into very thin slices. Place the meat in a ziploc bag. Set aside.
  • In a bowl add the garlic, ginger, soy sauce, chili flakes, pear, sesame oil and brown sugar. Whisk everything together well. Pour the marinade over the pork, close the ziploc bag and shake it around a bit to make sure that the all the pork meat is covered in the marinade. Let it marinate at room temperature for 30 minutes or refrigerate for up to 8 hours.
  • Add 1 tbsp of the vegetable oil to a large skillet and heat it over medium high heat. Add half of the meat to the skillet and arrange it so that it's in a single layer. Cook it for about 3 minutes without touching the meat, or until the meat starts to brown, almost char, then turn it and cook for another 3 minutes until it's browned on both sides. Remove from skillet to a bowl and set aside.
  • Add the remaining tbsp of vegetable oil and remaining meat along with remaining marinade. Repeat cooking the same as above.
  • Serve over cooked rice or noodles and garnish with chopped green onions.

SPICY PORK BULGOGI

Spicy Pork Bulgogi image

Spicy, savory, sweet, gingery pork bulgogi made with Korean gochujang sauce.

Provided by JinJoo Lee

Categories     Main Course     Pork

Time 25m

Number Of Ingredients 13

1 lb thinly sliced pork neck butt/leg/shoulder
2 Tbsp soy sauce
2 Tbsp Korean red pepper bean paste ((고추장 gochujang))
2 Tbsp cooking rice wine or mirin
3 Tbsp sugar
1 Tbsp sesame oil
1 Tbsp sesame seeds
1 Tbsp chopped garlic
1 Tbsp grated or chopped fresh ginger
1 Tbsp chopped green onions
1/4 tsp garlic powder
1 tsp Korean red chili powder ((고추가루 gochukaroo) +1 tsp to taste)
1/4 tsp black pepper

Steps:

  • Thinly sliced pieces from the neck, shoulder or hind leg (ham area) are used for pork bulgogi. The cut I bought from my local market is from the neck (collar butt) and it's called moksal (목살) in Korean.
  • Make the marinade by mixing all of the ingredients above.
  • Mix the pork slices and the sauce together and marinate for at least 15 min. or more the better. You can marinate pork bulgogi in the fridge for up to a day.
  • The best way to cook pork bulgogi is to BBQ it over a grill. But it's not easy to just directly cook them over the conventional American BBQ grill because the pieces can fall through. Koreans usually use a grill that have smaller openings.
  • If using a standard American style grill, you can put a piece of tin foil and poke holes into it with a fork so some direct heat can come through.

SPICY PORK BULGOGI

Spicy Pork Bulgogi image

Provided by Food Network

Categories     main-dish

Time 12h50m

Yield 6 servings

Number Of Ingredients 16

2 pounds sliced pork butt
1 liter lemon-lime soda, such as Sprite
1/2 onion, plus sliced onions, for serving
4 garlic cloves
2 ounces ginger, peeled
1 green onion
4 ounces pineapple or pineapple juice
1/2 cup gochujang
1/4 cup sugar
1/4 cup mirin
1/3 cup soy sauce
1/2 teaspoon Korean fine chili powder (not coarse)
1/2 ounce sesame oil
Vegetable oil, for the pan
Kosher salt
Julienned carrots, for serving

Steps:

  • Cut the pork down the middle (in half) and add to a bowl with the lemon-lime soda. Allow to soak for at least 10 minutes. Drain out the soda.
  • Put the 1/2 onion, garlic, ginger, green onion and pineapple in a blender and blend on medium low. Pour into the bowl with the pork and add the gochujang, sugar, mirin, soy sauce, Korean fine chili powder and sesame oil. Allow the pork to marinate for 12 hours.
  • Heat up a pan and add vegetable oil. Lay the pork carefully in the pan (don't pile the pork--make sure every piece is touching the pan). Cook until the meat is firm, about 15 minutes. Add a touch of salt, sliced onions and thinly sliced carrots (matchstick.) Then, cook for another 5 to 10 minutes.

JEYUK BOKKEUM (SPICY PORK BULGOGI WITH PEARS)

Jeyuk Bokkeum (Spicy Pork Bulgogi With Pears) image

This is from a Korean-American mom's blog, Eating and Living, a great source of Korean recipes. Traditionally some grated Asian pear is used to flavor and tenderize the meat, but a tart apple can be used instead. I added a sliced red bell pepper, which the recipe did not call for, but which worked together well. The pork must be very thinly sliced and I buy pork/pork belly sliced for bulgogi at the Korean market. Pork loin should have some fat on it. I used less soy sauce, but found the amount of gochujang to my taste.

Provided by duonyte

Categories     Pork

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 12

2 lbs pork shoulder or 2 lbs pork belly, thinly sliced
3 scallions, cut into 2-inch pieces
1 small onion, thinly sliced
6 tablespoons gochujang Korean chili paste
3 tablespoons rice wine or 3 tablespoons mirin
2 tablespoons brown sugar
1 tablespoon corn syrup or 1 tablespoon honey
2 tablespoons sesame oil
3 tablespoons minced garlic
1 tablespoon grated fresh ginger
4 tablespoons grated Asian pears or 4 tablespoons grated apples
lettuce leaf

Steps:

  • Combine the meat, scallions, and onion in a medium bowl.
  • Combine the marinade ingredients in a small bowl, mixing together well, and pour over the meat.
  • Mix everything together well - I find this works best with your hands. Cover and let stand an hour. (If it will stand longer, place in the refrigerator).
  • Grill or pan grill. If using a skillet, put a little neutral oil and sesame oil in the heated skillet. Do not crowd the meat, as it will then steam - cook in batches. Cook until the meat is a bit caramelized - perhaps 5 or 6 minutes.
  • Serve with lettuce, rolling the cooked mixture into the leaves. I like Boston or another leafy lettuce for this, as it rolls easily, but romaine works, too.

DAEJI BULGOGI (SPICY KOREAN PORK BARBECUE)

Daeji Bulgogi (Spicy Korean Pork Barbecue) image

This is an awesome recipe. It comes together fairly quickly, perfect for a week night meal. It is quite spicy, with the addition of sambal olek and red pepper flakes. So if you don't want it too spicy, cut back a bit. I have also made this like a stir fry and it comes out great. It's originally from http://www.myrecipes.com/recipe/daeji-bulgogi-spicy-korean-pork-barbecue-10000000429502/. It's become a part of our dinner rotation. The prep time includes having to thaw the pork then freeze for a bit to make cutting easier. Although i just skip this step and cut it after it's thawed. Doesn't make a difference.

Provided by Nika The Mad Baker

Categories     Pork

Time 2h20m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb boneless pork
2 tablespoons brown sugar
2 tablespoons low sodium soy sauce
1 1/2 tablespoons sambal oelek or 1 1/2 tablespoons thai chili paste
1 teaspoon fresh ginger, minced peeled
1 teaspoon dark sesame oil
1/2 teaspoon crushed red pepper flakes
3 garlic cloves, minced

Steps:

  • 1. Wrap pork in plastic wrap; freeze 1 1/2 hours or until firm. Remove plastic wrap; cut pork diagonally across grain into 1/16-inch-thick slices.
  • 2. Combine pork, sugar, and next 6 ingredients (sugar through garlic) in a large zip-top plastic bag. Seal and marinate in refrigerator 1 hour, turning bag occasionally.
  • 3. Prepare grill.
  • 4. Place a wire grilling basket on grill rack. Remove pork from bag; discard marinade. Place pork on grilling basket coated with cooking spray; grill 5 minutes or until desired degree of doneness, turning frequently.

BULGOGI

Marinate thinly sliced beef in a traditional Korean marinade, then pan-fry for a delicate balance of sweet and savoury flavours

Provided by Judy Joo

Categories     Buffet, Dinner, Lunch, Main course, Supper

Time 35m

Number Of Ingredients 15

450g very thinly sliced beef bulgogi meat (sold at Asian supermarkets), or sirloin
3 tbsp dark brown sugar
1 small unpeeled firm but ripe pear , grated (optional)
3 tbsp soy sauce
1 ½ tbsp toasted sesame oil
2 tbsp vegetable oil
5 garlic cloves , grated or crushed
1 ½ tsp grated ginger
1 ½ tbsp roasted crushed sesame seeds
1 small onion , thinly sliced
4 white button mushrooms , sliced
1 small carrot , julienned or chopped into fine matchsticks (see tip)
4 chives , snipped
1 tbsp black sesame seeds
1 tbsp toasted sesame seeds

Steps:

  • In a shallow dish, combine the beef, sugar and pear (if using) thoroughly, and leave to sit for 30 mins at room temperature. Meanwhile, in a large bowl, mix the soy sauce, sesame oil, 1 tbsp of the vegetable oil, the garlic, ginger and sesame seeds to make a marinade, and set aside.
  • When the beef is ready, squeeze out any excess sugary liquid, then add the beef to the marinade. Toss to coat, cover and marinate at room temperature for 30 mins. Can be marinated for longer, or left overnight in the fridge.
  • In a large frying pan or wok, heat the remaining vegetable oil over a medium heat. Add the onion and cook for 6-8 mins until softened. Add the mushrooms and carrots, and cook for 5 mins until slightly softened. Raise the heat to medium-high, add the beef and marinade, and cook for 4-5 mins, stirring occasionally, until the meat is browned. Transfer to a platter and sprinkle with the chives and sesame seeds.
