This is a family favorite made easy. Preparing the dough in a bread machine saves time kneading the dough by hand. My grandmother used to make these when we would visit. Now I can make them for her.

1 ¼ cups warm water
½ cup butter, softened
1 egg
1 egg yolk
⅓ cup milk powder
¼ cup instant mashed potato flakes
¼ cup white sugar
1 teaspoon salt
3 ⅞ cups bread flour
2 teaspoons active dry yeast
1 (12 ounce) can cherry pie filling
1 (12 ounce) can poppyseed filling
¼ cup butter, melted

Steps:

  • Place water, softened butter, egg, egg yolk, milk powder, potato flakes, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start. Check dough after 5 minutes of mixing, adding 1 to 2 tablespoons of water if necessary.
  • When the cycle is complete, spoon out dough with tablespoon and roll into walnut sized balls. Place 2 inches apart on a lightly greased cookie sheet. Cover and let rise until doubled, about 1 hour.
  • Flatten balls slightly with the palm of your and make a depression in center with your thumb. Fill with 1 tablespoon of filling. Cover and let rise for about 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven for 13 to 15 minutes, until lightly browned. Remove from oven and brush with melted butter. Cool on wire rack.

These are really good! I found this recipe on recipesource, but wanted to move it here so I could find it if I lost it. This recipe is from a lady named Mary S. Veselka. My husband said that these are better than the kolaches sold at out local donut shop here in Central Texas. They take a bit of time, but are well worth the effort, and the dough is pleasing to work with. I've recieved some dings for not having more detailed instructions. I simply moved this recipe over from another site, and left the instructions as Mary wrote them. I've edited them a bit so that they are easier to understand.

1/4 cup water (warm- about 115 degrees)
1/2 cup sugar
4 1/2 teaspoons yeast
1 cup milk (warm- about 115 degrees)
1 3/4 cups flour
1/2 cup Crisco (melted and cooled a bit)
1/4 cup warm milk
1 1/2 teaspoons salt
2 egg yolks
2 1/4 cups flour
30 Little Smokies sausages
30 slices American cheese (sliced approximately the same size as the sausage.)
2 1/2 dozen canned jalapeno slices (optional)
1 egg
2 tablespoons water

Steps:

  • Beat together warm water, sugar, yeast, 1 cup warm milk and 1 3/4 cups flour thoroughly and let stand for 1 hour.
  • (I usually make the sponge in a large metal bowl, and let it sit in a barely warm oven for the hour. I preheat my oven to 170, then open the door of it to let some of the heat escape for about 3 to 5 minutes. BE SURE TO TURN YOUR OVEN OFF! I cover the bowl with a clean flour sack towel and pop it in.).
  • Add Crisco, 1/4 cup warm milk, salt, egg yolks and 2 1/4 cups flour. Beat well and let rise until double in bulk.
  • ( when I put the sponge in the barely warmed oven, I microwave the Crisco. It's really hot, so I let it stand out while the sponge is perculating. If you put the Crisco in when it is too hot, it will kill the yeast. The results are not pretty, lol. I usually use butter flavored Crisco.).
  • Then work down (stir it with a wooden spoon. It releases all the "air" trapped in it. The dough will be very soft, and a little sticky.).
  • Make the parts for each sausage roll. Cover the sausage and cheese with the dough you have patted out.( I use a silpat, and pat each golf ball size blob down to a rectange about 3 inches by 5 inches and about 1/4 of an inch thick.) Make sure to seal the cheese and sausage up well, and place the seam side down on the sheet pan.
  • (It's hard to put an exact measurement on this because some like to use the big sausages, and others the little smokies. I usually use about a golf ball size for the sausages that are about 4 inches long and 1/2 inch in diameter. Any more, and I have way too much breading around the sausage. This dough really grows after the 2nd rise.).
  • Beat the egg and water together to make an egg wash. Brush the egg wash over the tops of the kolaches. (This makes them a beautiful golden brown. I usually reserve the 2 egg whites that I separate from the yolks for the dough and it has worked like a charm for me.).
  • Let rise 15 minutes. (I've found that 15 minutes is plenty, because the kolaches continue to puff up in the oven. I've left them overnight, and it caused the bread to be too spongy, and they went stale very quickly.).
  • Bake at 400 degrees until golden brown, about 15 minutes.
  • Some additional notes: I've made these in a bread machine on the dough setting and just dumped everything in for the sponge and the dough. It's a lot less work, but after it is baked, the bread does not have the fine texture the it does when you do all of the steps as listed.
  • Also, underestimate the amount of dough you need to wrap around your filling. If the yeast that you have used is fresh, a little dough goes a long way!
  • Some fillings that I have tried are apple butter, bacon, egg and cheese, ham and cheese, strawberry jam with cream cheese. Anytime I use jam, I freeze the jam in one of those ice trays that make long tubes of ice for water bottles, and I brush the dough with a little melted butter before I put the "jam cube" on it to prevent sogginess. These are a hit with my children.

  • 1. Put the first 10 ingredients in order, starting with water...into the bread pan. Select dough cycle, press start. Check dough after 5 minutes of mixing, adding 1-2 teaspoons of water if necessary.
  • 2. When the cycle is complete, spoon out the dough with a tablespoon and roll into walnut sized balls. Place two inches apart on a lightly greased cookie sheet. Cover and let rise until doubled..... About 1 hour.
  • 3. Flatten balls slightly with the palm of your hand and make a depression in the center of with your thumb. Making a nice inner ridge. Fill each with 1 tablespoon of a filling of your choice. Cover and let rise ......30 minutes. Preheat oven to 370 F. Bake in a pre-heated oven 13-15 minutes. Remove from oven, brush with 1/4 cup of melted butter. Cool on a wire rack. Sprinkle with powder sugar when serving.

2 ¼ teaspoons yeast (or 1 packet)
1 pinch ginger (ground)
1 teaspoon sugar
3/4 cup milk (110F, divided use)
4 tablespoons butter (cut into small chunks)
2 1/2 cups bread flour (you may need up to 3 1/2 cups)
1 teaspoon kosher salt
1/4 cup sugar
1/4 cup instant potato flakes (unflavored)
1 egg (room temperature)
1 can fruit pie filling - your choice
1/3 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
3 tablespoons melted butter

Steps:

  • Add the yeast, 1 teaspoon sugar, and ginger to 1/4 cup warm milk and set aside.
  • Put the remaining milk and butter in a microwave-safe bowl and heat until the butter melts.
  • Let cool to 110F. It should feel comfortably warm to when you drop a few drops on your wrist.
  • In the bowl of a stand mixer fitted with a paddle attachment combine 2 cups of the flour with the salt, sugar, and potato flakes.
  • Add the yeast mixture and the cooled milk mixture and stir until blended.
  • Add the egg and blend it in.
  • Add another 1/3 cup of flour. The dough will be sticky.
  • Switch to the dough hook.
  • Add flour a tablespoon or two at a time until the dough doesn't stick to the sides of the bowl.
  • Knead until dough is smooth and elastic, about 5 minutes. It will still be a little sticky especially on the bottom.
  • Remove from the mixer bowl and form into a ball.
  • Rub the ball with melted butter then place it in a greased bowl.
  • Turn the ball over once.
  • Cover the bowl loosely with a clean tea towel.
  • Let it rise for 1 hour, or until doubled in bulk.
  • Punch dough down.
  • Divide the dough into 10 equal pieces
  • Roll into balls and arrange them 2 inches apart on a baking sheet lined with parchment.
  • Brush with butter, cover loosely with tea towels or plastic wrap, and let rise for 1 hour.
  • Make indentations in the buns and fill with cheese mixture or fruit filling.
  • Sprinkle with crumb mixture.
  • Bake at 425F for 8 to 10 minutes or until golden brown. Watch carefully.

10 tablespoons unsalted butter
1 cup whole milk
3 1/2 cups all-purpose flour
1/3 cup granulated sugar
2 1/4 teaspoon rapid rise (or instant) yeast
1 1/2 teaspoon salt
1 egg + 1 egg yolk, slightly beaten
8 small smoked sausage links, split lengthwise and cut into 3" pieces
16 thinly sliced pieces of deli ham
8 slices of American cheese, halved

Steps:

  • Add the butter to a small saucepan over medium heat to melt. Do not allow to brown. As soon as the butter has melted, add the milk and stir until blended. Set aside.
  • Add the flour, sugar, yeast, and salt to the bowl of a stand mixer fitted with a paddle attachment. Mix on low until combined.
  • Switch out the paddle attachment for the dough hook and add the milk/butter mixture, as well as the egg and the egg yolk. Mix on low for about 1 minute, then, increase the speed to medium (#6 on Kitchenaid stand mixer) and knead for 8 minutes.
  • In the meantime, add about 3 cups of water to a saucepan and bring to a boil over high heat. Then, grease a large bowl. You'll also need to arrange your oven racks so that you can fit the saucepan on the floor of the oven with a rack situated above it. Your large bowl will go on top of the rack. The bowl does not need to be oven-safe.
  • Once the dough has finished kneading (it will soft and somewhat sticky), use floured hands to form it into a ball and transfer it the greased bowl. Place the saucepan of boiling water on the oven floor and the bowl on the rack above it. Close the oven door and allow the dough to proof for 1 - 1 1/2 hour, until it has doubled in size.
  • Remove the bowl from the oven (leave the saucepan in) and punch down the dough. On a floured work surface, divide it into 4 equal pieces, and then divide each of those pieces into quarters. You should have 16 pieces of dough.
  • Roll the dough into balls and transfer to 2 baking sheets lined with parchment paper, spacing them about 2 to 3 inches apart. Close the oven door and allow to proof for 90 minutes.
  • Remove both pans and the saucepan from the oven and preheat it to 350°F.
  • Wrap each dough ball around a piece of sausage until it is fully enclosed and pinch to seal any seams.
  • Place a piece of cheese in the center of a slice of ham and fold over/wrap the ham to enclose the cheese.
  • Wrap each dough ball around the ham until it is fully enclosed and pinch to seal any seams.
  • Place seam-side down on the baking sheet and bake for 22-25 minutes, until golden in color. Allow to cool slightly, serve, and enjoy!
