KNORR SPINACH DIP
I tried this at a friend's house, and it's the creamiest spinach dip I've ever had. I think you really could add more spinach to this recipe to make it healthier, but this is tasty either way. Serving size is estimated.

- In the bowl of a food processor fitted with a standard blade, combine the garlic, water chestnuts, green onions and spinach. Pulse until coarsely chopped. Add the Knorr mix and pulse 4-5 times until combined.
- In a medium mixing bowl combine the Greek yogurt and mayonnaise, mix well. Add the spinach mixture and stir until combined. Cover and refrigerate for at least an hour.
- Just before you are ready to serve, use a serrated knife to cut the top section out of the bread to make a bowl (see photo above). If necessary pull out some of the remaining bread to make enough room for the dip. Cut the section you removed into cubes to serve with the dip.

- Thaw the frozen spinach fully and drain well. Wring it out a bit with your hands to make sure it is well drained.
- Chop the spinach. Mix it with the other ingredients, except the bread, and refrigerate it to let the flavors meld together.
- Hollow out one of the loaves of bread with a knife, cutting the bread you remove into 2 inch chunks for dipping. I have specified 2 loaves of the bread because if you just get 1 there always seems to be dip left over and no bread to use it up. Cut the second loaf of bread into cubes for dipping.
- Place the hollowed out loaf of bread on a serving plate and fill the hollow with the chilled dip. Arrange the cubes of bread around the loaf and use them to dip.

- In a mixing bowl, stir to combine all the ingredients. Cover with foil wrap or clear wrap and chill in the refrigerator for at least one hour or more.
- Transfer dip to a serving bowl, and serve with your favorite corn chips, crackers, or veggie sticks.
- Or, you can buy a round Italian bread, cut a round circle at the top of the bread. Remove some of the crumbs from inside to make room for the dip. Then transfer the spinach dip into the bread, and serve. Optional: garnish with a sprinkle of chopped scallions on top. Then serve.

- Thaw the spinach and squeeze as much water out as you can. Wring it like a towel, not kidding.
- Chop up the spinach until its fine. The reason I recommend chopping it is because the spinach stems get stringy in the dip if you leave them whole. Even with pre chopped frozen spinach.

- Cook the spinach in the microwave or stove top, according to package directions. Drain the spinach, then use paper towels to squeeze out any excess moisture.
- In a large bowl, combine the drained spinach, mayo, sour cream, vegetable mix, and green onions. Stir until well combined. Refrigerate for 2 hours or until ready to serve.
- When ready to serve, use a knife to cut out the center of the loaf of bread, leaving about a half inch around the sides and the bottom. Spoon the dip into the center of the loaf, then cut the remaining bread into cubes for dipping. This dip is also great with cut veggies.

- To cook the spinach, place it and two tablespoons water in a microwave-safe, lidded container and cook on high until just hot, about four minutes depending on your microwave.
- When cool enough to handle, place spinach in a fine-mesh strainer and press out all the liquid you can with a fork or spoon, or with your fingers.
- In a mixing bowl, stir vegetable recipe mix into mayonnaise and sour cream. Stir in water chestnuts and then spinach, breaking up any clumps. We like to use a fork to mix in the spinach.

- Thaw frozen spinach in a colander. Once thawed, push spinach down into colander with your hands or a wooden spoon to squeeze out as much water as possible.
- Let the cream cheese sit on the counter for about ½ hour. It just needs to be soft enough to mix.
- In a large mixing bowl, stir together all ingredients until thoroughly mixed. Scoop spinach dip into a storage container until ready to serve.
- The traditional way of serving Knorr spinach dip is to hollow out a round loaf of pumpernickel bread. Any round loaf would work as well. Chop the hollowed-out bread into bite size pieces to serve alongside the dip.
