4 avocados, ripe
1 tablespoon lime juice
1/2 teaspoon kosher salt
1/3 cup red onion, finely chopped
1/4 cilantro leaf, well washed, finely chopped
1/4 jalapeno pepper, finely chopped, more to taste
1 (13 ounce) bag corn tortilla chips, for serving

Steps:

  • Using a sharp knife and protecting your hands with a kitchen towel, remove the pits from the avocados. Peel, then and chop avocados. In a large bowl, combine chopped avocados and lime juice. Toss until evenly coated. Add salt and mash avocado with two forks until the texture of lumpy mashed potatoes.
  • Stir in onion, cilantro, and peppers. Taste, and add more salt if desired. Serve with tortilla chips.
  • Serve immediately. Or to refrigerate, place in a bowl and press plastic wrap directly on top of the entire surface of the guacamole so no part is exposed to air. Serve within one day of making.

1/4 cup chopped red onion
1/4 cup chopped jalapeno
1/4 cup chopped cilantro
1 tablespoon salt
1/4 teaspoon ground cumin
1/2 lime, juice of

Steps:

  • After peeling avocados take core out and set aside.
  • Place the insides of the avocado in a bowl.
  • Take a potato masher and mash the avocados until it is a creamy consistency.
  • Add, onion, cilantro, jalapeño, and spices over the avocado mixture.
  • Stir the ingredients and then add juice from half of a lime.
  • Stir and refrigerate until ready to serve.
  • Note- to keep guacamole from turning brown add the cores that you set aside back in the bowl and place on top of the guacamole.
  • For some reason this will keep it fresh for a longer period of time.

I love Chipotle Restaurant's Guacamole! After lots of searching, I finally found the recipe in The Dallas Morning News. It was submitted by Kent Chambless, chef at one of the Chipotle Restaurants. I haven't tried out the recipe yet, but I will as soon as I go to the store and buy an avocado!!!

  • Mash up avocado with a fork or electric mixer.
  • Add lime juice.
  • Add all other ingredients and blend well.

We love avocados in my family. This is called naked guacamole because the flavor of the avocado itself is highlighted along with a bit of crunch from the onion, tomato, salt, lime and cilantro. The texture should be chunky- please don't use a blender or processor. 2 Hass avocadoes, perfectly ripe
3/4 teaspoon kosher salt (to taste)
1 1/2 teaspoons lime juice, freshly squeezed
1 ripe roma tomatoes or 6 -8 sweet cherry tomatoes, seeded and finely chopped
1/4 of a white onion, finely chopped
12 large fresh cilantro stems, stemmed and roughly chopped

Steps:

  • Remove the seed and peel from the avocados and place in a bowl or molcajete.
  • Sprinkle with the salt and lime juice and crush with a fork, potato masher, or tejolote.
  • When the consistency is that of a chunky puree, stir in the tomato, onion, and cilantro.
  • Taste for seasoning.
  • If the guacamole is to be eaten with tostadas as a snack, it should be more highly seasoned.
  • Served alongside carnitas or carne asada, a little less seasoned so that it balances the other flavors.

3 tablespoons white onions, finely minced, divided
1 tablespoon lime juice
1 -2 chipotle chile in adobo, minced
1/2 teaspoon coarse salt
2 large avocados
2 tablespoons fresh cilantro, minced

Steps:

  • In a small bowl or molcajete, combine 2 tablespoons of the minced onion, lime juice, chiles and salt.
  • Smash with fork or pestle to a coarse paste.
  • Cut avocados in half, remove seeds and scoop pulp into bowl or molcajete.
  • Add the cilantro and mash, leaving some lumps; taste and adjust the salt if necessary.
