4 steaks 1-1 1/2 inches
1/3 cup minced shallot
1 clove garlic minced
1/4 cup cognac
2 cups brown stock or canned beef broth
1 tablespoon black peppercorn, coarsely crushed
1/3 cup heavy cream
4 teaspoons cornstarch
2-3 teaspoons Dijon mustard

Steps:

  • Cook steaks and keep them in one layer in skillet. Remove steaks from skillet and skim all but 1 tablespoon of the fat from the pan juices in the skillet. To skillet add, shallots and minced garlic and cook them for 1 to 2 minutes until softened. Deglaze with Cognac, scraping up bits which cling to skillet. Add stock or canned beef broth and peppercorns. In a small bowl combine cup heavy cream and cornstarch. Whisk cornstarch mixture into sauce and simmer until lightly thickened. Whisk in mustard and pour juices from plate into pan.;

1 tbsp vegetable oil
25g clarified butter (see Know-how, below)
2 fillet steaks (ideally beef matured for 3-5 weeks), about 140g/5oz each, at room temperature
knob of butter
2large shallots , finely chopped
6medium mushrooms , sliced
2 tsp green and pink peppercorn , crushed
3 tbsp brandy
100ml red wine
200ml good-quality beef stock
3 tbsp double cream

Steps:

  • Heat a frying pan over a medium-to-high heat, then pour in the oil and the clarified butter. Season the steaks with salt and plenty of freshly ground black pepper and cook to your liking (2 mins each side for medium-rare, 3 mins each side for medium, depending on the thickness of your steaks). Be sure to seal the rounded edges, too. Transfer to a plate.
  • Add the knob of butter to the pan, then fry the shallots, mushrooms and peppercorns over a medium heat for 5 mins, until the shallots have softened and the mushrooms browned. Return the steaks to the pan. Heat the brandy in a metal ladle, light with a match then carefully pour into the hot pan, standing as far back as you can. Once the pan has stopped flaming, remove the steaks again.
  • Pour the wine into the pan, turn up the heat and boil rapidly until reduced by half. This will take about 5 mins. Add the stock and reduce again, this time by two-thirds. Stir the cream in to the sauce and allow it to thicken slightly. Check the sauce for seasoning, then return the fillets to the pan to warm through, spooning the sauce over. Serve straight away.

1 bag Demi Sauce Mix (Knorr or Wagners Brand)
1 cup Water
3 oz Butter
¼ cup Red Onion (finely minced)
1 TBS Fresh Cracked Black Pepper
½ cup Brandy
2 cups Heavy Cream

Steps:

  • 1.In a small sauce pan mix the Demi sauce mix and water. 2.Bring mixture to a boil over medium heat, and then immediately reduce heat to low. Simmer for 2-3 minutes. Hold for later use. 3.In another sauce pan melt the butter over medium heat; add red onion and black pepper. Cook for 1-2 minutes or until onions begin to soften. 4.Remove the pan from the heat, add the brandy, Demi mixture, and cream. Carefully place the pan back on the heat. CAUTION: MIXTURE MAY FLAME UP. 5.Bring mixture to a boil, immediately reduce heat to low and simmer for 8-10 minutes or until sauce has slightly thickened. 6.Hold warm until ready to use.

RACK OF VENISON WITH APPLE AND SZECHUAN PEPPERCORN SAUCE

3 tablespoons vegetable oil
1 whole 9 rib rack farm raised venison
Salt and freshly ground black pepper to taste
2 tablespoons unsalted butter
4 tart apples (such as Granny Smith), cored and sliced into eighths
1/2 cup sugar
1/4 cup balsamic vinegar
1/2 cup dry red wine
2 tablespoons Szechuan peppercorns, toasted and crushed
1/2 cup game stock or chicken stock
3 tablespoons sweet butter

Steps:

  • Heat the oil in a skillet over medium heat until hot. Season the venison with salt and pepper and sear for 2 to 3 minutes on all sides. Remove the venison from the skillet and place in a roasting pan. Pour off and discard the oil from the skillet.
  • Over medium high heat, add 2 tablespoons butter to the skillet. When the foaming of the butter subsides, add the apples and saute until they begin to caramelize, about 3 to 4 minutes. Add the sugar and the vinegar and cook another 1 to 2 minutes to reduce the vinegar by half. Add the wine and Szechuan peppercorns, cook for 2 minutes before adding the stock. Return to a boil, and reduce the stock for another minute. Keep the sauce warm while the venison finishes cooking. When ready to serve swirl the butter into the sauce.
  • Place the venison in a preheated 350 degree oven for 10 to 12 minutes, until it reaches an internal temperature of 125 to 130 degrees for medium rare. Remove from oven and let rest 5 minutes before slicing into chops. Serve two chops per person, with some of the apple peppercorn sauce ladled over each serving.

1 1/4 cups fish or chicken stock
Kosher salt
1 cup couscous
1 cup diced, blanched mixed vegetables such as carrots, celery, zucchini, scallions, yellows squash, and red pepper
1 egg
1/4 cup mixed chopped tarragon, dill and parsley leaves
Lemon juice, to taste
4 trout fillets
Kosher salt and freshly ground black pepper
3 tablespoons butter
1/4 cup diced shallots
1 cup dry white wine
1 tablespoon lemon juice
Pinch saffron, crumbled
8 shrimp, peeled and deveined
1 sprig tarragon
1 sprig dill
2 sprigs parsley
1/2 cup heavy cream
Kosher salt and freshly ground black pepper
4 fresh dill sprigs
4 lemon twists
Chopped parsley, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • To make the couscous: Bring the stock to a boil in a saucepan over high heat. Add a pinch of salt and the couscous. Stir the couscous and return to boil for 1 minute. Remove the pot from the heat, cover let stand for 5 minutes, then fluff the couscous with a fork. Mix in the diced vegetables, egg and herbs. Season the couscous with salt and lemon and allow to cool.
  • To prepare the trout: Season the trout on both sides with salt and pepper. Lay fish skin side down. Spoon about 1/4 of the couscous onto the large end of each fillet. Fold the tails over (to make a tidy packet) and secure with toothpicks.
  • Melt the butter in a large ovenproof skillet over medium heat. Add the shallots and cook until they are soft, about 7 minutes. Add the trout, wine, lemon juice, and saffron. Season the shrimp with salt and pepper and lay them on the trout bundles. Add the herb sprigs, cover the pan and put it in the oven. Cook until the trout is flaky and the shrimp are opaque, about 5 minutes. Transfer the trout and shrimp to serving plates.
  • To make the sauce: return the poaching liquid to a burner and simmer over high heat. Remove the herb sprigs and add the cream. Reduce the sauce until it coats the back of a spoon, about 3 minutes.
  • Spoon sauce onto each of the plates. Garnish with dill, lemon, and chopped parsley and serve.

POACHED BEEF TENDERLOIN



Poached Beef Tenderloin image

Poaching a tenderloin of beef is the surest way to obtain perfectly and uniformly rare meat. Whether you choose a 2-pound piece, which will easily serve four, or a larger one, the procedure and results are consistently the same, making the dish ideal for dinner parties. As long as the meat is of fairly consistent thickness, every slice you cut-with the exception of the very ends-will look like the others. Buying the beef is simple but usually can be made even simpler with an advance call to the butcher; ask for the thick (châteaubriand) end of the tenderloin, 2 to 3 pounds (he will be willing to cut it to any size you like), in one piece, tied. If you allow the meat to reach room temperature before poaching, cooking time will be reduced by a few minutes; but it will be no longer than 20 and probably shorter anyway. It's key to serve the meat with a variety of garnishes from which you and your guests can choose: minced shallots, good mustard, chopped cornichons, coarse salt, soy sauce, even ketchup. These can be combined-I favor mustard combined with shallots and cornichons. I'd like a potato gratin with this recipe (page 482), but any potato dish (including good old mashed potatoes) would be fine, as would almost any nicely prepared vegetable. Bread, too.

  • Put the meat in a deep pan just large enough to hold it-a Dutch oven is usually ideal, but you can curve the meat into a wide saucepan too-and cover it with boiling water or stock. Add a large pinch of salt if you're using water or if the stock is unsalted. Adjust the heat so that the mixture bubbles gently-on my stove that's medium.
  • Cook until the meat's internal temperature reaches 120°F (use an instant-read thermometer); 125°F if you prefer medium-rare. Remove the meat and let it sit for about 5 minutes, then cut into 1/2- to 1-inch-thick slices. Serve immediately with the garnishes.

GRILLED BEEF WITH HORNED MELON SAUCE

1 horned melon

Steps:

  • Cut the melon into halves. Cut crosswise into thin slices. Cut off the outside skin. Cut the beef into thin slices. Grill or broil the beef to desired doneness. Arrange the lettuce on a large salad platter. Top with the grilled beef, melon slices, and cucumber sticks. Spoon the sauce over the top.
  • Cut the melon into halves lengthwise. Use a grapefruit knife or small sharp knife to scoop out the pulp. Combine the melon pulp, lime juice, green onion, oil, cumin and garlic in a blender or food processor container. Cover and process until well blended.

ROAST DUCK IN CHERRY AND BLACK PEPPERCORN SAUCE



Roast Duck in Cherry and Black Peppercorn Sauce image

2 tablespoons unsalted butter
2 shallots, minced
1/2 cup dried cherries
2 tablespoons unsulfured molasses
1 teaspoons coarsely ground black pepper
3 cups duck stock or chicken stock
1 tablespoons arrowroot
1/2 cup Madeira wine
1 duck (5 pounds)
Sea salt, to taste
Freshly ground black pepper, to taste
1 teaspoon sherry wine vinegar

Steps:

  • In a medium saucepan, melt 1 tablespoon of the butter over low heat. Add the shallots and saute slowly, until soft. Add the dried cherries, molasses, pepper, and duck stock. Simmer 15 minutes.
  • Blend the arrowroot with the 1/4 cup of the Madeira. Mix the Madeira into the duck sauce and simmer 3 to 4 minutes, until slightly thickened. Set aside. (The sauce may be made ahead, up to this point.)
  • Preheat the oven to 425 degrees.
  • Season the duck cavity with the salt and pepper. Pierce the skin thoroughly around the lower breast, back, and thighs. Truss the duck and place, breast side up, on rack in shallow roasting pan. Place the duck in the oven and bake for 15 minutes. Reduce the heat to 350 degrees and roast the duck 30 minutes per side. With a bulb baster, remove some of fat that accumulates as the duck roast. Turn the duck, breast side up, and sprinkle with salt. Roast 10 to 15 minutes longer for medium rare or until juices run rosy when a thigh is pierced with a fork. For well done, roast until juices run clear.
  • Remove the trussing. Place the duck on a serving platter and keep warm in a turned off oven while finishing the sauce. (The duck may be roasted in the morning, if desired, and reheated at 300 degrees at this point.) Place under a broiler for 3 to 5 minutes for extra crisp skin.
  • Remove all but 1 tablespoon fat from the roasting pan. Add the remaining 1/4 cup Madeira to the drippings in the pan. Boil rapidly, scraping the brown bits from the bottom and reducing the wine to 2 tablespoons. Strain the wine reduction into the prepared duck sauce. Finish the sauce with the sherry vinegar. Simmer 1 to 2 minutes and swirl in the remaining 1 tablespoon of butter.

1 large onion
1 head fennel , sliced
1 large carrot , sliced
2 bay leaves and 2 sprigs rosemary
500g joint beef fillet
100g bag watercress
4 tbsp extra-virgin olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
50g chopped walnuts

Steps:

  • Put the stock on to boil with the onion, fennel, carrot and herbs. Cover and simmer for 10 mins. Trim the beef fillet of any sinew. Do not tie it.
  • Season the beef all over, then lower into the simmering stock. Allow the stock to return to a gentle boil, then lower the heat until it is barely simmering. Cover, then cook for 18 mins for medium-rare, 22 mins for well done. Remove the pan from the heat, leave the meat to stand for 15 mins in the stock, remove and pat dry. Slice into 8 pieces. The stock can be strained, cooled and re-used.
  • Make the salad by scattering the watercress leaves over a small serving plate. Whisk together the oil, vinegar, mustard and some seasoning. Drizzle half over the leaves and scatter with the nuts. Arrange the meat on top and mix 2 tbsp of the stock with the remaining dressing. Pour over the beef, sprinkle with sea salt flakes and serve with steamed Jersey Royal potatoes.

3 medium potatoes , diced
2 tbsp olive oil
1 garlic clove , crushed
few rosemary needles, chopped
2 thin sirloin or ribeye steaks
2 tbsp red wine vinegar
200ml beef stock
3 tbsp extra-thick double cream

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the potatoes with half the oil, the garlic, rosemary and some seasoning. Arrange in a single layer on a baking tray and cook for 45 mins, turning halfway through, until golden and crisp.
  • About 10 mins before the potatoes are done, heat the remaining oil in a large pan on a high heat. Season the steak with salt and lots of black pepper and cook for 2-3 mins each side. Transfer to a plate and cover with foil to rest while you make the sauce.
  • Tip in the vinegar and bubble for a few seconds, then pour in the stock. Reduce by half, then add the cream, some salt if needed, and lots of black pepper. Cook for 1-2 mins until thick and creamy. Serve the steaks in chunky slices topped with sauce along with the potatoes, with some green beans, if you like.
