SWEET ONION AND CATFISH HUSH PUPPIES WITH COMEBACK SAUCE

- For the comeback sauce: Combine mayonnaise, sambal, ketchup, lemon juice, hot sauce, smoked paprika, Worcestershire, garlic powder, mustard, salt and pepper in a medium mixing bowl. Whisk together until the mixture is smooth and everything is well incorporated. Taste and adjust seasoning.
- For the whipped sorghum butter: Add the butter, molasses and salt to a stand mixer fitted with a whisk attachment, or to a medium bowl if you're using a hand mixer or whisk. Mix on medium speed until well-combined and the butter is lightened and fluffy.
- For the catfish: Combine the catfish with salt and sugar in a bowl. Refrigerate.
- For the hush puppies: Combine cornmeal with sugar, salt, baking powder, garlic powder, onion powder, smoked paprika, black pepper and cayenne in a medium bowl. Whisk thoroughly to combine these dry ingredients. Whisk together the buttermilk and egg in a separate bowl until there are no specks of egg and it becomes a smooth and homogenous mixture.
- Retrieve the quick-cured catfish from the fridge, and add the catfish and diced onion to the dry ingredient mixture. Quickly stir together to coat the onion and catfish bits with cornmeal and spices. Add the buttermilk and egg and mix quickly with a spatula or wooden spoon until everything is well combined and the batter stiffens up pretty quickly as the cornmeal soaks up the buttermilk. Cover your batter and refrigerate for a few minutes while you prepare your pot for frying.
- Add vegetable oil to a heavy-bottomed pot or Dutch oven no larger than 8 inches across-it's necessary for deep frying to have at least 2 inches of oil. Heat the oil over medium heat, bringing it up to 350 degrees F, using a thermometer to check the temperature. (If you don't have a thermometer, you can tell that the oil is ready when you add a small pinch of flour and it immediately sizzles and fries. You can fry without a thermometer if you're feeling bold, but just be careful that your oil doesn't get too hot or cold-you could either burn your hush puppies or end up with greasy ones-and no one wants that!)
- Once the oil is up to 350 degrees F, pull your batter from the fridge and begin to scoop it into the hot oil. We like to use a 3/4-ounce cookie scoop, but you could also use two spoons to scoop and drop roughly tablespoon-sized dollops into the hot oil. Fry as many hush puppies as comfortably fit into the pot at once-they should definitely have some room to expand and get crispy. It's okay to fry in several batches.
- Fry the hush puppies for 2 minutes, then turn them over and fry until golden brown and fluffy on the inside, another 2 minutes. Remove with a slotted spoon or spider, moving them to a plate or tray lined with paper towels to help drain any excess oil. Sprinkle the hush puppies with a little salt while they're still hot. Repeat this process until all your hush puppies are cooked and seasoned.
- Pile the hushpuppies into a dish for serving and garnish with a nice sprinkle of the chives. Serve them nice and hot with 1 cup comeback sauce and 1/4 cup whipped sorghum butter, or your favorite sauces.
KITTENCAL'S HUSH PUPPIES
These are a family-favorite they fry up light and so fluffy, a must drizzled pancake or maple syrup on top, servings is only estimated it will depend on how much the batter you drop from the spoon --- these can also be made in a deep-fryer with oil heated to 365°F :)

- Pour enough oil in a large cast-iron skillet (or a heavy skillet) to about 1-1/2-inches or a little more.
- Heat oil over medium-high until hot (to test the oil drop a spoonful of batter into hot oil if it sizzles it is ready).
- In a bowl mix together flour, cornmeal baking powder, seasoned salt, and cayenne pepper and sugar.
- In another bowl beat together egg, milk and melted lard or shortening until combined; add into the flour mixture; mix to combined (if the mixture seems to dry then add in a little more milk.
- Mix in the chopped corn kernels.
- Drop the batter by teaspoonfuls into hot oil and fry until golden turning once (these will not take long to brown).
- Drain well on paper towels.
- Delicious.

- Whisk 3/4 cup cornmeal, 1/4 cup flour, 2 tablespoons sugar and 3/4 teaspoon each baking soda and salt in a bowl. Stir in 1 beaten egg, 1/2 cup each buttermilk and corn kernels, 1 minced jalapeno, 4 minced scallions, and pepper to taste. Deep-fry spoonfuls of the batter in 350 degrees F vegetable oil until golden, 2 to 3 minutes.

- Combine first four ingredients in a large bowl.
- Add egg and milk to dry ingredients, stirring just until moistened. Let stand for 10 minutes.
- Pour oil to a depth of 2 inches into a Dutch oven; heat to 345*.
- Drop batter by rounded tablespoonfuls into hot oil and fry, in batches, 2 to 3 minutes on each side or till golden brown all over.
- Drain on wire rack over paper towels. Serve immediately.
- SUBSTITUTE beer for milk if you want lighter, tangier hushpuppies.
- FOR JALAPENO hushpuppies, add one seeded, diced jalapeno to batter. Proceed with recipe as directed.

- Mix all of the ingredients except water to make batter of a thick consistency. If batter is too thick, add water, a Tbs at a time until batter is thinned a little.
- Preheat a deep fat fryer with vegetable oil in it up to 375 degrees F. Drop dough by Tbs into fat and cook until golden brown. Serves 6.

The story of the hush puppy comes from back in the antebellum days in the south. When the planters had a fish fry, the food was cooked outdoors. The dogs would gather around and hope for a scrap of food (some things never change!). The hush puppy was originally just a piece of fried dough that was thrown to the dogs to keep them happy. The secret of a good hush puppy is the temperature of the oil. It has to be hot enough to cook, but not so hot that the outside is hard and inside is mush. If your oil is smoking, it is way too hot! Peanut oil works great, but isn't required. These are fabulous with fried fish or shrimp. **Cooking is time is for 2 batches

- Mix together the cornmeal, flour, baking soda, baking powder and salt. Add the grated onion and sliced green onions.
- Take the egg yolk and buttermilk and blend into the batter. Whip the egg whites into stiff peaks. Fold the egg whites into the batter until it reaches a good consistency. (The amount of egg white depends on the size of your eggs).
- Drop by teaspoonful into hot oil (in a deep fryer or in a dutch oven -- the oil needs to be deep enough to cover the hush puppies). Cook until golden brown.

- Heat oil in a heavy skillet (about 2- 2 1/2 inches of oil) until hot.
- Beat the egg and then mix in the remaining ingredients.
- Make sure that your dry ingredients are all moist.
- Using a tablespoon, drop balls of batter into the hot oil, about 2 inches long by 1 inch thick.
- NOTE: I usually only cook about 4 or 5 at a time.
- These should float in the hot oil, but not be covered by it.
- You will need to turn these as they cook.
- Fry until they are a golden brown and then drain them on paper towels.
- Serve with fish- of course!
