Kittencal's Fat-Free Bran Muffins image

You won't even be able to tell these are fat free! ---1 cup fresh blueberries or 3/4 cup light raisins may mixed in with the flour mixture and you may reduce the flour 2 tablespoons and add in 2 tablespoons flax --- with the addition of blueberries you will yield 12 muffins

Number Of Ingredients 12

1 1/2 cups wheat bran
3/4 cup nonfat milk
6 tablespoons plain fat-free yogurt (or can use fat-free blueberry or vanilla flavored yogurt)
1/2 cup unsweetened applesauce
1 large egg
3/4 cup brown sugar (if you prefer a sweeter muffin use 3/4 cup if not you may reduce slightly)
1 1/2 teaspoons vanilla
1 cup whole wheat flour
1 teaspoon baking powder (not scant, use a good teaspoon of baking powder)
1 teaspoon baking soda
1/2 teaspoon salt
1/2-1 teaspoon cinnamon (optional I like to add it in)

Steps:

  • Preheat oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Generously coat 10 regular-size muffin tins with cooking spray or line with paper liners.
  • In a small bowl mix the wheat bran with milk and yogurt; allow to stand for 12-15 minutes, stirring a few times.
  • In a large bowl whisk the applesauce with egg, brown sugar and vanilla; mix in the bran mixture until thoroughly combined.
  • In a small bowl combine the flour with baking soda, baking powder, salt and cinnamon (then if using mix in the blueberries) add the bran mixture to the dry mixture; using a small spatula fold gently just until combined (fold gently).
  • Scoop into muffin tins filling almost full.
  • Bake for 20-22 minutes or until muffins test done (these won't take long to bake so watch closely).

Make these lower fat by using low-fat mayo, sliced cheese and turkey patties ---I used to make these for my DH when he was working, I fried up an egg or two the night before an left them covered in the fridge to add on the sandwiches before warming in the microwave, the eggs are only optional make certain not to freeze the eggs with the sandwiches add then just before warming the sandwiches. These are great to grab and eat on the run! wrap each sandwich and then freeze for a quick breakfast then just warm in the microwave, it is that easy! Use your own favorite sausage patties or see recipe#189652 of coarse you can make as many as you want the amounts are only a guidline!

10 English muffins
softened butter (or use mayonnaise)
10 breakfast sausage patties (I use Breakfast Sausage Patties)
10 slices American cheese
egg (sunny-side up or scrambled)
plastic wrap
aluminum foil

Steps:

  • Cook the sausage patties in a skillet.
  • Toast each half of English muffin, then butter or spread with mayonnaise.
  • Cool the patties and the muffins.
  • Lay one sausage patty on top of half of a bun then top with cheese slice, top with remaining half of muffin.
  • Wrap each one individually in heavy plastic wrap and freeze until solid.
  • Remove the frozen sandwiches from freezer and wrap each sandwich tightly in foil to prevent any freezer burn, then return to freezer until ready to use.
  • When ready to use; unwrap the sandwich from the foil and plastic wrap.
  • Wrap in a paper towel and microwave on HIGH for about 50-60 seconds or until heated through.
  • Add on an egg (if using) before or after warming the sandwich.

Adapted from "Secrets of Fat-Free Baking" by Sandra Woodruff, RD. I used Splenda instead of sugar, and added cinnamon to mine. These do have a bit of the "Splenda" aftertaste, so if you want to use sugar, the recipe calls for 1/2 cup.

1 1/2 cups whole wheat flour
2/3 cup wheat bran
3/4 cup Splenda sugar substitute
1 tablespoon baking powder
1 (15 ounce) can peaches, undrained (packed in their own juice, NOT syrup)
2 egg whites
1/4 cup raisins or 1/4 cup chopped dried peaches
1/2 teaspoon cinnamon (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a 12 count muffin pan with non-stick cooking spray.
  • In a medium bowl, combine the flour, wheat bran, Splenda, baking powder, and cinnamon if desired. Set aside.
  • Drain the peaches, reserving the juice. Puree the peaches in a blender, adding enough juice so you have 1 ½ cups. Add this to the flour mixture, along with the egg whites. Stir until the dry ingredients are moistened, then fold in the raisins or dried peaches.
  • Fill muffin tins about ¾ full with batter. Bake for 15-17 minutes, until a toothpick comes out clean.
  • Allow muffins to sit for 5 minutes after baking before removing from tins.

To save some time prepare the topping in advance and refrigerate. You should get around 10-12 muffins depending on the size of bananas you use, the yield is only estimated, 1 cup of sugar will give you a sweet muffin you may reduce the sugar if desired --- these bake out high and moist with lots of flavor and are one of my family's all-time favorite muffins, you will love these!

1 1/2 cups flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2-1 teaspoon cinnamon
3 large bananas, mashed
2 teaspoons vanilla
1 cup sugar
1 large egg, slightly beaten
1/3 cup melted butter
1/3 cup finally chopped almonds
1/4 cup flour
2/3 cup brown sugar
1 teaspoon cinnamon
2 tablespoons soft butter
1/3 cup cups finely chopped almonds

Steps:

  • Set oven to 350 degrees F.
  • For the topping; in a bowl mix together the flour, brown sugar and cinnamon; blend in the soft butter using your fingertips, then add in the finely chopped almonds; set aside.
  • Line 12 regular muffin tins with paper liners.
  • In a medium or large bowl, sift together flour, baking powder, baking soda, salt and cinnamon.
  • In another bowl beat the melted butter with sugar, egg and vanilla extract until well blended (about 2 minutes) add in the mashed bananas, mix until just blended.
  • Using a wooden spoon mix in the flour mixture until JUST blended (the batter will be lumpy).
  • Mix in the chopped almonds.
  • Divide the batter evenly between 12 muffin tins, then sprinkle the topping mixture on top of each muffin.
  • Bake for about 20 minutes, or until muffins test done.

1 1/2 cups wheat bran
1 1/4 cups fat-free buttermilk
1 cup unbleached flour
1 teaspoon baking soda
1/3 cup brown sugar
2 egg whites
1 cup chopped dried apricot

Steps:

  • Combine the bran and non fat buttermilk and let sit for 25 minutes.
  • Combine the flour, soda, brown sugar together.
  • Add the bran to the egg whites, stir well.
  • Add the wet ingredients into the dry ingredients just until all are moistened.
  • Fold in the apricots.
  • Spray your muffin tins with a cooking spray, and fill 3/4 with batter.
  • Bake 350 degrees for 16- 18 minutes, or just until a tester comes away clean.
  • Remove from oven and let sit on a rack for six minutes.
  • Then remove muffins from tins to a wire rack.

1/2-3/4 cup sugar (or to taste)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon

1 cup plain fat-free yogurt (can use low-fat yogurt)
3/4 cup mashed ripe banana
2 tablespoons oil
1 egg
1 1/2 teaspoons vanilla

Steps:

  • Set oven to 350 degrees F.
  • Grease a 8 or 9-inch square baking pan or line muffin tins with paper liners.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
  • In a small bowl, whisk together yogurt, banana, oil, egg and vanilla.
  • Pour over dry ingredients, and gently stir with a spatula until JUST blended (do not over mix).
  • Spread the batter into prepared baking pan.
  • Bake for about 25 minutes, or until the top of the cake is light brown, and edges begin to pull away from sides of the pan (bake slightly less time for muffins).
  • Cool cake in pan on rack for 10 minutes.
  • Loosen sides of cake with a dinner knife or a spatula.
  • Invert cake right side up and cool completely.
  • Sprinkle lightly with powdered sugar.

These muffins have no fat but you would never know it, they are extremely moist with lots of flavor --- I have not tryed it as yet but I'm quite sure that Splenda may be used in place of sugar --- you may bake in 6 jumbo muffin tins but baking time will need to be increased.

1 cup fat-free buttermilk
1 tablespoon molasses
2 large egg whites
1/2 cup applesauce
1 ripe banana, mashed
2 teaspoons vanilla
1 cup all-purpose flour (or use half white and whole wheat)
1/2 cup white sugar (can use more sugar if desired) or 1/2 cup brown sugar (can use more sugar if desired)
2 teaspoons baking powder
1/8 teaspoon salt
1/2-1 teaspoon cinnamon
1/2 cup raisins (optional)

Steps:

  • Set oven to 350 degrees F (set oven rack to second-lowest position).
  • Line 12 regular size muffin tins with paper liners.
  • In a medium bowl combine the buttermilk with wheat bran; allow to sit for 10 minutes.
  • In a small bowl whisk together the egg whites with molasses, applesauce, mashed banana and vanilla; mix until well combined.
  • In a medium bowl combine the flour with sugar, baking powder, salt and cinnamon.
  • After the 10 minutes of sitting time add the egg mixture to the bran/buttermilk mixture; mix very well to combine, then add to the flour mixture; mix until just combined.
  • Mix in raisins (if using).
  • Divide into the muffin tins filling just over threee-quarters full.
  • Bake for about 20-22 minutes or until muffins test done.

Less than 1 gram of fat in each muffin but you wouldn't even know they are low-fat, these are even better the next day, and are just as delicious without the berries, of coarse you can use full-fat sour cream or yogurt, flavored yogurts only add to the taste of these muffins, I like to sprinkle a sugar/cinnamon mixture on top of each muffin before baking but that is optional, see note on bottom for doubling the recipe.
