KITTENCAL'S CRISPY COATING MIX FOR MOIST OVEN BAKED CHICKEN
I developed this coating recipe years ago, it makes the most wonderful crispy moist oven-baked chicken you will ever have, I always serve this chicken with recipe #145064 on the side to drizzle over the chicken *SO* good! Make certain to purchase and use only the already crushed boxed cornflake crumbs for this, and use only Shake and Bake Southern Fried flavor, I have tried many other flavors and brands and they are just not as good! The chicken will cook even more after you remove it from the oven and let it sit, so I like to bake mine for only about 40 minutes, and leave it on top of the stove until ready to serve, I find that it is even moister this way!

Steps:
- Wash chicken pieces in cold water (leave the chicken moist so the coating will hold on to it) set aside.
- In the plastic mixing bag that comes with the coating mix, combine all ingredients (except the chicken pieces) and shake bag to combine thoroughly.
- Set oven to 425°F.
- Set oven rack to lowest-bottom position.
- Line a large 15-inch baking sheet with foil, and spray with non-stick cooking spray.
- Shake each piece of chicken in the bag to coat thoroughly with mixture and place on the baking sheet.
- Repeat with the remaining chicken pieces.
- Bake for 45 minutes (you might have to bake for about 5 minutes more if the backs are attached to the legs).
- *NOTE* Sometimes if you are using frozen defrosted chicken there might still be some water left in the chicken that will come out when baking, if you find that there is a lot of water in your pan about halfway through baking, just carefully remove the pan with a towel or oven mitts and hold over the sink to drain the water, and place back in the oven to bake (just enough to drain, careful not to remove the chicken from the pan and throw into the sink!).
- The less water in the bottom of the pan the crispier you chicken will be).

KITTENCAL'S MOIST CHEDDAR-GARLIC OVEN FRIED CHICKEN BREAST
This is for serious garlic lovers. The chicken bakes out so moist and tender! Grated cheese may be sprinkled on top of the breast the last 5 minutes of cooking if desired but that is optional. Double all ingredients for more than four breasts and adjust the amount of garlic to suit taste. For the coating amount you might be able to get away with 5 or maybe 6 very small chicken breasts, but I would suggest to increase the amount slightly --- to take this dish to yet another level, about 10 minutes before the cooking time is finished, drizzle the top of the chicken with a little pasta sauce, then sprinkle mozzarella cheese on top. Return to oven for about 10 minutes until the chicken is completely cooked and sauce is hot and cheese has melted. For a lemon-garlic flavor add in 3 tablespoons lemon juice to the melted butter/garlic mixture --- *NOTE* for a healthier alternative Smart Balance Butter Blend may be used in place of the melted butter --- you will love this chicken! KITTENCAL'S BAKERY BUTTERCREAM FROSTING/ICING
This is similar to bakery frosting and so much better than any canned! --- for extra fluffy frosting use heavy cream and make certain to beat for at least 3-5 minutes and remember to sift the confectioners sugar before using. For flavor and color you can add 1-2 envelopes 3-grams each, Duncan Hines Frosting Creations Flavor Mix, any flavor desired.

KITTENCAL'S CHOCOLATE FROSTING/ICING
A wonderful frosting I have used for years made in very little time with perfect results and 100% better than any canned, this frosting is so good you will find yourself eating a fair amount of it before even using it to frost with! --- choose the amount of cocoa powder you desire for either a light, medium or dark frosting, and make certain to sift the cocoa powder and the confectioners sugar before using for the recipe--- this frosting *freezes* very well so double the recipe and freeze one batch for next time --- *NOTE* for an ultra creamy fluffy milk chocolate frosting add in 1 to 1-1/2 cups thawed Cool Whip topping at the end of mixing the frosting and beat on low speed until blended ------- also see my recipe#80118 ---- recipe#282040 --- recipe#90142

KITTENCAL'S DELICIOUS MEATY PASTA SAUCE
I don't think you will find a better meat sauce than this one! a good tomato sauce needs time to "ripen" so I strongly suggest to make this sauce a few day ahead and refrigerate just warm in a saucepan before using you will see that the flavors strongly intensify after refrigeration time --if you want a creamy sauce just add in 1/4 cup or more of heavy whipping cream the last 30 minutes of cooking time, this may be doubled if desired but keep the ground beef amount at one pound, this also freezes well... you will *love* this!

DELICIOUS COATING MIX FOR CHICKEN
This is a great chicken coating mix, it taste almost the same as Shake and Bake! When I made this I use seasoned salt but that is optional. For a kick, add in some cayenne pepper! If desired you reduce the salt slightly
