Fresh Corn Salad image

Take advantage of summer's seasonal bounty with Ina Garten's easy Fresh Corn Salad recipe from Barefoot Contessa on Food Network, made with fresh basil.

Number Of Ingredients 7

5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves

Steps:

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
  • Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

Number Of Ingredients 12

12 ounces canned kernel corn, drained (341 mL)
14 ounces canned black beans, rinsed and drained (398 mL)
1/2 cup finely chopped red onion
1/2 cup finely chopped red pepper
2 medium tomatoes, seeded and finely chopped
2 tablespoons chopped fresh cilantro (or fresh parsley) (optional)
1/4 teaspoon salt
1/4 cup ranch dressing
1 tablespoon lime juice
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1 garlic clove, minced (or 1/4 tsp. dry garlic powder)

Steps:

  • Combine first 7 ingredients in a large bowl.
  • For dressing:.
  • Combine all 5 dressing ingredients in a small bowl. Stir until well combined. Makes approximately 2/3 cup dressing.
  • Drizzle over salad and toss to coat.

6 cups frozen corn, thawed
3 cups chopped seeded tomatoes
1 cup cubed avocado
2/3 cup julienned sweet red pepper
2/3 cup julienned green pepper
1/2 cup chopped onion
DRESSING:
1 cup mayonnaise
2 tablespoons red wine vinegar
2 tablespoons Dijon mustard
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large bowl, combine the corn, tomatoes, avocado, peppers and onion. In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Cover and refrigerate for 30 minutes or until chilled.

2 medium tomatoes, seeded & diced
4 tablespoons green onions, chopped
1/2 cup mayonnaise
2 jalapenos, diced
4 tablespoons onions
1 teaspoon dried basil
2 teaspoons salt
1/2 teaspoon pepper
2 teaspoons cumin
2 teaspoons garlic salt

Steps:

  • Mix corn, tomatoes, green onion, mayonnaise, jalapeno, onion, basil, salt, pepper, and cumin together in a bowl.
  • Cover and refrigerate overnight.

  • GRILL: Preheat grill to medium heat (400 degrees F). Shuck corn and discard silks. Drizzle corn, green onions, and jalapeños with olive oil and then lightly sprinkle with salt and pepper. Rub the oil and salt/pepper into all sides of the veggies. Prepare the grill by cleaning and then generously oil the grill (I drench a rolled-up paper towel in vegetable oil and, holding it with tongs, rub it over the grill grates).
  • GRILL CONT.: Add the corn, green onions, and jalapeños to the heated grill over direct heat. Grill corn about 10-12 minutes total, rotating every 3-4 minutes until bright yellow and lightly charred. Grill green onions 1 minute, flip, and grill another minute or until lightly charred. Grill jalapeños 1-2 minutes, flip and grill another 1-2 minutes or until lightly charred. Remove veggies from grill and onto a plate to cool to room temperature.
  • DRESSING: Meanwhile, prepare the dressing. In a large bowl, whisk together the sour cream and mayonnaise. Make sure cream cheese is at room temperature (if necessary, microwave for 30 seconds to a minute and whisk with a fork until smooth and easy to stir). Add into the sour cream and mayo mixture. Add in all of the spices: cumin, garlic powder, chili powder, and paprika. Season to taste with salt and pepper ( I add about 1/4 teaspoon of each). Stir until dressing is smooth. Grate cheeses: extra-sharp cheddar and pepper jack. Add to the dressing and stir.
  • FINISH: Thinly slice charred green onions, dice the jalapeños and add to salad. Cut the corn off the cob (see video for how I do it -- lay on the side and cut down -- use a sharp knife) and add to the salad. Stir together and taste -- adjust seasoning to taste and serve with crumbled bacon and fresh cilantro on top.
