Spicy prawn skewers
Stuffed prosciutto balls

Red pesto & mozzarella festive crackers
Curried chicken poppadums
Christmas cranberry mojitos

Steps:

  • Spicy prawn skewers Marinate 150g cooked prawns in zest and juice 1 lime, 1 tbsp soy sauce, ½ finely chopped chilli, 2 tsp grated fresh root ginger and 1 tsp clear honey for 20 mins-1 hr. To serve, lay each prawn on a baby spinach leaf and thread a cocktail stick through (makes 28).
  • Stuffed prosciutto balls Mash 100g feta with ½ finely chopped chilli, 2 tsp chopped mint and zest and juice ¼ lemon. Roll into 24 small balls. Quarter 6 prosciutto slices lengthways, then wrap each prosciutto strip around a feta ball (makes 24).
  • Cucumber salmon Cut 1 large cucumber into 20 thick slices and scoop out some of the seedy middle, leaving a dip. Mix 200ml crème fraîche with zest 1 lemon and freshly ground black pepper, then spoon 1 tsp into each dip. Top with a piece smoked salmon, lemon zest and some black pepper (makes 20).
  • Festive crackers Take 20 small crackers (we used Morrisons Gouda cheese & mixed seeds cracker bites) or 20 homemade crostini. Spread 1 tsp red pesto onto each cracker, top each with a piece of mozzarella from a 125g ball and garnish with basil leaves (makes 20).
  • Curried chicken poppadums Arrange a 75g tub mini poppadums on a plate and slice 85g cooked chicken so there's 1 piece per poppadum. Mix together ½ tsp curry powder, 100ml crème fraîche and zest ½ lemon, put 1 tsp in each poppadum with ½ tsp mango chutney, then finish with a slice of chicken and some chopped coriander. Best assembled just before serving so the poppadums stay crisp (makes 20).
  • Christmas mojitos Put 140g fresh or frozen cranberries, a handful mint and 2 tbsp brown sugar in a bowl. Crush with the end of a rolling pin, then add a couple of handfuls of crushed ice and stir to mix. Add a shot of vodka to 6-8 tall glasses, divide the cranberry crush between them, then top up with cranberry juice and sparkling water (serves 6-8).

Serve this Asian-inspired twist on classic prawn cocktail as a starter or party canapés over the festive period

7 heaped tbsp mayonnaise
1 lime , juiced
3 tsp sriracha or other chilli sauce
15g pickled pickled ginger , finely chopped
3 Little Gem lettuces , leaves separated
300g cooked king prawns
3 spring onions , shredded
2 tsp black sesame seeds
handful of prawn crackers , crushed
100ml rice wine vinegar
1 tbsp caster sugar
1 large carrot , peeled and julienned
½ large cucumber , peeled into ribbons
6 radishes , thinly sliced

Steps:

  • For the pickles, put the vinegar, 50ml water, the sugar and 2 tsp sea salt in a pan and simmer for 5 mins over a medium heat, stirring until the sugar and salt have dissolved. Leave to cool a little. Put the vegetables in a bowl and pour over the pickling liquid. Leave in the fridge for at least 1 hr.
  • Mix together the mayonnaise, lime juice, sriracha and pickled ginger. Arrange the lettuce leaves in six bowls, then top with the pickled veg, prawns and sauce. Finish with spring onions, sesame seeds and prawn crackers.

Serve these chicken and prawn canapés with drinks when you're entertaining. They're not only tasty but healthy and low-fat too

thumb-sized piece ginger , grated
1 large garlic clove , grated
1 tsp honey
1½ tsp soy sauce
1 tsp sesame oil
½ lime , juiced
1 tbsp sesame seeds
1 skinless chicken breast , cut into 10 pieces
10 raw king prawns
1 broccoli head , cut into 20 florets
20 cocktail skewers

Steps:

  • Combine the ginger, garlic, honey, soy sauce, sesame oil, lime juice and sesame seeds. Divide between two bowls, then add the chicken pieces to one and the prawns to the other. Toss both mixtures well, then leave to marinate in the fridge for 15 mins.
  • Cook the chicken in a frying pan over a medium-high heat for 3 mins, then push to one side and add the prawns to the other side of the pan. Cook for 2 mins until the prawns are pink and the chicken is cooked through (use two separate pans if anyone you're cooking for has an allergy or is a pescatarian). Put the broccoli in a microwaveable bowl with a splash of water, then cover and cook on high for 5 mins.
  • Thread half of the skewers with chicken and broccoli and the other half with prawns and broccoli.

100g mayonnaise (use light, if you prefer)
3 tbsp tomato ketchup
300g peeled cooked prawns
black pepper
4 large slices rye bread
¼ iceberg lettuce
cayenne pepper

Steps:

  • Mix mayonnaise with tomato ketchup. Add peeled cooked prawns and some black pepper.
  • Cut 4 large slices rye bread into small squares - you should be able to get 6 squares from each.
  • Arrange on a platter. Shred lettuce, divide between the squares, top each with a spoonful of prawns then a sprinkle of cayenne pepper.
