I've seen peppers used in a variety of ways, but this corn bread is one of the more traditional.-Nancy Hill, Edgewood, New Mexico

1 cup yellow cornmeal
1 tablespoon baking powder
3/4 teaspoon salt
1 cup cream-style corn
1 cup sour cream
2/3 cup butter, melted
2 large eggs
1 cup shredded cheddar cheese
1 can (4 ounces) chopped green chilies

Steps:

  • In a bowl, combine cornmeal, baking powder and salt. Combine remaining ingredients. Add to dry ingredients and stir until blended. Pour into a greased 9-in. square baking pan. Bake at 350° for 1 hour or until bread tests done.

1 cup corn meal
1 cup all-purpose flour
1/3 cup sugar
2 tsp baking powder
1 tsp ground cumin
1/2 tsp salt
1 cup milk
1 egg
1/4 cup butter (melted)
1/2 cup chopped green chiles

Steps:

  • Preheat oven to 400 degrees. Use butter to grease a mini muffin or regular muffin pan.
  • Combine all dry ingredients in a large bowl. Add in milk, eggs and butter, and stir well to combine. Add in chopped green chile and stir until the chile is mixed throughout the batter.
  • Pour batter into muffin cups, leaving 1/4" space for them to rise. Bake in preheated oven until golden brown and cooked through. Mini muffins take 10 - 12 minutes to cook, regular muffins take 15 - 20 minutes.

1 1/4 teaspoons ground dried New Mexico chile peppers
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground dried chipotle chile peppers
3/4 teaspoon ground cumin
3/4 teaspoon garlic powder
2 tablespoons unsalted butter
4 tablespoons cottonseed oil, preferable, or vegetable oil, in all
1 1/2 cups chopped red onions
1/2 cup fresh poblano chile peppers, seeded and chopped
1/2 cup fresh Anaheim chile peppers, seeded and chopped
1/2 cup fresh red (preferably, or use green) jalapeno chile peppers, seeded and chopped
3/4 cup corn flour
1 1/4 cups all-purpose flour
3/4 cup sugar
1/2 cup cornmeal
1 tablespoon plus 2 teaspoons baking powder
1 large egg, beaten
1 1/2 cups milk
5 tablespoons unsalted butter, melted and cooled to room temperature
1 cup Cheddar, freshly grated
1 cup Monterey Jack, freshly grated

Steps:

  • Combine the seasoning mix ingredients in a small bowl.
  • In a 12-inch skillet over high heat, combine the butter with 2 tablespoons of the oil. As soon as the butter melts, add the onions, all the chile peppers, and 1 tablespoon plus 2 teaspoons of the seasoning mix. Stir well, then cook, stirring occasionally, until the vegetables begin to brown, about 6 to 8 minutes. Remove from the heat and set aside to cool to room temperature. The mixture should be a golden tan color, the onions a medium tan brown, and the peppers dark red and dark green. The vegetables retain a slight crunch.
  • Preheat the oven to 350 degrees F.
  • While the vegetables are cooling, make the cornbread batter. Combine the corn flour, all-purpose flour, sugar, cornmeal, baking powder, and the remaining seasoning mix in a large bowl. Add the egg, milk, melted butter, 1/2 cup each of the grated Cheddar and Monterey Jack, and the vegetable mixture. Mix until just combined.
  • Pour the remaining 2 tablespoons oil into a 12-inch cast-iron skillet. Make sure that the oil covers the entire bottom of the skillet; lift and roll the skillet if necessary. Heat the oil just until it begins to smoke, about 4 to 5 minutes. Add the batter to the skillet, the mixture will begin to sizzle right away. Remove the skillet immediately and sprinkle the top of the batter evenly with the remaining 1/2 cup each Cheddar and Monterey Jack.
  • Bake until a knife inserted into the middle of the cornbread comes out clean, about 30 minutes. Remove from oven and let stand for 10 minutes before cutting.

30 ounces whole kernel corn, drained and rinsed (2 -15 oz can)
15 ounces cream-style corn (1can)
1/2 cup butter, melted
2 1/2 cups cornmeal
1/2 cup flour
1 tablespoon baking soda
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a 2-quart baking dish.
  • Whisk sweetened condensed milk, sugar, eggs, and vanilla extract in a large bowl.
  • Stir in whole kernel corn, cream-style corn, and butter.
  • Whisk cornmeal, flour, baking soda, and salt in a separate bowl; stir cornmeal mixture into the corn mixture.
  • Pour batter into the prepared baking dish.
  • Bake until a toothpick inserted into the center of the cornbread comes out clean, about 45 minutes.

Steps:

  • Preheat oven to 375.
  • Mix dry and wet ingredients in separate bowls except the corn and chile.
  • Clean the chile, remove the seeds and dice them.
  • Stir the two bowls of wet and dry ingredients together and add the vegetables last.
  • Pour into a round cake pan and bake for 30-35 minutes. If using mini muffin pans, bake for 15-18 minutes.

1 cup butter, melted
1 cup white sugar
4 eggs
1 (15 ounce) can cream-style corn
½ (4 ounce) can chopped green chile peppers, drained
½ cup shredded Monterey Jack cheese
½ cup shredded Cheddar cheese
1 cup all-purpose flour
1 cup yellow cornmeal
4 teaspoons baking powder
¼ teaspoon salt

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large bowl, beat together butter and sugar. Beat in eggs one at a time. Blend in cream corn, chiles, Monterey Jack and Cheddar cheese.
  • In a separate bowl, stir together flour, cornmeal, baking powder and salt. Add flour mixture to corn mixture; stir until smooth. Pour batter into prepared pan.
  • Bake in preheated oven for 1 hour, until a toothpick inserted into center of the pan comes out clean.

2 teaspoons vanilla extract
2 (15.25 ounce) cans whole kernel corn, drained and rinsed
1 (15 ounce) can cream-style corn
½ cup butter, melted
2 ½ cups cornmeal
½ cup all-purpose flour
1 tablespoon baking soda
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease and flour a 2-quart baking dish.

1 package (8-1/2 ounces) corn bread/muffin mix
1 teaspoon dried minced onion
1/2 teaspoon ground cumin
2 large eggs
1/3 cup 2% milk
2 tablespoons butter, melted, divided
3/4 cup shredded Mexican cheese blend, divided

Steps:

  • In a small bowl, combine the muffin mix, onion and cumin. In another bowl, whisk the eggs, milk and 1 tablespoon butter; stir into dry ingredients just until moistened. Fold in 1/2 cup cheese., Transfer to a greased 8-in. square baking dish. Bake at 400° for 15 minutes. Brush with remaining butter and sprinkle with remaining cheese; bake 2-4 minutes longer or until cheese is melted and a toothpick inserted in the center comes out clean. Serve warm.
