- Preheat oven to 400°. Divide sweet potatoes, onion and carrots between 2 greased 15x10x1-in. baking pans. Drizzle with oil; toss to coat. Roast 25 minutes, stirring occasionally., Add kielbasa, squash and zucchini to pans; sprinkle with salt and pepper. Roast until vegetables are tender, 15-20 minutes longer. Transfer to a serving bowl; toss to combine. If desired, serve with mustard.

SHEET PAN KIELBASA (SAUSAGE) & VEGGIES
This kielbasa veggie sheet pan dinner is a rainbow of colors and can use most any vegetables you have on hand. Even better, this recipe is ready in under 30 minutes!

Steps:
- Preheat oven to 400 degrees. Place potatoes, onions and carrots on a half sheet baking pan. Drizzle with olive oil and toss to coat.
- Roast 25 minutes, stirring once or twice.
- Add kielbasa, zucchini and pepper, season with salt and pepper. Roast 15-20 minutes until vegetables are tender.
- Place onions and carrots in a gallon sized ziplock bag. Add 1-2 Tbsp olive oil. (Do not add potatoes, if you have them)
- In a separate gallon sized ziplock bag, add kielbasa, zucchini and pepper, season with salt and pepper. Label both bags and freeze until cooking.
- Defrost in refrigerator overnight to thaw. Preheat oven to 400 degrees. Place onions and carrots on a half sheet baking pan. Add potatoes purchased for cooking day.
- Roast 25 minutes, stirring once or twice. Add contents of bag with kielbasa and zucchini. Roast 15-20 minutes more until vegetables are tender.

KIELBASA WITH BROCCOLI, CAULIFLOWER AND CARROTS
My kids came up with this recipe. I gave them the challenge to find one meat they like, three veggies of different colors and how to get them all to work together. I, also, asked them to find a bread group item to go with it. They loved experimenting.

Steps:
- Get your orzo (Don't use rice.) and cook according to package directions. Be careful to check it as it's cooking because it's easy to overcook it.
- In a wok or large fairly deep skillet, pour in 1 tablespoon olive oil (Your choice of what kind you use.)Put frozen California blend veggies in the wok/skillet and drizzle with remaining 2 tablespoons of oil. Cover with a lid. Stir occasionally.
- While veggies are cooking cut up the kielbasa into bite size pieces. I like to cut them into 1/2 inch slices and cut those into half so it appears that you have more since the kids like to fight over it.
- Put the kielbasa in the wok/skillet over the cooking veggies and stir. Add more oil as needed to prevent sticking. Cook until heated through and all veggies are fork tender.
- Drain orzo and put into wok/skillet with the kielbasa-veggie mixture. Stir thorough. Add a glass of milk and you have all 4 food groups.
SAUSAGE, POTATO, CARROT BAKE

- Preheat oven to 350 degrees F (175 degrees C).
- Mix Kielbasa, potatoes, onion, baby carrots, and garlic in a roasting pan; season with salt and pepper. Drizzle olive oil over the mixture; stir to coat. Cover the baking dish with aluminum foil.

- In a large mixing bowl, add the pork, beef and pork fat. In a small mixing bowl, combine the remaining ingredients together. Mix well. Toss the meat with the seasoning blend and mix well. Cover and refrigerate for 24 hours. Grind the meat twice in a meat grinder fitted with a 1/2-inch die. A food processor could also be used. Stuff the ground mixture into the casings to form 12-inch links. Prepare the smoker. Place the sausages in the smoker and cook for 10 to 15 minutes. Remove and cool completely. Prepare the steamer. Place the sausages in the steamer and cook for 10 minutes. Remove and cool completely. Place the sausage back in the smoker and continue to smoke for 10 minutes. Remove and cool completely.
EASY KIELBASA SKILLET DINNER
The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

My father used to make this recipe, it is very tasty and very easy. If you would like a smaller serving size just use less of everything, like only a half of a head of broccoli. The vegetables definitely add up!! This recipe is great and fun to work with.

- Slice sausage in 3/4" pieces or smaller pieces if Desired and place in a heated wok or a large skillet.
