KICKIN' MEATBALLS
A zippy new take on the traditional meatball dish, the real secret in the flavor is the combination of the cumin, dill, and pepperjack cheese, which leaves the meatballs nice and moist and has everyone asking for seconds!

Steps:
- In a large bowl, combine the garlic, parsley, basil, cumin, dill, pepper, bread crumbs, mustard, salt, eggs, cheese and ground beef. Mix well using your hands, making sure that the cheese is evenly distributed.
- Roll the mixture into 1 1/2 inch balls, and place in a lightly greased skillet. Place the rings of onion over the top of the meatballs. Cover the pan, and set the heat to medium-low. Turn the meatballs over after about 3 minutes, and increase the heat to medium. Continue to cook the meatballs, turning every 10 minutes, until cooked through. Serve immediately.

MEATBALLS WITH ANY MEAT
Making great meatballs is all about memorizing a basic ratio that you can adjust to suit your taste. Start with a pound of ground meat - any kind will work, even fish if you want to take it in that direction. Add 1/2 cup bread crumbs for lightness, a teaspoon of salt, and an egg to bind it together. That's all you need. Pepper and other spices, chopped herbs and minced allium (garlic, onion, scallions or shallot) can be added to taste. Then broil or fry as you like.

KICKIN' RANCH PASTA WITH MEATBALLS #RSC
Ready, Set, Cook! Hidden Valley Contest Entry I love this recipe because it is family friendly, plus kids love pasta and meatballs. I also love Italian food and using Ranch in my recipe kicked it up a notch. I created this recipe for my family to enjoy. *Tip, powdered Parmesan works best for this recipe because it melts better in the sauce.

- Mix together the ground pork, 1/4 cup of the Parmesan cheese, bread crumbs, greek yogurt, egg, half of the Hidden Valley Original Ranch dressing/seasoning mix, half of the Hidden Valley Ranch Fiesta dip mix, pepper and salt with hands.
- Roll into approximately thirty 1 1/2 inch diameter meatballs.
- Place on 11x16 greased baking sheet and place into preheated oven at 350 degrees for approximately 20 to 25 minutes or until internal temperature reaches 165 degrees.
- While meatballs are cooking, cook and drain noodles according to package;
- In a large skillet heat margarine, whipping cream, the remaining Hidden Valley Original Ranch dressing/seasoning mix, the remaining Fiesta Ranch Dip Mix, and pepper on medium heat until slightly thickened. ( Approximately 7 to 8 minutes. Do not boil. )
- Add remaining Parmesan cheese and continue to cook 2 to 3 minutes until cheese is melted.
- Place cooked meatballs in skillet and coat with sauce.
- Place fettuccine in serving bowl. Pour sauce and meatballs over fettuccine. Sprinkle chives over dish.
SWEET & SPICY SESAME CHICKEN MEATBALL BOWLS

- In a medium bowl, whisk together soy sauce, water, sesame oil, sesame seeds, red chili paste, ginger, garlic, brown sugar and arrowroot (or corn) starch.
- In a large bowl, add the ground chicken, egg, breadcrumbs, green onion, cilantro, garlic, ginger, cayenne, salt and pepper. Use clean hands to mix and form into 16 golf ball sized meatballs.
- Place a large deep skillet over medium-high heat and add in sesame oil. Add the meatballs and brown on all sides and cook until done and the meat thermometer reads 165 degrees F. This should take about 10-12 minutes total. You may need to do this in batches, depending on how many meatballs you can fit in your skillet without overcrowding them. When the meatballs are done cooking, transfer them to a plate and set aside. Keep the heat in the pan.
- Wipe the skillet clean and add in 1 tablespoon sesame oil. Next add in broccoli florets, and cook, stirring frequently, for 6-8 minutes or until broccoli is slightly tender but still has a bite. The broccoli should get somewhat charred and slightly golden and crispy in places. Yum!
- Add chicken meatballs back to the pan with the broccoli and pour the sauce over, simmer on low until the sauce thickens slightly, about 2-5 minutes.
- Serve over rice of choice (we love my coconut rice!) and top with scallions, cilantro and chopped peanuts if desired.

- Preheat oven to 375 degrees.
- Cook sausage, onions, and mushrooms until meat is browned. Drain off fat.
- Add both tomatoes to meat mixture. Bring to boil, reduce heat and simmer for 15 minutes uncovered. Stir in cooked pasta.
- Stir in 1/2 of mozzarella cheese and all of parmesan. Toss well.
- Pour into 9 X 13" pan. Top with remaining cheese. Bake for 20 minutes.

- Cocktail Meatballs. We will take any excuse to eat meatballs by way of toothpick, and a football party is the perfect occasion for just that. You can make these homemade or buy them frozen-we won’t tell anyone if you take the easy route.
- Burgers, Hot Dogs, and Bratwurst. We know that most people associate these three foods with baseball, but they are also a perfect football food. We think that as long as you can fire up the grill, you should fire up the grill as far into football season as you can.
- Sub Sandwiches. Maybe not the most exciting food on this list, but let’s not forget that these are a fantastic football food. You can eat them with one hand and most people can’t say no to a good ol’ sub sandwich.
- Tacos. Tacos are pretty high on our list when it comes to all-time favorite foods, so we kind of had to add them to this list. Everyone loves tacos. The only thing you have to worry about with tacos is making sure you have enough salsa for everybody!
- Veggie Tray. Okay, hear us out on this one. No football party is complete without a veggie tray. Does everybody love the veggie tray the same way they love pizza?
