RETRO GROUND BEEF CASSEROLE WITH BISCUITS
A retro 50's favorite dish my mom made all the time. The ground beef casserole is topped with biscuits.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a glass baking dish (such as Pyrex®) with cooking spray.
- Heat oil in a pan over medium-high heat. Add carrots, onions, and celery and saute until onions are translucent, 5 to 7 minutes.
- At the same time, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Move beef to one side of the skillet and melt butter over medium heat. Whisk in flour a little at a time until combined; whisk in milk, whisking constantly to prevent lumps. Stir in beef broth. Add sauteed vegetables, garlic salt, onion powder, garlic powder, and black pepper. Bring to a boil; cover and remove from heat.
- Add buttermilk to baking mix. Stir until a soft dough forms. Place on waxed paper. Roll to 1/2-inch thickness. Cut with a 2 1/2-inch round biscuit cutter dipped in baking mix.
- Pour the beef mixture into the prepared baking dish and top with biscuits.
- Bake in the preheated oven until biscuits are browned, 24 to 25 minutes.

SPINACH AND GROUND BEEF CASSEROLE
This creamy, cheesy Spinach and Ground Beef Casserole is an old-fashioned, easy dinner that's ready for the oven in about 30 minutes!

- Preheat oven to 350 degrees F. Spray a 2-quart baking dish with cooking spray and set aside.
- In a large skillet, cook beef, onion and garlic over medium heat until no longer pink; drain.
- Stir in the spinach, cream cheese, condensed soup, sour cream, milk, salt and 1 cup of the mozzarella cheese. Stir over low heat, just until combined.
- Transfer to the prepared baking dish. Cover with foil. Bake for 20 minutes. Remove the foil; sprinkle with the remaining 1 cup of mozzarella cheese and the French-fried onions. Bake for 10 more minutes, or until the cheese is melted and the casserole is hot and bubbly.

BISCUIT-CRUST SPINACH GROUND BEEF BAKE
My family loves lots of heat so I also add in 2 jalapeno peppers, seeded and finely chopped along with the dryed chili flakes, but both can be omited if desired. You can use grated cheddar cheese for the top in place of Parmesan, just sprinkle the cheddar cheese on the last 5 minutes of baking. I have made this dish using Italian sausage meat, removed from casings in place of the ground beef, I like the sausage better, but the choice is yours!

- Set oven to 375 degrees.
- Butter an 11 x 7-inch baking dish.
- In a large skillet over medium heat; add in the ground beef with onion, garlic, chili peppers and jalapeno pepper (if using) cook until meat is well browned; drain fat.
- In a large bowl mix together eggs with spinach and mushrooms; mix well to combine.
