1 (5 -6 lb) bone-in standing prime rib roast, trimmed of excess fat
6 large garlic cloves
1/4 cup lightly packed fresh rosemary leaf
1/4 cup lightly packed fresh basil leaf
2 teaspoons kosher salt
2 teaspoons fresh ground black pepper
3 tablespoons Dijon mustard
3 tablespoons extra virgin olive oil
3/4 cup heavy cream
1 garlic clove, thinly sliced
6 ounces blue cheese, crumbled
fresh ground black pepper

Steps:

  • Let the roast stand at room temperature 30-45 minutes before grilling.
  • In a food processor, finely mince the garlic, rosemary, basil, salt, and pepper; add in the mustard and olive oil; process to form a paste.
  • Smear the paste all over the top and sides of the roast.
  • Grill, bone side down, over Indirect Medium Heat until cooked to desired doneness, 1 ½ to 2 hours for medium-rare.
  • Transfer the roast to a cutting board and remove the bones.
  • Loosely cover the roast with foil and let rest for 20-30 minutes.
  • Meanwhile, make the dressing: add the cream and garlic in a medium saucepan.
  • Bring the cream to a boil over medium-high heat, then decrease the heat to a simmer and cook until the cream coats the back of a spoon, 5-10 minutes.
  • Remove the pan from the heat; add in the cheese, stirring to help it blend into the cream.
  • Season with pepper to taste; carve meat into slices.
  • Serve warm with the dressing.

1 (3 rib) roast, about 5 pounds, rimmed of excess but not all fat
2 cloves garlic, finely sliced

1/2 cup white wine
2 cups beef stock
4 russet potatoes, peeled
1 quart vegetable oil
Salt
3 tablespoons unsalted butter
3 tablespoons flour
3 cups hot milk
1 1/2 cups cabrales blue cheese, crumbled
Dash cayenne pepper
Salt
2 zucchini, cut on bias into 1/2-inch thick slices
1 yellow squash, cut on bias into 1/2-inch thick slices
2 red peppers, seeded, stemmed, and cut into 4 pieces
2 yellow peppers, seeded, stemmed, and cut into 4 pieces
1/4 cup olive oil

Steps:

  • Roast: Preheat oven to 450 degrees. Bring meat to room temperature by removing it from the refrigerator at least 1 hour before roasting. Using a paring knife, poke small holes in the meat and insert the garlic into them. Season the meat with salt and pepper to taste. Place the roast in a large roasting pan, bone side down. Roast for 15 minutes. Turn the heat down to 350 degrees and continue to roast for 1 hour to 1 hour and 15 minutes for medium-rare doneness. Remove meat to a carving board and let rest. Place roasting pan on top of stove over high heat. Add the wine and cook, stirring and scraping up any brown bits and reduce. Add stock and reduce by half, season with salt and pepper. Slice beef and drizzle with some of the sauce.
  • Potatoes: Slice the potatoes and cut them into 1/8-inch slices. Then cut the slices into long strips 1/8-inch wide. Heat oil to 375 degrees F. Add them in batches, separating them when they hit the oil. Fry until golden brown, remove and drain on paper towels and salt liberally.
  • Dip: Heat butter in medium saucepan over medium heat until melted. Whisk in flour and cook for 2-3 minutes. Whisk in the hot milk and cook until the sauce has thickened. Stir in the blue cheese and cook until the cheese has melted. Season with cayenne and salt. Pour into ramekins and serve with the fries.
  • Toss vegetables with olive oil. Season with salt and pepper. Grill until tender.

Salt and freshly ground black pepper
1 stick softened butter
1 large yellow onion, sliced
1 cup heavy cream
3 to 4 tablespoons Worcestershire sauce
3/4 cup crumbled blue cheese

Steps:

  • Preheat the grill to a high heat or light your outdoor grill.
  • Sprinkle the steaks with salt and pepper and smear both sides of the steaks with 1/2 stick of the butter.
  • Grill the steaks until medium-rare, 3 to 4 minutes per side, and then remove from the heat and keep warm. (You can also saute them in a skillet over medium-high heat if you prefer.)
  • Melt the remaining 1/2 stick of butter in a large skillet over medium-high heat, and then saute the onions until golden brown, 7 to 8 minutes. Pour in the cream, a dash of salt and pepper and the Worcestershire sauce. Let it bubble up, then add the blue cheese and stir together to melt, adding more pepper or Worcestershire sauce as you wish.
  • Place the steaks on plates and spoon the sauce over the top.
  • Take a bite. And the world at long last will make sense.

The usual formula for cooking an amazing slab of steak is as simple as they come: salt plus pepper plus a short stint over a hot fire. But there are times when you want an extra shot of flavor. Some good crumbled blue cheese sprinkled on the hot steak so it melts over the top does just that, especially when you spike it with hot sauce and butter. I like to use a combination of direct and indirect heat when grilling a bone-in piece of meat; it allows a crust to form but not burn while keeping the meat juicy inside. But you know your grill best, so let your instinct guide you as to where to move the steaks and when you think they are done. And if blue cheese isn't your thing, follow the grilling directions here but leave your meat bare except for the salt and pepper. If you start with good meat, you will never go wrong.

Steps:

  • Season steaks with salt and pepper at least 30 minutes and up to 1 hour before you plan to cook them. Cover loosely with plastic wrap and let stand at room temperature.
  • Heat grill to high. If using a charcoal grill, mound coals to one side, allowing for an area of indirect heat. If using a gas grill, turn on only a few of the burners and leave the rest off for indirect heat.
  • Lightly oil steaks. Place on the hottest part of the grill. Cook, covered, until they develop a golden-brown crust, 2 to 3 minutes per side. Move steaks to indirect heat and crumble cheese over the top; cover and continue cooking 2 to 5 minutes longer, depending on desired doneness. (Pull the meat at 125 degrees for rare.)
  • Transfer steaks to a cutting board to rest, loosely covered with foil, for 10 minutes. While steaks rest, stir together butter, chives and hot sauce. Pour over steak before serving.

1 (4 fluid ounce) bottle liquid hickory smoke flavoring
2 cups kosher salt
1 cup white sugar
2 tablespoons ground black pepper

7 ½ pounds beef standing rib roast
2 tablespoons butter
1 tablespoon olive oil
2 bunches green onions, chopped
1 cup beef broth
½ cup bourbon whiskey
2 fluid ounces triple sec
½ cup white sugar
¼ cup brown sugar
6 tablespoons butter
2 tablespoons cornstarch, or as desired
2 tablespoons water

Steps:

  • Mix soy sauce, liquid smoke flavoring, kosher salt, 1 cup white sugar, black pepper, and garlic powder in a large nonstick skillet. Bring to a boil, reduce heat to low, and stir constantly until the mixture becomes thick and paste-like, 5 to 10 minutes. Remove from heat and let the mixture cool.
  • Coat beef roast completely with rub paste and cover roast with plastic wrap. Place wrapped roast on a baking sheet and refrigerate 1 to 2 days to infuse flavor into the meat.
  • Remove roast from refrigerator, unwrap, and let stand until meat reaches room temperature, about 2 hours.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Cook roast in preheated oven for 10 minutes only; reduce oven heat to 250 degrees F (120 degrees C), leaving the oven door slightly open as the temperature drops, until oven temperature reaches about 300 degrees.
  • Roast the meat until temperature reaches your desired degree of doneness, 2 to 3 hours. An instant-read meat thermometer inserted into the center of the roast reads 130 degrees F (54 degrees C) for rare, 140 degrees F (60 degrees C) for medium-rare, 150 degrees F (65 degrees C) for medium, or 160 degrees F (70 degrees C) for well done. Temperature will continue to rise as the meat rests.
  • Let roast rest for 15 minutes to redistribute juices; scrape off the rub mixture.
  • While meat is resting, heat 2 tablespoons butter with olive oil in a large skillet over medium heat. Cook and stir green onions in the hot oil and butter until browned, 10 to 15 minutes. Stir beef broth, bourbon whiskey, triple sec, 1/2 cup white sugar, and brown sugar into green onions, stirring to combine and dissolve sugars. Bring to a simmer, reduce heat to low, and cook until flavors have blended, about 5 minutes. Melt remaining 6 tablespoons butter into sauce and simmer until butter is smoothly incorporated into sauce.
  • Shake cornstarch with water in a small lidded jar and whisk cornstarch mixture into sauce. Simmer until thickened, about 5 minutes. Serve sauce with meat.
