2 boneless skinless chicken breast halves, sliced (1/2" x 1")
1 onion, sliced
1 green bell pepper, sliced
1 jalapeno pepper, chopped
salt, to taste
pepper, to taste
1 cup cabbage, shredded
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 tablespoons white vinegar

Steps:

  • Heat 2 tbsp oil in a saucepan, add the chicken and cook until inside is white.
  • (I use cooking spray).
  • Remove chicken, add onions and cook until soft, return chicken to saucepan and add green bell pepper and jalapeno.
  • Season with salt and pepper, add cabbage and cook for a few minutes.
  • Add the last three ingredients and cook for a few minutes longer.
  • Goes well with rice or pita.

A super easy and tasty chicken recipe that cooks up quickly for those days when you want a nice result without necessarily making a big effort :)I never use *only* a small amount of cilantro (coriander) personally I use a whole handful, but I love the stuff...

500 g chicken breast fillets (about 1 lb)
2 tablespoons oil
2 garlic cloves, finely chopped (I mince mine in a garlic press)
3 spring onions
1 tablespoon soy sauce
2 tablespoons white vinegar (Rice vinegar or Wine vinegars are in the original recipe -you choose which you prefer or have on han)
1/4 teaspoon chili powder
2 teaspoons sugar
1/4 cup chicken stock (or instant stock powder in 1/4 cup water)
1 teaspoon cornflour (cornstarch)
1 -2 tablespoon Thai sweet chili sauce
2 -3 tablespoons fresh coriander (Cilantro) or 2 -3 tablespoons fresh basil (optional, but coriander is gorgeous)

Steps:

  • Slice chicken fillets into thin strips.
  • Mix chicken with oil, garlic, spring onions, soy sauce, vinegar, chili powder and chili sauce and sugar.
  • Using a high heat, fry chicken mixture in a large frypan until chicken is well cooked through, stirring all the time (since the chicken is sliced thinly, this takes only a few minutes).
  • The mixture will reduce slightly as the chicken cooks.
  • Mix cornflour with the chicken stock (or water) in a small cup, so there are no lumps.
  • Add cornflour mixture to the chicken mixture and cook on high until mixture reduces by half (Watch out, this literally takes 30 seconds to a minute).
  • Toss in the coriander.
  • Serve on rice or noodles with a salad.
  • I often omit the chili sauce if serving to young children and it tastes a little bit more bland but great all the same.
  • This cooks so fast that I cut up the chicken, put it in the fridge, have everything else ready in the frypan and the cornflour and coriander ready to go and just fling everything together at the very last moment.
  • Making it too far in advance means that the sauce gets so thick that it starts sticking terribly to the bottom of the frypan.
  • 90% of the cook time is the time it takes to crush the garlic, chop the onions, mix the cornflour etc. Time in the frypan is +/- 4 minutes.

Chicken stir-fried with holy basil is a favorite Thai dish for many Westerners. Simple to prepare, it is a quick one-dish meal. The addition of fresh chilies makes the dish spicy, but you may adjust the recipe to taste by adding fewer chilies. This is a recipe of cooking instructor and cookbook author Kasma Loha-unchit. ====== NOTES: If you are not able to find fresh holy basil, this recipe can be substituted with any fresh basil... or a mixture of fresh Thai sweet basil and fresh mint leaves. Good results have been reported using ground turkey. In Thailand, this dish is often made with chopped pork, especially in fast-food, curry-rice shops, where an enormous variety of dishes are prepared ahead of time and served over steaming white rice to order. Some of the best pad gka-prow can be had at these inconspicuous, no-frills, open-air places. They are made particularly spicy to help preserve the meat, as the dishes are prepared early in the morning and served throughout the day until they are sold out. Try the above recipe also with fresh seafood (in this case, no need to chop) - shrimps, scallops, mussels, clams, crab and firm-flesh fish, such as fresh halibut and salmon.

1 lb boneless chicken thighs (coarsely chopped, or cut into small bite-size pieces. Smallest pieces soak up most sauce!)
4 -6 garlic cloves, finely chopped
2 -3 shallots, thinly sliced (or substitute with 1/2 cup sliced onion)
2 -3 tablespoons peanut oil, for stir-frying
2 teaspoons black soy sauce (the semi-sweet kind, siew dohm)
1 -2 tablespoon Thai fish sauce, to taste (nam bplah)
1 cup fresh Thai holy basil (bai gka-prow (In a pinch, use ANY basil, SEE NOTES ABOVE.)
2 small kaffir lime leaves, very finely slivered (bai ma-gkrood) (optional)
2 -3 fresh jalapenos or 2 -3 fresno bell peppers, cut into large slivers (these have the least amount of heat)
1 dash white pepper

Steps:

  • Leave the fresh basil leaves whole; the flowers may also be used. The dried holy basil will soften when soaked in tap water for 10-15 minutes. Pull off and discard the hard stems. Drain.
  • Heat a wok until the surface is smoking hot.
  • Swirl in the oil to coat the wok surface.
  • Wait a few seconds for the oil to heat, then stir in the garlic, followed a few seconds later with shallots.
  • Stir another few seconds before adding the chicken.
  • Stir-fry a minute or two, or until most of the chicken has started to change color on the outside and is no longer pink.
  • Toss in the chillies, slivered kaffir lime leaves and reconstituted dried holy basil (if using).
  • Sprinkle black soy sauce over the mixture and stir-fry another 15-20 seconds.
  • Then add fresh basil leaves and fish sauce to taste. Stir and mix well.
  • Stir-fry another half a minute, or until the basil is wilted and the chicken is cooked through.
  • Sprinkle with white pepper.
  • Stir and transfer to a serving dish, or spoon directly over individual plates of plain steamed rice.

1 3/4 lbs chicken breasts, defatted
1/2 cup soy sauce
3 tablespoons dry sherry
3 tablespoons cornstarch
1/4 cup vegetable oil
1/4 cup scallion, green and white parts, sliced diagonally
2 (16 ounce) bags stir fry vegetables
1 lb whole mushroom
1/4 cup fresh ginger, peeled and minced
1/2 cup garlic, minced
4 whole green bell peppers, seeded and julienned
1/2 cup hoisin sauce
1/2 cup dry sherry
2 teaspoons fresh ground black pepper
2 1/2 tablespoons sesame oil

Steps:

  • In a mixing bowl, combine soy sauce, sherry and cornstarch. Add the chicken and toss until coated. Let chicken stand in marinade for at least 10 minutes (while getting ingredients in bowls).
  • In a sprayed+oiled wok or saute pan, heat the vegetable oil over high heat until just smoking.
  • Add the scallions and ginger, and stir-fry for about 30 seconds.
  • Add the chicken, reserving any remaining marinade, and stir-fry for about 5 minutes, until the chicken is just done.
  • Add the vegetables+mushrooms, green peppers and stir-fry for another minute.
  • Add the hoisin sauce, sherry, salt and black pepper, and combine.
  • Add sesame oil to the marinade remaining in the bowl, stir it, and add to the wok.
  • Toss to blend well and BOIL, then simmer until slightly thickened. TASTE? Remove from the heat, drizzle with the sesame oil .

2 tablespoons sesame oil
2 garlic cloves (minced)
1 medium onion (sliced)
1 lb chicken breast (or beef or pork or duck or shrimp or tofu, sliced)
1 carrot (sliced)
1 cup bamboo shoot (sliced)
1/2 cup water chestnut
1/2 cup mushroom (sliced)
2 -5 Thai chiles (adjust accordingly)
3 tablespoons oyster sauce
3 tablespoons soy sauce
1/4 teaspoon msg (optional)
1 red bell peppers (sliced) or 1 green bell pepper (sliced)
1/2 cup snow peas
1/2 cup parsley (chopped)

Steps:

  • In a wok, heat up oil, onion and garlic on high heat. Add meat and stir till mostly cooked.
  • Add carrot, bamboo, water chestnuts, mushroom, Thai/chili peppers, and season with oyster sauce, soy sauce, salt, and MSG. Stir as each vegetable is added in the wok, and simmer while occasionally stirring for about 5min.
  • Add bell pepper and snow peas last, stir and simmer for another 3min. Turn the heat off, garish with parsley, and serve on platter. Enjoy! (Feel free to add or substitute other vegetables as desired).
