This Peach Crisp is an easy summer recipe full of juicy peaches and a thick cinnamon grain-free crumble topping. This classic dessert takes less than 10 minutes of prep and it's healthy enough for breakfast and even more perfect for dessert! It's gluten-free, vegan, paleo and includes a low carb keto option.

6-7 ripe peaches (, peeled and thinly sliced)
5 tablespoons coconut sugar (, can sub with golden monk fruit sweetener or preferred granulated sweetener for low carb)
2 tablespoons arrowroot starch (, you can also sub with tapioca starch, corn starch or use 1/2 teaspoon of xanthan gum for low carb)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 1/4 cups superfine blanched almond flour
1/3 cup coconut flakes (, chopped)
1/3 cup pecans (, finely chopped)
1/3 cup sliced almonds (, roughly chopped)
1/2 cup softened coconut oil
1/4-1/3 cup maple syrup
2 tablespoons coconut sugar (, can with golden monk fruit sweetener or preferred brown sugar substitute for low carb)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350F. Lightly coat a 9 x 9″ baking pan or a 9″ pie pan with coconut oil or avocado oil spray.

This easy keto peach cobbler recipe has it all - a deep, buttery topping with amazing crunch and a fruity, soft peach compote filling. It's a gluten free, low carb dessert that your whole family will enjoy, whether they are following a keto diet or not!

2 cups / 300g peaches (sliced, skin on )
1 1/2 cups / 170g zucchini (cored and sliced thinly)
2 tbsp butter (melted)
2 tbsp lemon juice
2 tbsp granulated sweetener
2 cups / 200g almond flour
1/4 cup / 30g coconut flour
1/2 cup / 114g butter (melted)
4 tbsp granulated sweetener
1 tsp baking powder
1 tsp vanilla extract
good pinch of sea salt
1 tsp cinnamon (optional)
2 tbsp golden erythritol (to scatter over the top of the cobbler)

Steps:

  • Preheat the oven to 180C / 350F.
  • Peel the zucchini. Slice in half lengthways, scoop out the seeds using a teaspoon and cut into 4mm thick moons. Add with the sliced peaches, sweetener, lemon juice and melted butter to your baking dish and toss to combine.
  • Mix all ingredients for the crumble topping in a separate bowl using a fork until a thick batter. Press some together with your fingers to form nice big chunks so it's thicker than a crumble.
  • Spoon the topping over the base. Sprinkle golden erythritol on top. Bake for around 40 -45 minutes till the filling is soft and the topping crisp. Keep an eye on it from about 25 minutes. Once the topping is golden brown, loosely cover the cobbler with a sheet of tin foil so the top doesn't burn.
  • Serve with yoghurt, whipped cream or keto ice cream.

2 pounds firm, ripe peaches (6 to 8 peaches)
1/4 cup packed light brown sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
Pinch kosher salt
1 cup all-purpose flour (see Cook's Note)
1/2 cup raw pecans, roughly chopped
1/4 cup packed light brown sugar
1/2 teaspoon ground ginger
Pinch kosher salt
6 tablespoons unsalted butter, melted
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • For the peach filling: Bring a large pot of water to a boil over high heat and fill a large bowl with lots of ice and cold water. Cut a small "X" into the base of each peach with a paring knife. Gently lower the peaches into the boiling water with a slotted spoon or tongs, then cook until the skin starts to peel away from the flesh, 30 to 60 seconds. Transfer immediately to the ice-water bath. Once cool enough to handle, peel the peaches and discard the skin. Remove the pit and cut flesh into 1/2-inch-thick wedges. Transfer to another large bowl, then toss in the brown sugar, cornstarch, lemon juice and salt. Transfer to a 2-quart oval baking dish (see Cook's Note).
  • For the crumble topping: Whisk the flour, pecans, brown sugar, ginger and salt together in a medium bowl. Add the butter, then stir until the flour mixture is completely moistened and forms lots of clumps.
  • Sprinkle the crumble evenly over the filling. Bake until the filling is bubbling at the edges and the topping is golden brown, about 40 minutes. Let sit 15 minutes before serving each portion with a scoop of vanilla ice cream.

3 x 410g cans peach slices in juice
zest 1 lemon , plus juice ½
1 tbsp agave syrup
140g plain flour
50g porridge oat
25g cold butter , grated

Steps:

  • Heat oven to 200C/180C fan/gas 6. Drain the peaches, but reserve the juice. Tip the peaches into a deep baking dish, roughly 20 x 30cm. Scatter over the lemon zest and juice and 1 tbsp of the agave, then toss everything together.
  • In a bowl, combine the flour, oats, butter, remaining agave and 4 tbsp of the reserved peach juice. Mix together, first with a spoon, then with your fingers, until you have a rough crumbly mixture. Scatter over the peaches, then bake for 35 mins until golden and crunchy on top.
