Steps:

  • Preheat the oven to 350 degrees F (177 degrees C). Line a muffin pan with 10 or 12 silicone or parchment paper muffin liners. (Use 12 for lower calories/carbs, or 10 for larger muffin tops.)
  • In a large bowl, stir together the almond flour, Besti, baking powder and sea salt.
  • Mix in the melted coconut oil, almond milk, eggs, and vanilla extract. Fold in the blueberries.
  • Distribute the batter evenly among the muffin cups. Bake for about 20-25 minutes, until the top is golden and an inserted toothpick comes out clean.

Steps:

  • Preheat oven to 350°F.
  • Heat the olive oil in a skillet over medium heat.
  • Add the onions to the skillet and sauté for a few minutes until beginning to soften. Add the spinach to the skillet and sauté until wilted. Let cool.
  • Whisk together the eggs, heavy whipping cream, garlic powder, and salt and pepper to taste in a bowl until well combined.
  • Place a bit of the onion and spinach mixture in the bottom of 8 sections of a well greased muffin tin.
  • Fill the secions of the tin ⅔ of the way full with the egg mix.
  • Sprinkle some cheese and bacon on top of each of the cups.

1/3 cup prepared pesto sauce

Steps:

  • Preheat oven to 375 degrees.
  • Add bacon to a medium skillet over medium heat. Cook, stirring occasionally, until bacon is crisp, about 8-10 minutes. Transfer with a slotted spoon to a paper towel-lined plate. Use accumulated bacon fat from the skillet to grease a standard 12-cup muffin tin.
  • In a large bowl, whisk to combine eggs, milk, and coconut flour. Season with salt and pepper. Add spinach and bacon and stir to combine. Divide among muffin tins and top with ricotta and pesto.

Steps:

  • Preheat oven to 350 degrees. Grease muffin tin and set aside.
  • In a medium sized mixing bowl, beat butter, powdered sweetener, and vanilla together.
  • Add eggs and milk. Mix well and set aside.
  • In a seperate mixing bowl, whisk or sift dry ingredients together including almond flour, flaxseed, baking powder, cinnamon, ginger, and nutmeg.
  • Mix dry ingredients into wet ingredients until well blended.
