Following a low-carb way of eating doesn't have to mean that you can't enjoy tacos anymore. This casserole has all the flavor of tacos, and if you like, pork rinds for crunch. For extra flavor, garnish with avocados, sour cream, sliced olives, shredded lettuce, or pork rinds.

1 ½ pounds ground beef
2 ½ teaspoons chili powder, divided
2 teaspoons onion powder, divided
2 teaspoons garlic powder, divided
1 teaspoon ground cumin
1 teaspoon ground coriander
salt and ground black pepper to taste
2 eggs
2 tablespoons heavy cream
1 tablespoon extra virgin olive oil
½ cup chopped onion
salt and pepper to taste
3 tablespoons tomato paste
1 pound frozen riced cauliflower, thawed and drained
1 ½ cups grated Cheddar cheese, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 11x7-inch baking dish with cooking spray.
  • Heat a large nonstick skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Stir in 1 1/2 teaspoons chili powder, 1 teaspoon onion powder, 1 teaspoon garlic powder, cumin, coriander, salt, and pepper until spiced are distributed evenly. Cook until fragrant, 4 to 5 minutes. Remove from heat.
  • Whisk together eggs and cream in a bowl; add to meat mixture. Spread mixture into the prepared baking dish and pat down evenly.
  • Wipe the skillet clean, add olive oil, and heat over medium heat. Add onion and cook until soft and translucent, about 2 minutes. Add remaining 1 teaspoon each chili powder, garlic powder, and onion powder. Season with salt and pepper. Stir in tomato paste and cook, stirring often, 2 to 3 minutes. Add cauliflower rice and continue cooking for 4 to 5 minutes. Remove from heat, stir in 1 cup Cheddar cheese, and spread on top of meat in the baking dish, smoothing with a spatula to flatten the top.
  • Bake in the preheated oven for 25 to 30 minutes. Sprinkle remaining 1/2 cup Cheddar over the top and bake until cheese has melted, about 5 minutes. Remove from oven and allow to cool about 5 minutes. Serve warm.

Everyone will love this colorful, flavor-packed keto breakfast casserole. Luckily, it feeds a crowd!

Number Of Ingredients 13

2 tablespoons unsalted butter, at room temperature
1 medium turnip (about 8 ounces), peeled and cut into 1/2-inch dice
One 8-ounce bag radishes (about 1 bunch), halved if small and quartered if large
1/4 medium celeriac (about 4 ounces), peeled and cut into 1/2-inch dice
1/2 teaspoon ground cumin
Kosher salt and freshly cracked black pepper
1 pound fresh chorizo, removed from casings
1 small red onion, cut into 1/2-inch dice
One 8-ounce block Monterey Jack cheese, grated
3 cups packed baby spinach
1/3 cup heavy cream
12 large eggs
Sour cream, for serving

Steps:

  • Preheat the oven to 400 degrees F. Butter a 9-by-13-inch baking dish with 1 tablespoon of the butter.
  • Scatter the turnips, radishes and celeriac on a baking sheet. Melt the remaining 1 tablespoon butter and drizzle over the vegetables. Sprinkle with the cumin, 1 teaspoon salt and some pepper and toss to coat the vegetables.
  • Roast, stirring once halfway through, until the vegetables are just tender and beginning to brown, about 12 minutes. Set aside to cool slightly. Reduce the oven temperature to 350 degrees F.
  • Meanwhile, add the chorizo to a large skillet over medium heat and cook, using a wooden spoon to break up any chunks, until cooked through, about 5 minutes. Transfer the chorizo to the prepared baking dish with a slotted spoon and spread in an even layer, leaving the fat from the chorizo in the skillet.
  • Return the skillet to medium heat. Add the onions and a pinch of salt and cook, scraping up any browned chorizo bits from the bottom of the skillet, until the onions begin to soften, about 3 minutes (see Cook's Note).
  • Scatter the onions on top of the chorizo in the baking dish and sprinkle half of the Monterey Jack over the onions. Add the spinach in an even layer on top of the cheese, then distribute the roasted vegetables on top of the spinach.
  • In a large bowl, whisk together the cream, eggs, 1 teaspoon salt and several grinds of pepper. Pour the egg mixture over top of everything in the baking dish. Top with the remaining cheese.
  • Bake until set in the center, 35 to 40 minutes. Let cool for 10 minutes. Top with sour cream before serving.

1 cup cooked, pulled or diced chicken
1 medium head of cauliflower (or use a bag of frozen florets, thawed)
1/3 cup butter
½ cup diced green pepper
1 cup mushrooms, sliced
½ cup red onion, chopped
8 slices cooked crisp bacon, crumbled
1 packet (or 2 tsp) Xanthan Gum (for thickening)
1 cup heavy cream (SEE RECIPE NOTE BELOW)
1 teaspoon salt
1 teaspoon pepper
1 cups cheddar cheese, grated
1 cup mozzarella, grated
1 teaspoon paprika
1 teaspoon garlic powder (or 2 cloves fresh minced)
Parmesan, grated or shaker for the top (optional)

Steps:

  • Preheat the oven to 350. Separate the cauliflower into small florets. In a large pot of boiling water cook until just tender. Drain and set aside. If using frozen cauliflower just thaw and set aside. Melt the butter in the saucepan. Add the mushrooms, green pepper, onion and crumbled bacon. Sauté for about 3 minutes. Sprinkle in the Xanthan gum. Mix to coat evenly. Gradually stir in the cream, stirring constantly until it thickens. About 3 minutes. Season with salt and pepper. Put half of the cauliflower and all the chicken in a casserole dish and sprinkle with half each of the cheeses. Spoon half the veggies with sauce over the cheese. Put the rest of the cauliflower on top, sprinkle with the rest of the grated cheese and pour the rest of the sauce on top. Sprinkle with paprika, garlic powder and parmesan. Bake at 350F for 35 to 40 minutes.

12 ounces sausage, casing removed*
olive oil
2 cloves of garlic, minced
3 cups fresh spinach
1 green bell pepper, diced
1 red bell pepper, diced
½ medium yellow onion, diced
montreal steak spice, (to taste)
salt & pepper, (to taste)
12 large eggs
½ cup milk, any
½ cup shredded cheese, any flavour

Steps:

  • Spray a 7x11 or 9x13 casserole dish with non-stick spray. Set aside.
  • In a large skillet over medium heat, brown the sausage. If you are using fully cooked sausage, you may skip this step. I like to brown my sausage just a little bit, even if it is already fully cooked. Spoon the browned sausage evenly into prepared casserole dish. Set aside.
  • Add a little olive oil to the same large skillet (I use about 2 teaspoons since there is some grease left from the sausage). Sauté the garlic, spinach, peppers, and onion until vegetables are tender and spinach is wilted, about 6-7 minutes. Season with salt and pepper during the last minute or so. Add the cooked vegetable mixture to the sausage in the prepared casserole dish and roughly stir together to distribute mixture evenly. Set aside.
  • In a medium size bowl, whisk together the eggs, milk, ¼ cup of the shredded cheese, montreal steak spice, salt and pepper. Pour egg mixture evenly over sausage and vegetable mixture. Sprinkle with remaining ¼ cup of shredded cheese and a little more salt and pepper. Cover casserole dish with plastic wrap or foil and refrigerate at least 2 hours or up to 1 day.
  • When you are ready to bake the casserole: preheat the oven to 375ºF and bake for approximately 45 minutes or until edges start to brown. Allow to cool at least 15 minutes before serving. Store leftovers in the refrigerator up to 5 days. Reheat individual servings in the microwave as needed. Baked casserole may be frozen, up to 2 months. Thaw in refrigerator overnight and bake at 350ºF for about 20 minutes or until heated through.
  • To make ahead/freeze this casserole: you can freeze unbaked casserole up to 2 months. Cover very tightly with plastic wrap and foil. Thaw overnight in the refrigerator and continue with step 5.
