This Keto Broccoli Salad is a delicious, simple, and low carb dish that you can throw together in no time! Make your own keto-friendly dressing for a delicious and easy keto side dish.

6 slices Bacon ((omit for vegetarian))
4 cups Broccoli Florets (raw, diced into 1/4 inch pieces)
1/2 cup Red Onion (diced)
1/3 cup Walnuts (chopped)
1 cup Shredded Cheddar Cheese
1/4 cup Sunflower Seeds
1/4 cup Sour Cream
1/4 cup Mayo
2 tablespoons Apple Cider Vinegar
1 packet Splenda (or other sweetener)

Steps:

  • Cook bacon until crisp and then crumble. Reserve aside 1 tablespoon of bacon fat and save the rest for another use.
  • In a small bowl, mix together sour cream, mayo, apple cider vinegar bacon fat, and Splenda.
  • In a large serving bowl, toss together the broccoli, cheese, onion, walnuts, bacon, and sunflower seeds.
  • Pour in the dressing and toss to mix. Allow the salad to rest for 10-15 minutes before serving.

6 slices bacon (I like to use Turkey Bacon)
4-5 cups Broccoli Florets, raw, diced into 1/4 inch piece
1/2 cup Shredded Cheddar Cheese
1/4 cup red onion
1/4 cup chopped walnuts, macadamia nuts, or nuts or choice chopped
1/4 cup sunflower seeds
1/4 cup sour cream
1/4 cup mayo
1 tbsp Apple Cider Vinegar
1 tbsp powdered keto sweetener of choice

Steps:

  • Dice bacon into small bite-size pieces. Heat a large heavy-duty pan over medium-high heat. Add the bacon to the pan and cook for 3-5 minutes or until crispy
  • In a small bowl, whisk all the ingredients for the dressing.
  • In a large serving salad bowl, Add the chopped broccoli, cheddar cheese, red onion, nuts, sunflower seeds, and dressing. Toss to combine.
  • Serve immediately or cover and store in the fridge for up to 2 days.

3/4 cup mayonaise
1/4 cup sour cream
1 tbsp apple cider vinegar
1 tbsp Swerve confectioners'-style sweetener
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
6 cups broccoli florets (blanched or raw, but into bite sized pieces)
1 cup shredded cheddar cheese
1/2 cup red onion (diced)
1/4 cup shelled sunflower seeds
8 oz bacon (chopped and cooked (for a shortcut you can use pre-cooked bacon or bacon bits))

Steps:

  • Whisk together all dressing ingredients in a bowl and set aside.
  • In a large bowl, toss together all of the salad ingredients (if using blanched broccoli, make sure to let it cool completely before adding). Pour the prepared dressing over the broccoli and toppings. Lightly toss to make sure everything is evenly coated and mixed.
  • Store in the refigerator and use within 3 days.

2 cups cauliflower florets, chopped
1 carrot, chopped
¼ cup chopped green onions
½ cup mayonnaise
¼ cup distilled white vinegar
1 tablespoon sour cream
1 pinch garlic powder
1 pinch dried basil
¼ cup shredded Cheddar cheese
1 tablespoon chopped fresh cilantro, or to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Chop and set aside.
  • Combine broccoli, cauliflower, carrot, and green onions in a large bowl.
  • Combine mayonnaise, vinegar, and sour cream in a separate bowl. Beat until smooth. Season with garlic powder and basil.
  • Pour dressing over vegetables and toss to coat evenly. Chill until flavors meld, about 1 hour.
  • Serve salad garnished with Cheddar cheese and cilantro.
