Extra cheesy spinach dip with four cheeses is the indulgent, absolutely delicious appetizer recipe of your dreams served with baguette.

Ingredients

700 g (approximately 1½lbs) frozen spinach (You need 2-3 cups spinach once moisture has been squeezed out) )
250 g (½lb) cream cheese
1 cup grated mozzarella cheese
1 cup grated cheddar cheese
1 cup crumbled feta cheese
½ cup Parmesan cheese ((+ 2 tbsp for topping) )
1 tsp garlic powder
½ tsp chilli flakes
pinch of ground nutmeg
1 tsp oregano
½ tsp pepper
salt (to taste )

Steps:

If using frozen spinach, thaw it completely then squeeze out any excess moisture. If using fresh, wilt the spinach in a large pan then allow to cool completely before squeezing out any excess moisture.
Combine the spinach with room temperature cream cheese, crumbled feta cheese and grated Parmesan and mozzarella.
Add all the seasonings then mix well.
Transfer the mixture to an oven-proof pan, skillet or pie dish and top with more grated Parmesan.
Place in a hot oven and bake for 10-12 minutes until golden and bubbling.
Remove from the oven and allow to cool for 5 minutes then serve with baguette toasts.

This is a recipe I loosely copied from a restaurant I like to go to... but I have changed a lot of things in it. My friends tend to harass me about bringing this dip, and it never stays around for very long...

Ingredients

8 ounces cream cheese, brought to room temperature
1/2 cup chopped red bell pepper
1/2 cup chopped red onion (can be green onion for a milder taste)
1/2 package thawed and drained frozen chopped spinach (more if you like spinach, less if you don't)
1/4 cup parmesan cheese
2/3 cup cheddar cheese
1/3 cup of choice cheese (can be mozza, jack, or I use feta)
1 teaspoon cayenne (or seasoning salt for a milder alternative)

Steps:

In a large mixing bowl mix all the ingredients together really well (leaving 1/3 cup of cheddar for the top).
Put in greased over ready dish (glass, china, anything but a pan or tin).
Top with remaining cheddar.
Bake for 15 minute at 375º.
Make sure it's bubbling! Remove and let rest for 5 minutes.
Serve with pita wedges, naan or tortilla chips!

8 ounces cream cheese
3/4 teaspoon garlic powder (not garlic salt)
1/4 cup freshly grated parmesan cheese
1 tablespoon not packed freshly grated romano cheese
1 tablespoon very finely chopped sweet red pepper
1 green onion, white and green finely chopped (scallion)
0.5 (16 ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 cup grated medium cheddar
1 pinch cayenne pepper (optional)

Steps:

Preheat oven to 400°F.
Mix first 4 ingredients with hand or stand mixer on medium until softened and well mixed.
Add next two ingredients and mix on med-low until just incorporated.
Add spinach and mix on low until just incorporated.
Transfer mixture to a small ovenproof dish and sprinkling cayenne on top to taste. Top with cheddar. Bake for 15 - 18 minutes or until bubbling around the edges.
Remove from oven and allow to set for 5 - 7 minutes before serving. Serve with fried or baked pita wedges and tortilla chips.

1 (15 ounce) jar alfredo sauce
3 bricks cream cheese
approx 2 cups frozen chopped spinach (1 bag)
2 tablespoons Worcestershire sauce
2 tablespoons cajun seasoning
1 1/2 cups mozzarella cheese, shredded
1 1/2 cups cheddar cheese, shredded
15 pieces naan bread
2 tablespoons chili powder
1 tablespoon garlic powder
2 -3 tablespoons olive oil

Steps:

Preheat oven to 350 F.
Soften cream cheese in microwave, stir until smooth, add jar of alfredo sauce, Cajun seasoning, Worcestershire sauce, and 1/2 of the shredded cheese. Drain spinach and add.
Place mixture in 8x8 baking dish, top with remaining shredded cheese. Bake for 20 minutes or until cheese on top is bubbly.
Cut Naan bread into wedges, place in large mixing bowl and add olive oil, toss until coated. Sprinkle on chili and garlic powder and toss. Place on baking sheet and bake for last 10 minutes with dip.
