1 1/2 cups shredded chicken or turkey meat
1/2 cup chopped celery (or use apple, fennel, or radish)
1/4 small red onion, chopped, (or use 2 scallions, white and green parts, or 1 large shallot)
1/2 cup mayonnaise
Kosher salt and freshly ground black pepper
8 slices bread

Steps:

  • Place chicken meat into a large bowl. Add celery, mayonnaise, salt and pepper to taste. Stir to mix. Lay 4 slices bread on work surface. Divide salad evenly among them. Top with remaining bread.

2 Smoked Turkey Legs, recipe follows
1/4 cup diced celery
1/4 cup diced apple
1 tablespoon pecans, roasted
1 teaspoon rice wine vinegar
1 teaspoon fresh parsley, finely chopped
1/4 teaspoon freshly ground black pepper
1/4 cup mayonnaise
3 quarts water, hot
225 grams kosher salt
225 grams dark brown sugar
1100 grams (about 2.5 pounds) ice
6 turkey legs
1 cup unsalted chicken stock

Steps:

  • Remove the skins from the Smoked Turkey Legs, pull off the meat and chop into 1/2-inch cubes.
  • Place the turkey, celery, apple, pecans, vinegar, parsley, black pepper and mayonnaise in a medium-sized bowl. Stir to combine and serve.
  • Place the water, kosher salt and brown sugar in an 8-quart plastic container and stir until fully dissolved. Add the ice before submerging the turkey legs in the brine. Cover and refrigerate for 4 hours or up to 12 hours.
  • Set up your favorite smoker and add a handful of hardwood chunks. If you have heat control, set it to 150 to 170 degrees F and allow the wood to smoke for approximately 30 minutes.
  • While the smoker is heating, drain the legs, pat them dry and arrange them on a rack. Smoke the legs on the rack for 3 hours, rotating the legs halfway through.
  • Heat your oven to 350 degrees F. Make 2 pouches out of double-layered heavy-duty tin foil, adding 3 legs and 1/2 cup of chicken stock to each pouch. Braise the legs in their pouches for 1 hour, then carefully drain and reserve the jus.
  • Defat the jus, remove the skins and serve the legs alongside the smoky jus.

1 large smoked chicken breast, chopped
1/2 cup onion, chopped
1/3 cup red bell pepper, chopped
1/2 cup fresh cilantro, pulled from stem then chopped
1/8 cup canned black olives, chopped
2 pickled jalapeno peppers, chopped
1 canned chipotle chile in adobo, chopped (kat uses two.)
1/4 teaspoon ground cumin powder
salt and pepper, to taste
3/4 cup mayonnaise (more if needed, to moisten the above ingredients)
cheddar jalapeno bread
garlic powder
cooking spray
peach slices, pineapple slices or avocado

Steps:

  • Combine all chicken salad ingredients in bowl and mix well. This is a very hot and spicy recipe, but you can reduce the chipotle and jalapeno pepper if you wish. (The pickled jalapeno gives the chicken salad a little of the tartness that we expect with dill pickles in a traditional chicken salad.).
  • Once mixed, sprinkle garlic powder on the bread or rolls, spray with cooking spray and then toast under the broiler.
  • Spread chicken salad mixture on the toasted bread, and choose a garnish, if you wish. Try pineapple or peach slices (even better if it's grilled.) The sweetness of the fruit will complement and tame the heat from the peppers. Avocado is also a tasty garnish.

1 (8 ounce) can water chestnuts, drained and sliced
1 teaspoon salt
2 tablespoons lemon juice
1/2 cup slivered almonds
1/4 teaspoon celery salt
2 stalks celery, chopped
1/8 teaspoon pepper
1 cup mayonnaise
3/4 cup grated or finely chopped cheddar cheese
1/2 cup crushed French-fried onions

Steps:

  • Mix all ingredients together, except for cheese and onion.
  • Cheese and top and cover with onions.
  • Bake at 350 degrees for 30 minutes.

  • *In a food processor fitted with a metal blade, add celery and pulse until it turns into a minced consistency. Remove from food processor and place in a large mixing bowl.
