KATHLEEN'S MEATBALLS
Using the finest pecorino romano (sheep's milk) cheese and a food processor for some of the prep set this simple meatball recipe apart.

Steps:
- Preheat oven to 400 degrees. In a small bowl, combine the milk, breadcrumbs, and 1/2 cup water; set aside until softened.
- In the bowl of a food processor, combine the onion and garlic. Process until very finely chopped; transfer to a large bowl along with the beef, eggs, breadcrumb mixture, parsley, and cheese. Using your hands, mix until well combined.
- Measure the meat mixture into 1/4-cup-sized balls. Transfer to a roasting pan, and bake for 15 minutes, turn, and bake for 15 more minutes. Remove, drain, and set aside.
CHICKEN MEATBALL CASSEROLE

- For the meatballs: Preheat the oven to 350 degrees F. Coat a baking sheet with nonstick cooking spray.
- Mix together the chicken, pumpkin, Parmesan, onion, parsley, salt, pepper and garlic in a large bowl. Cover and refrigerate 20 minutes.
- Shape the mixture into balls using a tablespoon and place on the prepared baking sheet. Bake until cooked through, 12 to 15 minutes. Increase the oven temperature to 400 degrees F and spray a 9-by-13-inch baking dish with cooking spray.
- For the casserole: Meanwhile, bring a large pot of water to a boil. Season generously with salt. Add the pasta and cook 3 minutes less than the package instructions. Reserve 1/3 cup pasta water and drain.
- Toss the pasta with the marinara sauce and pasta water in a large bowl. Transfer to the greased baking dish. Nestle the meatballs into the pasta. Top with the mozzarella and sprinkle with the Parmesan.
- Bake until the cheese is melted and bubbly, about 20 minutes. Let stand for 5 minutes. Serve with grated Parmesan.

- 1. Preheat oven to 375, grease and flour 9 inch pans 2. Melt chocolate and set a side 3. Cream butter and brown sugar. Than with the mixer on low speed add eggs 1 at a time, beating well after each. then add the chocolate. 4. in a bowl combine the flour, baking soda, and salt. Alternating between the 2 add flour mixture and buttermilk to the chocolate mixture in 3 stages, ending with flour. Than slowly add the boiling water and vanilla. 5. Pour the batter into the 2 cake pans. Bake until the toothpick comes out clean, 30 mins. 6. remove the pans from the oven and let them cool about 5 mins. then transfer the cakes to cooling wire racks. Let the cakes cool completely. 7. Ice the cake Chocolate Icing 1. Combine the chocolate and butter and melt. 2. remove from the heat and stir in the vanilla and transfer to a mixing bowl. 3.Slowly add the sugar and mix until smooth
VEGETARIAN "MEATBALLS"
I just invented these on a whim because my non-vegetarian husband loved the "Tofu Nut Balls" recipe here, but I was out of the ingredients. This is a bit more like traditional meatballs. I don't work for Boca, but in a small town vegetarian choices are limited to what the Walmart will stock. They even held up to a short simmer in spaghetti sauce once baked. We both loved them! I even saved a few to add to a savory herb gravy for a po-boy. Mmmm...

- Preheat oven to 450 degrees.
- Place imitation hamburger and imitation sausage in a food processor and process until finely ground.
- Remove "meat" to a bowl and combine with remaining ingredients.
- Form into 16 "meatballs" and place onto oiled cookie sheet.
- Spray or brush with cooking oil and place in oven.
- Bake until lightly browned approximately 20-30 minutes.

- In a large bowl, mix together meatball ingredients until well combined. Form mixture into balls, about 1-1.5 inches. Place the balls on the greased baking sheets about an inch apart. Bake for 10-13 minutes until the meatballs are lightly browned on the outside and cooked all the way through.
- While the meatballs are cooking, whisk the Asian Sauce ingredients together in a medium bowl.
- To sauce the meatballs… you can either dump them into the sauce and pull out using tongs or a fork, you can pour over the sauce, or use a toothpick and dip the meatballs one by one. Sprinkle sauced meatballs with extra sliced green onions and sesame seeds.
