"Kasha, a high-fiber, lysine-rich grain made from buckwheat groats, is common throughout Eastern Europe. It has a distinctive earthy flavor, so some people consider it an acquired taste, but many of us at Moosewood like it a lot. Like rice, kasha can be eaten plain alongside a juicy main dish such as beans or sautéed vegetables, but it has the advantage of being quick-cooking - a mere 15 minutes and it's ready.This savory pilaf can stand on its own as a side dish or serve as a first-class stuffing for tomatoes, bell peppers, or winter squash."

1-1/4 cups chopped onions
1 cup diced celery
4 garlic cloves, minced or pressed
1 tablespoon canola or other vegetable oil (I used EVOO)
1 cup kasha (buckwheat groats)
1-1/3 cups water
1 cup peeled and diced carrots
2 cups sliced mushrooms
1/4 cup dry red wine (I used water)
2 tablespoons soy sauce
2 tablespoons chopped fresh dill (2 teaspoons dried)
ground black pepper to taste
garnish with a few fresh dill or parsley sprigs
garnish with tomato wedges

Steps:

  • In a large skillet saute the onions, celery and garlic in the oil for about 10 minutes, until the onions are translucent.
  • Add the kasha and saute for another minute to lightly toast it.
  • Pour in the water, add the carrots, cover, and simmer for 5 minutes.
  • Add the mushrooms, red wine, any sauce and dill. Cover and cook on low heat until the liquid is absorbed and the kasha and vegetables are tender, about 10 minutes.
  • Add pepper to taste. Served garnished with dill or parsley sprigs and tomato wedges.

ALMOND RICE PILAF

This tasty rice pilaf dish features slivered almonds. Cooking rice via the pilaf method brings out nutty, toasty flavors, and it's less sticky, too.

2 tablespoon butter
1 cup long-grain white rice
2 tablespoon finely diced onion
1/2 cup slivered almonds
1 1/2 cups chicken stock or broth
1 bay leaf
Kosher salt, to taste
2 tablespoon chopped Italian parsley

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F.​
  • Heat a heavy-bottomed saucepan over medium heat, then add butter. Meanwhile, in a small saucepan, bring stock or broth to a boil.​
  • When butter gets foamy, add diced onion and almonds and sauté until onion is slightly translucent, about 2 to 3 minutes.​
  • Add uncooked rice and sauté, stirring constantly, for about a minute, or until rice is fully coated with the melted butter.​
  • Add hot stock or broth, bring back to a boil, then add bay leaf. Cover and place entire pot in the oven. Tip: Check seasoning of cooking liquid and make any necessary adjustments before pot goes into oven.​
  • Cook rice in oven for 18 minutes or until all the liquid is absorbed. If after 18 minutes, there's still liquid in the pot or rice is still too moist, re-cover and return pot to oven for another 2 to 4 minutes.​
  • Remove pot from oven and gently fluff rice with a wooden fork. Remove bay leaf and discard. Then place a paper towel across top of pot, replace lid, and let rice stand for 10 minutes. Garnish with chopped parsley and serve right away.

1 large onion, chopped
6 cups chicken broth or water
1 teaspoon kosher salt

Steps:

  • In a large saucepan, toast kasha over medium high heat, stirring constantly, until it darkens and starts to smell nutty, about 2 to 3 minutes.
  • Add oil, heat for a few seconds, then add onion and sauté about 3 minutes, stirring. Pour in broth or water, add salt and pepper, and bring to a simmer. Cover pot, turn heat to low, and cook until kasha is tender, about 10 to 12 minutes. Fluff with a fork before serving.

2 egg whites
1/2 cup kasha
2 teaspoons canola oil
1 rib celery, sliced thin
1 small onion, coarsely chopped
1 cup chicken stock or broth
Freshly ground black pepper
Salt, if desired
1/2 cup toasted slivered almonds

Steps:

  • In a nonstick saucepan beat the egg whites slightly; then spoon off and discard about a teaspoon.
  • Mix kasha with the remaining whites. Stir frequently over medium heat until each grain is separate and dry.
  • Push kasha to one side of the pan and add oil to the pan. When it is hot, add celery and onion and saute over medium heat a few minutes until onion begins to soften and brown.
  • Add chicken stock; combine ingredients in the pan and season with salt and pepper. Reduce heat; cover pan and simmer about 15 minutes, until kasha is tender. Stir almonds into kasha.

1 1/3 cups buckwheat groats
2 cups water
2 lbs sweet potatoes
1 tablespoon butter (optional)
2 medium onions, thin sliced
1/4 cup milk
1/2 cup tamari
1/4 cup vegetable oil
2 garlic cloves, minced

Steps:

  • Kasha: Thoroughly rinse the groats and discard water. In a medium saucepan, bring required water to a boil. Add rinsed groats. Cover. Reduce heat to low and cook groats for 10 minutes or until the water is absorbed and the groats are fluffy.
  • Sweet-Potato Puree: Cut sweet potatoes in halves and bake at 400 degrees for 50 minutes, or cut in chunks and boil for 30 - 40 minutes, or microwave chunks for about 7 minutes. Remove skins and discard. If using the onions, melt the butter in a medium skillet, and add onions. Cook over medium-high heat until the onions are translucent ~- about 4 minutes. Set aside. In a large mixing bowl, mash sweet potatoes. Add sauteed onions, milk, salt and pepper.
  • Garlic Sauce In a small bowl, blend tamari with vegetable oil and garlic. Combine the three parts of the recipe: spoon kasha into a serving dish; drizzle with garlic sauce. Top with sweet potato mixture. Serve hot.

1 cup dried kasha
2 cups water
1/2 lb mushroom
2 large onions
2 tablespoons olive oil
1 egg
1 bouillon cube

Steps:

  • Heat a dutch oven pot with 2 tablespoons of olive oil.
  • Add sliced mushrooms and onions and saute until caramelized.
  • Beat one egg in a bowl, add dried kasha and mix thoroughly.
  • Heat a small skillet and add kasha/egg mixture.
  • Stir until kasha kernels are separated.
  • Once seperated, add kasha to onion/mushroom mix with two cups of water and one boullion cube.
  • Cover for about 10 mins and turn of heat.

1-1/4 cups unsweetened apple juice or cider
1 cup Kashi whole grain pilaf
1/2 cup uncooked wild rice
1/2 cup chopped red onion
1 teaspoon olive oil
2 medium tart apples, chopped
2 green onions, thinly sliced
1/3 cup orange juice
1/4 cup dried cranberries
1/4 cup dried currants
3/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 cup finely chopped pecans, toasted
2 tablespoons minced fresh parsley

Steps:

  • In a large saucepan, bring the water, apple juice, pilaf and wild rice to a boil. Reduce heat; cover and simmer for 55-60 minutes or until rice is tender. Drain if necessary., Meanwhile, in a large skillet, saute onion in oil for 2 minutes. Stir in apples and green onions; cook 3-4 minutes longer or until apples are crisp-tender. Stir in the orange juice, cranberries, currants, salt, pepper, cinnamon and nutmeg. Bring to a boil. Stir in pilaf mixture; heat through. Sprinkle with pecans and parsley.
