SALMON WITH SWEET AND SPICY RUB

Steps:
- Coat your grill or a grill pan with cooking spray and preheat over medium heat. While the grill is heating, combine the brown sugar, chili powder, cumin, salt, and pepper. Brush each salmon fillet with 1/2 teaspoon of the oil, then rub each fillet with about 1/2 tablespoon of the spice mixture.
- Grill the salmon, flesh side down, until charred, 4 to 5 minutes. Flip the salmon and cook another 5 to 6 minutes for medium doneness. For well done fish, cook an additional 1 to 2 minutes. Remove to a platter and serve immediately.

Steps:
- Combine the the first 8 ingredients.
- Coat both sides of salmon with the rub.
- Heat a small amount of oil in saute pan over med high heat and cook salmon on one side for 2 minutes. Lower heat and turn salmon. Cook for an additional 6-8 minutes till salmon is done.
KAREN'S SALMON RUB
A sweet, tangy rub for salmon. Make a bunch and keep it in a jar, ready to rub onto fresh salmon and throw on the grill!

Steps:
- Saute first 3 seeds about 3 minutes or until fragrant. Add pepper and cool.
- Grind in food processor or blender, add brown sugar.
- Rub on salmon, cover with plastic wrap and return to fridge at least 15 minutes. Grill.
- Enjoy!

KAREN'S KID FRIENDLY SALMON
This is the only way that I can get my kids to eat Salmon. They beg for seconds and thirds(and sometimes fourths). Preparation time does not include marinating time. It is also very easy to make. Go easy on me, this is my first recipe to post on here.

Steps:
- Put salmon in a ziplock bag with the teriyaki sauce and marinate in refridgerator for 1-2 hours.
- Lightly spray 9 by 13 pan with pam or other cooking oil.
- Lay salmon(skin side down) in pan and sprinkle brown sugar all over the top. Use more or less according to how sweet you would like it.
- Cook in oven at 375 for about 30 minutes or until salmon flakes with a fork. Cooking time will vary based on how thick the salmon fillets are.
- ***Just a note -- I usually spoon the pan juices that are in the bottom of the dish over the salmon -- YUMMEEE. The kids love it.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- When pasta has come to room temperature, combine it with tomatoes, green onions, pickles, salmon, mayonnaise, salt and pepper in a large bowl and mix well. Chill before serving.
