CLASSIC SHRIMP SCAMPI
America can't seem to get enough of shrimp scampi: It's one of the 10 most-searched recipes on FoodNetwork.com during the summer (more popular than burgers!) and #shrimpscampi has more than 134,000 posts on Instagram. What's the excitement all about? Do we love shrimp scampi because it's simple but seemingly fancy? Or because it's done in 30 minutes? Or because we just can't resist a buttery wine sauce? All of the above!

Steps:
- Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
- Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
- Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.
SHRIMP SCAMPI FOR ONE
Steps:
- 1) Cook pasta according to package. Reserve some of the cooking water for the sauce later. Drain the pasta and set it aside. 2) Mince garlic and shallots and clean the shrimp if they aren't already cleaned. 3) Add butter to pot over medium heat. Once hot and melted, added shallots and garlic and cook for a minute until soft. 4) Add shrimp along with a splash of white wine, and the crushed red pepper. Cook shrimp about 90 seconds a side until they are just cooked. Try not to overcook them. 5) Add cream to the shrimp and stir. The sauce should reduce nicely. 6) Add pasta back into the pot and stir to combine. Season with salt and pepper. If sauce is too thick, add a bit of reserved pasta water to thin it out. Don't make it too thin though! Serve immediately!

- Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well.
- Melt butter in a large saucepan over medium heat. Stir in garlic and shrimp. Cook, stirring constantly, for 3 to 5 minutes.
- Stir in wine and pepper. Bring to a boil and cook for 30 seconds while stirring constantly.
- Mix shrimp with drained pasta in a serving bowl. Sprinkle with cheese and parsley. Serve immediately.

- Heat 12-inch skillet over high heat until hot, 2 to 3 minutes.
- Add 1 tablespoon oil and swirl to coat bottom of pan.
- Add 1 pound shrimp and cook, stirring occasionally, until just opaque, about 1 minute; transfer to medium bowl.
- Return pan to heat and repeat process with remaining oil and shrimp.
- Return empty skillet to medium-low heat; melt 1 tablespoon butter.
- Add garlic and cook, stirring constantly, until fragrant, about 30 seconds.
- Off heat, add lemon juice and vermouth.
- Whisk in remaining 2 tablespoons butter; add parsley and cayenne, and season to taste with salt and pepper.
- Return shrimp and accumulated juices to skillet.

- Heat wine, olive oil, butter, margarine, and garlic in a large skillet on medium heat until it just starts to boil.
- Then add paprika and parsley flakes, stir in and immediately add shrimp.
- Cook for about 4 or 5 minutes or until shrimp turns pink.

- Combine olive oil, lemon zest, lemon juice, red pepper flakes, and dried parsley in a small bowl. Add shrimp and toss to coat. Marinate for 15 to 20 minutes.
- Melt butter in a pot over medium-high heat. Add olive oil. Stir in orzo and onion, toss to coat, and cook, stirring frequently, until onions are translucent and orzo is lightly toasted, 4 to 5 minutes. Mix in garlic and cook until fragrant, about 30 seconds.
- Deglaze pot with white wine and stir until wine has cooked off. Pour in chicken broth and season with salt and pepper. - Fill a medium saucepan with water and bring to a boil over medium-high heat. Add the linguine to the boiling water and reduce the heat slightly to maintain a simmer. Cook until pasta is tender, 5-7 minutes. Drain in a colander and transfer pasta to a bowl. Toss with 1/2 tablespoon of olive oil so the pasta noodles don't stick together. Set aside.
- In a separate small bowl, season the shrimp with salt and pepper. Mix together so that the shrimp are evenly coated. Set aside.
- Heat 1 tablespoon of the olive oil and 1 tablespoon of the butter in a medium sized skillet. When the butter melts, add the garlic and red pepper flakes, if using and cook, stirring occasionally for 30 seconds.
