What's the excitement all about? Do we love shrimp scampi because it's simple but seemingly fancy? Or because it's done in 30 minutes? Or because we just can't resist a buttery wine sauce? All of the above!

Kosher salt
12 ounces linguine
1 1/4 pounds large shrimp, peeled and deveined
1/3 cup extra-virgin olive oil
5 cloves garlic, minced
1/4 to 1/2 teaspoon red pepper flakes
1/3 cup dry white wine
Juice of 1/2 lemon, plus wedges for serving
4 tablespoons unsalted butter, cut into pieces
1/4 cup finely chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
  • Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.

1/4 pound 21 count shrimp, about 6
1 large shallot, minced
2-3 cloves garlic, minced
2 Tablespoons butter
3 Tablespoons cream
Splash of white wine (optional)
1/8 Teaspoon crushed red pepper flakes (optional)
Parmesan cheese (optional)
Salt and pepper
Spaghetti (about the size of a quarter when held together)
1/4 Cup reserved pasta water

Steps:

  • 1) Cook pasta according to package. Reserve some of the cooking water for the sauce later. Drain the pasta and set it aside. 2) Mince garlic and shallots and clean the shrimp if they aren't already cleaned. 3) Add butter to pot over medium heat. Once hot and melted, added shallots and garlic and cook for a minute until soft. 4) Add shrimp along with a splash of white wine, and the crushed red pepper. Cook shrimp about 90 seconds a side until they are just cooked. Try not to overcook them. 5) Add cream to the shrimp and stir. The sauce should reduce nicely. 6) Add pasta back into the pot and stir to combine. Season with salt and pepper. If sauce is too thick, add a bit of reserved pasta water to thin it out. Don't make it too thin though! Serve immediately!

½ cup butter
4 cloves minced garlic
1 pound shrimp, peeled and deveined
1 cup dry white wine
¼ teaspoon ground black pepper
¾ cup grated Parmesan cheese
1 tablespoon chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well.
  • Melt butter in a large saucepan over medium heat. Stir in garlic and shrimp. Cook, stirring constantly, for 3 to 5 minutes.
  • Stir in wine and pepper. Bring to a boil and cook for 30 seconds while stirring constantly.
  • Mix shrimp with drained pasta in a serving bowl. Sprinkle with cheese and parsley. Serve immediately.

Steps:

  • Heat 12-inch skillet over high heat until hot, 2 to 3 minutes.

I came up with this shrimp scampi recipe by trying different things. Over time, it eventually evolved into this. This is a butter-and-garlic lover's delight, and my favorite way to make shrimp. Enjoy.

1 lb raw shrimp, peeled and deveined
3/4 cup white wine
1/4 cup light olive oil
1/2 cup unsalted butter
2 tablespoons blue bonnet margarine
3 tablespoons minced garlic
1/4 teaspoon paprika
1/2 tablespoon parsley flakes
grated parmesan cheese, to top

Steps:

  • Heat wine, olive oil, butter, margarine, and garlic in a large skillet on medium heat until it just starts to boil.
  • Then add paprika and parsley flakes, stir in and immediately add shrimp.
  • Cook for about 4 or 5 minutes or until shrimp turns pink.
  • Don't overcook. Spoon shrimp onto plate with some of the cooking sauce and top liberally with parmesan cheese.
