- Cook 5 sliced garlic cloves in 1/4 cup olive oil in a pot over medium-low heat until sizzling, 1 minute. Add 1 pound chopped kale and stir until wilted, 3 to 5 minutes. Increase the heat to medium. Add 2 tablespoons cider vinegar, 1/2 teaspoon kosher salt and a pinch of red pepper flakes. Cook, stirring, until tender, 5 minutes.

- In a 6-qt. stockpot, bring 1 in. of water to a boil. Add kale; cook, covered, 10-15 minutes or until tender. - Soak kale leaves in a large bowl of water until dirt and sand begin to fall to the bottom, about 2 minutes. Lift kale from the bowl without drying the leaves and immediately remove and discard stems. Chop the kale leaves into 1-inch pieces.
- Heat olive oil in a large skillet over medium heat; cook and stir garlic until sizzling, about 1 minute. Add kale to the skillet and place a cover over the top.
- Cook, stirring occasionally with tongs, until kale is bright green and slightly tender, 5 to 7 minutes.

- Put the greens, with the water that clings to the leaves after washing, in a large pot.
- Add the ¼ cup water and the salt.
- Bring to a boil over moderately high heat and cook, stirring occasionally, until the kale wilts, about 5 minutes.
- If all of the water evaporates, add another ¼ cup or so to the pot.
- Continue cooking, stirring occasionally, until the kale is tender, about 3 minutes.
- Drain.
- In the same pot, heat the oil over moderately high heat. Add the garlic and cook, stirring, for 30 seconds.
- Add the kale and cook, stirring occasionally, for a 5 more minutes.
- Stir in the fresh pepper.
- Serve.
- Note: I use Kale in this recipe, but you can use any kind of winter green you prefer.
- Also, prep. time depends on how well you wash your greens. It takes me a long time because I wash every single green by hand twice. But then most of mine have come out of the garden and are dirty.

- Bring a skillet or pot to a medium heat with oil. Add garlic & sauté until fragrant, about a minute or so.
- Add chopped kale, 1 to 2 Tablespoons of water (depending on the size of the bunch), Better Than Bouillon (if using), and a pinch of salt. Continue cooking the kale, stirring occasionally, until it is wilted and soft. For bright green steamed kale, cook for 2 or 3 minutes. For softer kale that's deeper in color, turn the heat to low & cover with a lid. Cook for about 10 minutes, until all of the liquid cooks off.

- Preheat oven to 350°. First, prep the cream sauce: Peel and quarter 1 medium onion. Smash 4 garlic cloves and unpeel. Place onion and garlic in a medium saucepan. Pour in 2 cups heavy cream and stir in 1 rosemary sprig, 1½ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt, and ½ tsp. freshly ground black pepper. Bring to a simmer over low heat and cook, stirring occasionally, until onion and garlic are very soft, 15–20 minutes.
- While cream cooks, remove ribs from 4 medium bunches of Tuscan kale. Tear leaves into big pieces and wash. It’s okay if some water still clings to the leaves—this will help them wilt later. If you don’t have a bowl big enough to hold all of your greens, pile them on a baking sheet instead.
- When cream is ready, pluck out rosemary sprig and discard. Finely grate zest of ½ lemon into cream and stir in ¼ tsp. crushed red pepper flakes. Transfer to a blender and blend until smooth.
- Heat a large (as large as possible—12" is the goal) ovenproof skillet over medium. Add about one-quarter of greens, cover skillet (use a baking sheet if you don’t have a lid), and cook until wilted, 3–4 minutes. Scoot wilted greens to one side of pan. Add another quarter of greens, cover pan, and cook to wilt, 3–4 minutes. Remove from heat and place skillet on a rimmed baking sheet.
