BBQ SMOKED TURKEY SANDWICH



BBQ Smoked Turkey Sandwich image

1 lemon
2 tablespoons granulated garlic
2 tablespoons ground black pepper
2 tablespoons kosher salt
2 tablespoons sugar
1 tablespoon celery seed
1 gallon water
2 tablespoons kosher salt
2 tablespoons sugar
1 turkey breast (3 to 4 pounds)
1 tomato
1 red onion
1 dill pickle
1 head green leaf lettuce
4 hamburger buns
1/2 cup mayo

Steps:

  • For the lemon pepper: Zest the lemon and allow to dry. Mix with the granulated garlic, pepper, salt, sugar and celery seed.
  • For the brine: Add 4 cups of the water, salt, sugar and half of the lemon pepper to a saucepan. Bring this mixture to boil over high heat, and then add the remaining water.
  • For the turkey breast: When the brine is cool, add the turkey and refrigerate for 3 hours.
  • Sprinkle the turkey with the remaining lemon pepper and place in your backyard smoker for approximately 3 hours at 250 degrees F. Use mesquite wood if available. Oak will work as a substitute (if you don't have a smoker you can use your oven).
  • Slice the tomato, red onion, dill pickle and pull the leaves off the head of green leaf lettuce (don't forget to wash thoroughly).
  • Toast the buns and spread mayo on both sides. Slice the turkey breast thinly and place on the bottom bun. Place leaf lettuce, tomato slices, red onion slices and dill pickle slices (in that order) on the top bun and serve open faced.

2 8- to 10-ounce red onions, cut into 1/3-inch-thick rounds
3 1/2 tablespoons red wine vinegar
6 cups trimmed large arugula leaves (about 4 ounces), divided
3/4 cup mayonnaise
8 1/3-inch-thick slices seeded wheat bread (such as La Brea Bakery) or four ciabatta rolls, cut horizontally in half
12 ounces thinly sliced smoked turkey
3/4 cup coarsely crumbled blue cheese (such as Maytag; about 3 ounces)

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Add onions and sauté until soft and lightly browned, breaking up onion rings, about 8 minutes. Remove from heat; stir in vinegar and season to taste with salt and pepper.
  • Chop enough arugula to measure 1 cup; place in medium bowl. Mix in mayonnaise. Season with salt and pepper. Spread about 11/2 tablespoons arugula mayonnaise over each cut side of bread. Divide turkey slices among 4 bread slices. Top with crumbled blue cheese, dividing equally. Top with red onions, then whole arugula leaves and bread.

Olive oil
1 cup crumbled Maytag blue cheese
3 tablespoons sour cream
1 tablespoon minced fresh thyme
8 5x3x1/2-inch slices multi-grain bread
8 radicchio leaves
3/4 pound sliced smoked turkey
2 tablespoons Dijon mustard

Steps:

  • Prepare barbecue (medium-high heat) or preheat griddle pan over medium-high heat. Brush onion with olive oil. Grill until brown, about 2 minutes per side. Season with salt and pepper; cool.
  • Mix cheese, sour cream, and thyme in small bowl to blend. Season generously with pepper. Spread cheese mixture over 4 bread slices. Top cheese with grilled onions, radicchio, then turkey. Spread mustard on remaining 4 bread slices; place atop turkey. Press sandwiches lightly to compact. Cut sandwiches in half; wrap each tightly in plastic wrap. Refrigerate at least 2 hours and up to 1 day.

3 tablespoons unsalted butter
2 lbs onions, each halved vertically and thinly sliced
3/4 teaspoon kosher salt
fresh ground black pepper, divided
3/4 cup mayonnaise
1/3 cup chopped fresh basil
16 slices rustic country bread, each about 1/2 inch thick (do not use ciabatta or other bread with large air pockets)
extra-virgin olive oil
1 lb thinly sliced smoked turkey
6 ounces coarsely crumbed blue cheese

Steps:

  • In a large, heavy skillet over medium-high heat, melt the butter. Separate the onion slices and add them to the skillet. Cook the onions until they begin to brown, about 10 minutes, stirring often. Reduce the heat to medium and cook until the onions are very tender and caramelized, about 15 minutes more, stirring often. Season with the salt and about 1/4 teaspoon of the pepper. Remove from the heat to cool.
  • Prepare the grill for direct cooking over medium heat (350° to 450°F).
  • In a small bowl combine the mayonnaise, basil and the remaining pinch pepper.
  • Lightly brush one side of each bread slice with oil. Turn all the bread slices over and spread with the mayonnaise mixture, dividing equally. Top eight of the bread slices with equal amounts of turkey, onions and cheese. Cover with the remaining eight bread slices, mayonnaise mixture side down.
  • Brush the cooking grates clean. Grill the sandwiches over direct medium heat, with the lid closed as much as possible, until the cheese melts and the bread is golden, 3 to 5 minutes, turning once. Remove from the grill and serve right away.

1 pound ground turkey
8 ounces fresh mushrooms, finely chopped
1 onion, finely chopped
2 tablespoons soy sauce
½ teaspoon kosher salt
¼ teaspoon black pepper
¼ cup crumbled blue cheese

Steps:

  • Preheat grill for high heat.
  • In a medium bowl, mix together the ground turkey, mushrooms, onion, and soy sauce. Season with kosher salt and pepper. Form into 4 burger patties.
  • Lightly oil the grill grate. Place patties on the prepared grill, and cook for 10 minutes per side, or until well done. Top with blue cheese during the last few minutes.

I used some light products when I made these (light mayo and light whole wheat bread) without anyone being the wiser. We served these with fruit salad and pickels for a no-work dinner. 1 large red onion, cut into 1/2 inch rounds (the original recipe used 2 onions)
1 tablespoon olive oil
3 tablespoons red wine vinegar
3 cups arugula leaves (the original recipe suggests double the amount I used)
3/4 cup mayonnaise (I used 1/2 regular mayo and 1/2 light mayo)
8 slices whole wheat bread (I used light whole wheat bread)
12 ounces smoked turkey, deli sliced
3/4 cup blue cheese, crumbled

Steps:

  • In a large skillet over medium high heat, heat oil and then add in onions, cooking until llight browned, breaking up into rings. (8-10 minutes). Remove from heat and stir in vinegar and salt and pepper. Set aside.
  • Chop enough argula to measure 1 cup and place it in a small bowl. Mix in the mayonnaisse, salt and pepper.
  • To make sandwiches: spread 1 1/2 tablespoons (I used less) of the argual/mayo over the cut sides of 4 slices of bread. Divide the turkey slices among the 4 bread slilces and then top with the blue cheese, red onion slices and argula leaves and the remaining slices of bread.
