CREAMY WALDORF SALAD
This Waldorf salad is different; it has pears in it. This is new to me and the dish is delish. It's more of a dessert than a sandwich spread. These are the salads I love to snack on.

Steps:
- In a large bowl, toss apples and pears with lemon juice. Add celery, cream, mayo, and salt; toss to coat.
- If not serving right away, cover and refrigerate up to 6 hours.
- To serve, gently stir bananas into fruit mixture. Arrange lettuce leaves on a large platter or line a pretty bowl. Spoon salad onto lettuce and sprinkle with nuts.
- If desired, place one lettuce leaf on each individual plate and spoon salad onto lettuce leaf and garnish with nuts.

- Mix all the salad ingredients together.
- Dressing:.
- Put the 1/2 cup chopped apple in a blender along with remaining 1/4 cup walnuts, remaining 2 tablespoons raisins, mustard, lemon juice, vinegar and salt. Purée until well combined and slightly thick, adding water if needed to thin. Pour dressing over kale salad and toss to combin.

- Rinse, chop, and dice all veggies and nuts. Wash and de-stem the Kale into a large bowl, ripping the leaves into bite-sized pieces as you go.
- Firmly massage the Kale with your hands for about 1 minute, until it is soft, tender, and has reduced in volume.
- Next, prepare the Cashew Dressing by adding all of the ingredients into a high speed blender and processing until thick and creamy. (Note: this mixture will be rather thick)
- If you are serving the Salad later, please see notes** Otherwise, add as much of the Cashew Mayo Dressing as you’d like into the bowl with the Kale and massage the two together. I had a little leftover dressing, and saved this in a sealed container in the fridge for up to 5 days.
