1 cup lightly packed fresh parsley leaves ((25g / 0.9oz))
1 cup pitted Kalamata olives, lightly packed ((notes))
1 large clove garlic, peeled
½ cup finely grated parmesan ((35g / 1.2oz))
¼ cup flakes almonds
⅓ cup light extra virgin olive oil

Steps:

  • Place the olives, parsley, garlic, parmesan and almonds into a food processor and blitz until quite fine.
  • With the processor on low, slowly drizzle in the olive oil until all combined.
  • Check the texture and blitz to the smoothness you desire.

2 tablespoons capers
3 anchovy fillets
Juice of one lemon
2 cloves of garlic
1 tablespoon fresh thyme
1 tablespoon fresh oregano
1/2 cup of olive oil
Freshly ground black pepper
1 pint cherry tomatoes
Fresh chervil to garnish

Steps:

  • In a food processor, combine all the ingredients except the cherry tomatoes. Pulse until all ingredients are well combined. Season with freshly ground black pepper. Slice cherry tomatoes in half. Very gently, with a melon baller, scoop out the seeds from each half. Place a teaspoonful of the tapenade in each tomato half. Garnish with chervil.

1 pound gemelli pasta
One 2 1/2-pound rotisserie chicken, meat picked and shredded (about 3 cups)
1 cup red or green Cerignola olives, pitted and roughly chopped
1/2 cup pitted Kalamata olives, roughly chopped
1/2 teaspoon kosher salt
1 cup freshly grated Parmigiano Reggiano
Extra-virgin olive oil, for drizzling

Steps:

  • For the pesto: Place the walnuts, garlic and kale in a food processor. Pulse until coarsely chopped. With the motor running, drizzle in the olive oil to form a smooth sauce. Add the salt, pepper flakes, orange zest, orange juice and Parmesan. Pulse until well blended. Pour the pesto into a large bowl and set aside.
  • For the pasta: Bring a large pot of salted water to a boil. Add the gemelli and cook until al dente, 8 to 10 minutes. Drain the pasta, reserving 1 cup of the pasta water. Add the hot pasta to the bowl with the pesto, and toss well with a rubber spatula to coat. Add the chicken, the Cerignola and Kalamata olives, and the salt and Parmesan. Toss again. Loosen with pasta water as needed. Finish with a drizzle of olive oil if desired.

Spread it on the inside of the bread before you make a grilled cheese (best w/cheddar) or a fresh mozzarella and tomato sandwich. It's also a good dip for baby carrots or just about anything else. I've used leftover tapenade as a sauce on pasta, as well. It's very rich and flavorful. This recipe keeps well and is a favorite at parties.

1 cup pine nuts

1 -2 cup fresh parsley

  • Add garlic to food processor, blend until minced. Add remaining ingredients except olive oil. Blend until smooth, adding olive oil slowly while the blade is running.

1/3 cup olive oil

1 pound farfalle (bow-tie) pasta
1/2 cup halved pitted Kalamata olives or other brine-cured black olives
1/4 cup drained capers
6 ounces feta cheese, crumbled (about 1 1/4 cups)
1/4 cup pine nuts, toasted

Steps:

  • Position rack in center of oven and preheat to 375°F. Combine tomatoes, oil, garlic, vinegar, and crushed red pepper in 13x9x2-inch glass baking dish. Season to taste with salt and pepper. Roast until tomatoes are tender and juicy, stirring occasionally, about 45 minutes. Stir in oregano. (Can be made 2 hours ahead. Let stand at room temperature.)
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain. Return to pot. Add tomato mixture, olives, and capers. Stir over medium heat until heated through, about 2 minutes. Add feta and stir until melted and creamy, about 2 minutes. Divide pasta among 6 plates; sprinkle with pine nuts and serve.

1/4 cup hot chili-flavored olive oil (to taste)
2 -3 tablespoons pesto sauce
2 tablespoons fresh rosemary, minced
1/4 cup sun-dried tomato packed in oil, drained and chopped
1/3 cup kalamata olive, coarsely chopped
1/4 cup parmesan cheese, grated (or more to taste)
garlic salt

Steps:

  • Cook pasta according to directions on package. Be sure to just cook to al dente stage. Drain and return to pot. Place pot on burner but turn off burner.
  • Stir in oil.
  • Stir in remaining ingredients and mix well.
