2/3 cup unsweetened cocoa powder
6 tablespoons boiling water
2 tablespoons Kahlua
8 tablespoons butter, softened
4 cups confectioners' sugar, sifted
1/4 teaspoon ground cinnamon

Steps:

  • Place the cocoa powder in a large mixing bowl and pour in the boiling water and Kahlua.
  • Stir with a wooden spoon or rubber spatula until the cocoa comes together into a soft mass.
  • Add the butter and blend with an electric mixer on low speed until the mixture is soft and well combined, 30 seconds. Stop the machine. Add the confectioners' sugar and cinnamon and beat with the mixer on low speed until the sugar is incorporated, 1 minute. Increase the mixer speed to medium and beat until the frosting lightens and is fluffy, 2 minutes more.

2 tablespoons Kahlua
3 tablespoons instant coffee
1 tablespoon hot water

Steps:

  • In small bowl dissolve instant coffeee in hot water.
  • Beat butter at medium speed in a mixing bowl until creamy.
  • Add gradually powdered sugar, kahlua and hot coffee mixture.
  • You can add more kahlua if you want a stronger coffee flavor frosting.
  • makes frosting for 1 9X13 cake.

Pumpkin Cupcakes With Kahlua Cream Cheese Frosting image

I bake these cupcakes every year for Halloween and they are always a hit. The delicious Kahlua cream cheese frosting is for adults only, so if you are serving children, simply leave out the Kahlua.

1 cup pumpkin puree
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 large egg
1/2 cup brown sugar
1/2 cup white sugar
1/3 cup milk
3 tablespoons vegetable oil
2 tablespoons applesauce
1/2 cup walnuts, chopped
8 ounces cream cheese, room temperature
1/4 cup butter, room temperature
2 tablespoons Kahlua
2 cups confectioners' sugar

Steps:

  • Preheat oven to 400 degrees.
  • In a large bowl, sift together the flour, baking powder, cinnamon, nutmeg and salt.
  • In a separate large bowl, whisk the egg, brown sugar and white sugar together, until smooth. Stir in the milk, vegetable oil, applesauce, pumpkin and walnuts, until just combined. Do not over mix.
  • Fill a cupcake pan with the batter 4/5 full.
  • Bake in the oven for 16 to 20 minutes, or until a toothpick comes out clean. Allow to cool for 5 minutes before removing to a wire rack to cool.
  • While the cupcakes are cooling, make the frosting. In a large bowl, beat the the cream cheese, butter and Kahlua together using an electric mixer. Gradually add in the confectioners' sugar until smooth and creamy.
  • Frost the cupcakes. Serve and enjoy!

It really enhances the chocolate flavor. This must be refrigerated but it won't take up room in the fridge for long!

3 (3 ounce) packets nestle toll house pre-melted unsweetened chocolate (or baking squares, melted)
1 teaspoon vanilla extract
1/8 teaspoon salt
2 tablespoons milk
2 tablespoons Kahlua
1 egg

Steps:

  • With mixer, cream butter with milk, Kahlua, vanilla, chocolate, and salt.
  • Beat in confectioners' sugar a little at a time.
  • Blend in egg (doing this last gives the frosting a nice sheen).
  • Spread on cooled cake and refrigerate.
