KACHMAN'S SOUR CABBAGE ROLLS

This is a traditional Ukrainian recipe passed down generations in our family. It is one of my favorite recipes and is quite easy to assemble. There is nothing like it on this site. It is free of all things considered sweet and none of the fussy tomatoes that are sometimes called for in cabbage rolls. Here is our version. Cut down on prep time by making extra rice with supper the night before!

1 head sour cabbage (can be purchased at the grocery store)
2 cups cooked white rice
2 tablespoons oil
10 slices bacon, diced
1 large onion, chopped
1 tablespoon dried dill
1/2 teaspoon salt
2/3 cup water
1/3 cup oil

Steps:

  • In a small pot heat oil.
  • Add bacon and onion.
  • Cook, stirring over med heat until onions are opaque and bacon is soft.
  • Add dill and salt.
  • Remove from heat and add to cooked rice.
  • Let cool, this is the filling.
  • Remove and separate cabbage leaves from head.
  • Cut out hard core. (each leaf can be made into 3-4 pieces depending on the size of the leaf -- this comes with practice).
  • Grease casserole dish.
  • Place 1 Tbsp of filling on widest end of leaf.
  • Fold sides in and roll up. Filling should not be hanging out.
  • Place in casserole dish creating layers.
  • Combine water and oil and pour over cabbage rolls.
  • Cover with lid or tinfoil.
  • Bake in a 325°F oven 2 - 21/2 hours.
  • You'll have to keep an eye on them to check that they don't dry out or turn brown. If they are turning color add more liquid. And bake till tender.
  • Freezes well before cooking.
  • *I like to place a couple of pieces of raw bacon on the top of the cabbage rolls before cooking. Also I have made 1/2 a head of cabbage into rolls and froze the other 1/2 of head whole, with no problems*.

Stuffed Cabbage Rolls With Sweet and Sour Sauce image

This was adapted from the America's Test Kitchen Family Cookbook. When I read that it included crushed gingersnap cookies and a clove studded onion I just had to try it out. My family was not disappointed in the least. The flavor was worth the extra preparation and ingredients. I served this with an endive and butter lettuce salad topped with blue cheese crumbles and glazed pecans and tossed in a basic red wine vinaigrette for an amazing autumn meal. This is for the adventurous or experienced cook, enjoy!

1 head green cabbage, cored
1/4 cup long-grain white rice
2 onions, grated on the large holes of a box grater
1 1/2 lbs ground beef
pepper
1 (14 1/2 ounce) can diced tomatoes
1 (28 ounce) can tomato puree
2 cups water
6 tablespoons light brown sugar
3 tablespoons fresh lemon juice
1 onion, peeled
8 whole cloves
12 small gingersnaps, pounded into course crumbs
1/2 cup raisins (optional)

Steps:

  • Bring 4 quarts of water and 1 tablespoon of salt to boil in large dutch oven over high heat. Add cored cabbage and cook until outer leaves just begin to wilt, about 3 minutes. Use tongs to gently remove leaves (outer 20) one by one and transfer to a colander to cool. Remove any remaining head of cabbage and let cool. Do not discard water.
  • Return water to boil over high heat. Add rice and cook until tender, about 13 minutes. Drain the rice through a strainer, rinse it to cool, and let drain thoroughly. In a medium bowl, combine cooked rice, onion, beef, 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
  • Trim tough ribs from cabbage leaves and tightly roll 2 tablespoons of the meat mixture into each leaf. Shred the remaining blanched cabbage both the head and any remaining leaves.
  • Scatter half the shredded cabbage leaves in a large dutch oven. Arrange rolls seam side down snugly on top of the shredded cabbage. Sprinkle any remaining shredded cabbage on top of rolls.
  • Combine diced tomatoes w/ juice, tomato puree, water (I use water left over from rice) 3 tablespoons of brown sugar, lemon juice, 1/2 teaspoon of salt and pour liquid over cabbage. Stud peeled onion with cloves and submerge in liquid. Bring mixture to boil, then reduce to simmer, cover and cook for 30 minutes.
  • Discard clove studded onion. Sprinkle crushed cookies and raisins (if using) into the pot and shake to incorporate them without disturbing rolls. Simmer uncovered until sauce begins to thicken, about 1 hour.
  • If you desire more liquid, add 1 cup of beef broth.
  • Transfer rolls to serving dish and add remaining 3 tablespoons of brown sugar to sauce and season with salt pepper to taste. Spoon sauce over rolls and top with sour cream and chopped parsley if desired.

This is our favorite cabbage roll recipe. I often double or triple it to take it to pot lucks. They always go down a treat. People love them.

1 lb ground beef
1/4 cup raw long grain rice
1 egg, beaten
1 onion, grated
1 carrot, grated
1 teaspoon salt
fresh ground pepper
6 slices bacon, minced
12 wilted cabbage leaves, thick veins trimmed to thin
1/2 cup brown sugar
1/4 cup lemon juice
1 cup tomato sauce

Steps:

  • Mix together meat, rice, egg, onion, carrot, salt, pepper and bacon.
  • Spoon mixture into the center of each of the 12 cabbage leaves.
  • Roll up, tucking in sides to completely enfold meat.
  • Place folded side down in a greased baking dish.
  • Mix together brown sugar, lemon juice and tomato sauce.
  • Pour over rolls, cover tightly and bake at 375°F for 1 hour.
  • Uncover and bake 20 minutes longer.

I'm revising the introduction to this recipe based on a discussion with 8 Polish "senior" ladies at the General Sikorski Hall in Oshawa, Ontario who were making cabbage rolls for a weekend banquet. Their advice: Use small, new cabbages as they will be more tender, easier to roll & cook better. Purchase your cabbage in advance, boil it for about 5 minutes, put into the freezer, core and boil again just before you follow this recipe. I use any leftover cabbage in my recipe #50951 for "Polish Cabbage Casserole"!

1 medium cabbage
1 lb ground beef
2 teaspoons chopped onions
1 teaspoon salt
1 beaten egg
1/2 cup milk
1/2 cup cooked rice
1 (14 ounce) can tomatoes
1 (14 ounce) can V8 vegetable juice
1 tablespoon Worcestershire sauce

Steps:

  • Prepare the cabbage according to the recipe description.
  • Combine ingredients for filling.
  • Place some of this mixture (about 1 1/2 tbsps) on each cabbage leaf & fold "envelope" fashion. If the leaf is tough, it will be easier to do this if you make a V shaped incision & remove a part of the coarser spine.
  • You may find it easier to roll the cabbage around the filling and just "tuck" the ends into the roll with your fingers - whatever works best for you!
  • Lay flap side down in a heavy Dutch oven.
  • Combine sauce ingredients - use tomato juice if you don't like V8 - or you may add 1 cup of chicken broth to lessen the tomato flavour; pour over cabbage rolls.
  • Bake at 350 degrees F for about an hour. Serve with a dollop of sour cream.

1 ½ cups uncooked white rice
2 tablespoons butter
1 onion, chopped

1 (46 fluid ounce) can tomato juice

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart casserole dish.
  • Steam the whole head of cabbage until it is al dente. Meanwhile, in a saucepan bring 3 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • Melt butter in a small skillet over medium heat. Saute onion until translucent; stir into cooked rice. Season with salt and pepper to taste.
  • Cut the leaves off of the cabbage and cut the larger leaves in half. Spoon 1 tablespoon of rice into a leaf and roll tightly. Place rolls in prepared casserole dish, stacking in layers. Pour tomato juice over the rolls, using enough just to cover.
  • Cover and bake in preheated oven for 2 hours.

This recipe is so easy and people just love these cabbage rolls. Much of the flavor comes from the sauerkraut and tomato juice, so there is little else to it. I have substituted lean ground beef for half of the ground pork with much success.

Steps:

  • Combine pork, rice, onions, pepper, garlic powder, salt and paprika in large bowl.
  • Steam heads of cabbage until leaves remove easily (about 5 minutes each in microwave along with 1/2 cup water, covered with plastic wrap works well) Take handfuls of meat mixture and roll up in cabbage leaves.
  • Place rolls in roasting pan.
  • After covering the bottom of the pan, top with half of the sauerkraut and half of the tomatoes.
  • Repeat with second layer.
  • Pour tomato juice over top.
  • Cover and bake 2 1/2 hours at 350 degrees.

2 cups uncooked long-grain rice
4 cups water
2 large heads savoy cabbage
1 cup water
2 onions, chopped
3 tablespoons butter
¾ cup uncooked long-grain rice
1 pound extra-lean ground beef
½ pound pork sausage
4 cloves garlic, minced
2 teaspoons dried dill weed
¾ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon white sugar
1 (26 ounce) can condensed tomato soup
1 (28 ounce) can whole peeled tomatoes, with liquid
8 bay leaves

Steps:

  • Wash rice thoroughly. In a medium saucepan, combine 2 cups rice and 4 cups water. Bring to boil; reduce heat, cover and simmer for 20 minutes or until all of the water is absorbed.
  • In the meantime, remove the core from the cabbages using a thin, long knife. Place 1 cabbage in a microwave proof container with a lid with core side down. Pour 1/2 cup water into the container with the cabbage, cover and microwave on HIGH (full power) for 10 minutes. Carefully turn cabbage over and cook covered for an additional 10 minutes. When cabbage is cooked, let sit until it is cool enough to handle. Separate leaves carefully, removing any tough ribs. Cook the second cabbage in the same manner.
  • Divide chopped onions in half. Saute one half of the onions in 3 tablespoons butter; cook just until translucent (do not brown). In a large mixing bowl, mix together both the cooked and uncooked rice, cooked and uncooked onions, ground beef, pork sausage, garlic, dill weed, salt, black pepper and sugar and mix well to blend.
  • Spoon about 2 tablespoons of mixture onto each cabbage leaf. Bring one end of cabbage leaf over mixture, roll and tuck ends in to prevent any filling from falling out.
  • Preheat oven to 350 degrees F (175 degrees C). Prepare two 9x13 inch casserole dishes by placing some left over cabbage leaves in bottom of each. Arrange cabbage rolls in a single layer tight against each other.
  • In a food processor or blender, process condensed tomato soup and tomatoes. Pour tomato mixture over the cabbage rolls until just covered. Place 4 bay leaves on top of sauce in each dish. Cover each dish tightly with aluminum foil.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 2 hours. Once cooked, remove the dishes from the oven and let cool for 15 minutes before removing aluminum foil. Serve hot.

I made up this recipe after having a craving for cabbage rolls but no time to make them. This is a healthy, hearty recipe. So simple to make and can be adjusted to your liking. You can easily double the recipe and freeze leftovers in portions. Serve piping hot with crusty bread or garlic toast.

3 cups water
1 pound ground beef
2 cups water
1 (20 ounce) jar pasta sauce (such as Ragu®)
1 (10 ounce) can tomato soup
3 ½ pounds cabbage, cut into bite-size pieces
1 onion, chopped
salt and ground black pepper to taste
1 dash hot pepper sauce

Steps:

  • Bring converted rice and 3 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Heat a large soup pot over medium-high heat. Cook and stir beef in the hot pan until browned and crumbly, 5 to 7 minutes; drain and discard grease.

1 small green bell pepper
1/4 cup shredded Parmesan
2 pounds ground beef (80/20)
1 pound ground pork
Kosher salt
1 large head green cabbage
10 strips applewood bacon
1 medium yellow onion
8 ounces ground breakfast sausage
1/2 cup white rice
1/4 cup ketchup
1 tablespoon chopped garlic
1 tablespoon black pepper
1 tablespoon seasoning sauce, such as Kitchen Bouquet
1 large egg
Clarified parsley butter, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a gallon of salted water to a rapid boil in a stockpot. Remove the core of the cabbage head by cutting about a 3-inch deep cone only around the thick stem, keeping most of the head solidly intact. Place the cabbage de-cored-side down into the boiling water. Place a plate or a smaller pot on top of the cabbage head to keep it from floating. Boil until tender, soft to the touch and bright green, 15 to 20 minutes. Place in an ice water bath to stop the cooking process. Remove the damaged first couple of outside leaves and save for the bottom the pan. Then carefully remove the rest of the cabbage leaves until the head is smaller than a baseball.
  • Cook the bacon, saving the drippings. Place the cooked bacon into a food processor and puree. Then place into a large mixing bowl. Puree the onion and green pepper and place into the mixing bowl. Then do the same with the Parmesan. Then add the ground meats, rice, ketchup, garlic, 1 tablespoon salt, pepper, seasoning sauce and egg to the mixing bowl. Mix well. Scoop or ball into 4-ounce portions. Place the damaged outside leaves and the too-small center leaves on the bottom of a baking pan. Place a blanched cabbage leaf into one hand like a cup. Then place the ball of meat mixture in the center, pull the hard spine over the top and almost tuck into the meat, then fold the rest of the leaf around the ball.
  • Place in the baking pan with the folded sides down. Repeat. Place them nice and tight next to one another. Add about 1/2 cup water to the pan to help steam the cabbage rolls. Cover tightly with foil. Cook for 1 hour and 15 minutes. Drizzle with clarified parsley butter and serve.

SARMA (STUFFED CABBAGE)

For this satisfying dish, cabbage leaves are stuffed with a seasoned mixture of rice, ground beef, pork and ham. They are then laid on a bed of sauerkraut and simmered to completion. This is the best stuffed cabbage recipe I've ever tried.

Steps:

  • Place cabbage in the freezer for a few days. The night before making the rolls, take it out to thaw.
  • In a large bowl, combine the beef, pork, ham, rice, onion, egg, garlic powder, salt and pepper. Mix well. Form meat mixture into oblong balls, using 1/2 cup of the mixture at a time. Then, wrap a cabbage leaf around each ball.
  • Spread the sauerkraut in the bottom of a large pot, then layer cabbage rolls on top, placing them seam-side down. Pour tomato juice over rolls, then add enough water to cover. Bring to a boil, then reduce heat to low and simmer for about 3 hours, adding more water as necessary.

Sweet & Sour Cabbage Rolls image

After combing through dozens of cabbage roll recipes on Zaar, this is the only one I could find that has a sauce quite like this one. The secret ingredients are bottled chili sauce and grape jelly. There is also no rice and no brown sugar in this recipe and there are no tomatoes except for ketchup. Adapted from "Best of the Best of Georgia." Recipe may be halved. This makes 28 cabbage rolls, great for a potluck.

3 lbs lean ground beef
2 teaspoons salt, to taste
3/4 teaspoon black pepper
2 teaspoons celery salt, to taste
1/2 cup ketchup
2 large eggs
1/2 cup crushed unsalted cracker (measure after crushing)
2 heads green cabbage
6 quarts boiling water
3 cups onions, chopped
2 cups bottled mild chili sauce (such as Heinz)
1 (12 ounce) jar grape jelly

Steps:

  • Core the cabbages and place into large pot; pour boiling water over the cabbage and let stand until the leaves start to get soft enough to bend and can be easily pulled from th heads (5 minutes or so); you may need to pull off some of the outer leaves, then return the cabbage head to the pot to soften the middle ones; drain leaves well in a colander.
  • This leaf peeling process takes some time, but you want to get enough intact leaves to make 28 cabbage rolls.
  • Preheat oven to 350°F.
  • Combine meat with seasonings, ketchup, eggs, and crushed crackers, mixing by hand just until combined- don't overwork.
  • Using a 1/4 cup measure, scoop up a scant 1/4 cupful of the meat mixture, then use hands to form the meat into an oblong shape- about 3" long; make 28 oblong meat shapes.
  • Place a meat shape onto one of the cabbage leaves, folding the top of the leaf over the meat snugly, then folding in one side, then rolling forward a bit, then the other side, and rolling all the way up.
  • Repeat until you have 28 filled cabbage leaves.
  • Place chopped onion into the bottom of a very large roasting pan (12"x11" size).
  • Place cabbage rolls neatly on top of the onions in rows.
  • Combine chili sauce and jelly with 1/4 cup water in a small pan over medium heat, stirring until jelly melts.
  • Pour over cabbage rolls.
  • Cover pan tightly with foil and bake for 2 hours.
  • Remove foil, baste rolls with sauce, and then return to the oven uncovered for 40 minutes more- or until sauce has thickened and rolls are glazed.
  • Ladle sauce over rolls to serve.
