BEST-EVER BROWNIES FROM BAKING WITH JULIA CHILD

Best-Ever Brownies from Baking With Julia Child image

"Those who are passionate about brownies argue in defense of their favorite type, cakey or fudgey. If you're a cakey fan, go on to another recipe. These are the epitome of soft, dark baked-just-until-barely-set brownies. Their creamy texture makes them seem wildly luxurious and very much a treat to be meted out in small servings (just small enough for a scoop of ice cream and some chocolate sauce). The mixing method is unorthodox for a brownie. Half of an egg-sugar mixture is stirred into the melted chocolate and butter, while the other half is whipped until it thickens and doubles in volume. The lightened eggs are folded into the chocolate with a delicate touch, as are the dry ingredients--tricks that enhance the brownies' lovely texture."

Time 37m

Yield 18 serving(s)

Number Of Ingredients 8

1 1/4 cups sifted all-purpose flour
1 teaspoon salt
8 ounces unsalted butter
4 ounces unsweetened chocolate, coarsely chopped
2 ounces bittersweet chocolate, coarsely chopped
2 cups sugar
1 teaspoon pure vanilla extract
4 large eggs, room temperature

Steps:

  • Center a rack in the oven and preheat the oven to 350°. I bake them at a lower oven temp of 330°.
  • Sift the flour and salt together; set aside.
  • Melt the butter and chocolate together in a medium saucepan over low heat, stirring frequently and keeping a watchful eye on the pot to make certain the chocolate doesn't scorch (Alternatively, you can melt the ingredients in the top of a double boiler over, not touching, simmering water.) Add 1 cup of the sugar to the mixture and stir for half a minute, then remove the pan from the heat and stir in the vanilla.
  • Pour the mixture into a large bowl.
  • Put the remaining 1 cup sugar and the eggs into a bowl and mix or whisk by hand just to combine.
  • Little by little, pour half of the sugar and eggs into the chocolate mixture, stirring gently but constantly with a rubber spatula so that the eggs don't set from the heat.
  • Fit the whisk attachment to the mixer and whip the remaining sugar and eggs until they are thick, pale, and doubled in volume, about 3 minutes.
  • Using the rubber spatula, delicately fold the whipped eggs into the chocolate mixture.
  • When the eggs are almost completely incorporated, gently fold in the dry ingredients.
  • Pour and scrape the batter in to an unbuttered 9-inch square pan.
  • Bake the brownies for 22-26 minutes, during which time they will rise a little and the top will turn dark and dry.
  • Cut into the center at about the 22-minute mark to see how the brownies are progressing: they'll be perfect if they're just barely set and still pretty gooey.
  • They're still awfully good on the other side of set, so don't worry if you miss the moment on your first try.
  • Cool the brownies in the pan on a rack.

THREE-LAYER BROWNIES

Three-layer Brownies image

One of the few recipes I make using mixes and cans, this is a fantastic dessert. It tastes amazing, looks great, and is amazingly easy. And it disappears almost as quickly as I put it down. I got the recipe from a neighbor after 6 months of begging (and 2 weeks of cat, dog and rabbit sitting). She almost never gave it out because it was her most requested recipe and everyone always thought she worked for hours. Don't substitute regular or fudge for the dark chocolate brownie mix. It makes a difference in the final flavors. And make it the night before so the texture and flavors have time to set.

Yield 18 serving(s)

Number Of Ingredients 6

1 (19 1/2 ounce) box dark chocolate brownie mix
2 eggs
1/3 cup water
1/2 cup oil
1 (10 ounce) package peanut butter chips
1 (16 ounce) can prepared cream cheese frosting (You can use your favorite homemade if you prefer)

Steps:

  • Prepare the dark chocolate brownie mix as directed on the package.
  • When they are just done, remove from the oven, sprinkle with the peanut butter chips, cover with a cookie sheet and let sit for 5 minutes; remove cookie sheet and spread melted peanut butter chips over the brownies.
  • Let cool until the peanut butter chips are firm enough to not get messed up when you frost them (put them in the refrigerator for a little while if necessary).
  • When cool, frost with the cream cheese frosting and let sit at room temperature, uncovered, overnight so the flavors blend and the top of the frosting dries to a bit of a crust.
  • Serve at room temperature.
  • This is so good!
  • *NOTE:These ingredients are to be used to prepare the dark chocolate brownie mix; if your mix calls for different amounts, use the package directions.

3/4 cup sweet potato puree
1 cup almond butter
1 teaspoon pure vanilla extract
1/4 cup almond flour (Oat, white, or spelt flour all work)
2 tablespoons almond flour (in addition to above, Oat, white, or spelt flour all work)
1/2 cup mini chocolate chip
2/3 cup sugar (xylitol )
1/4 cup cocoa powder
2 tablespoons cocoa powder (in addition to above)
1 1/2 teaspoons baking soda
1/8 teaspoon salt

Steps:

  • Preheat oven to 325°F.
  • Line an 8-inch pan with parchment paper or grease well.
  • Gently heat your nut butter until easily stir-able.
  • Whisk it together with the sweet potato and vanilla extract in a large bowl.
  • In a separate bowl, stir together all remaining ingredients - make sure that baking soda is evenly incorporated!
  • Pour dry into wet (not the other way around), and smooth into the prepared pan, scooping out all traces of batter and using a second sheet of parchment to really smooth it down evenly.
  • Bake on the center oven rack 20 minutes. It will look a little underdone, but it firms up as it cools.
  • Put in the freezer and eat frozen for best texture.

DEATH BY CHOCOLATE 3 LAYER BROWNIES

Death by Chocolate 3 Layer Brownies image

Whoa... this is a chocolate lover's dream dessert recipe! The base is a tender, gooey brownie full of extra chocolate. The center layer has a creamy, almost mousse-like, texture. Then, they're topped with a fudgy chocolate ganache that sends these over the top. Have a glass of milk handy to wash 'em down. They're rich and...

1 c heavy whipping cream

  • 2. Mix brownie according to package directions. Then fold in mini chocolate chips.
  • 3. Bake according to package directions. Once baked cool completely.
  • 4. Middle Layer: In mixing bowl combine butter, powdered sugar, heavy cream, pudding mix, and cocoa powder. Beat with whip beater till light and creamy.
  • 5. Spread evenly on the cooled brownie and place in fridge while you make the top layer.
  • 6. Top Ganache Layer: Place chocolate chips in a glass bowl and set aside.
  • 7. In a small saucepan bring heavy cream to a boil. Pour cream over the chocolate chips.
  • 8. Cover the bowl and let sit for 10 minutes.
  • 9. Then using a wire whisk, whip together the chocolate and cream till smooth and creamy, it will have a satiny looking finish. Whisk in vanilla extract.
  • 10. Then pour over the top of the brownie spread to smooth. Return the brownies to the fridge and chill at least 2 hours before cutting and serving.
  • 11. Cut brownies into 1 1/2" x 1 1/2" square pieces and serve. They are quite rich so smaller pieces are better. Store in an airtight container in the fridge. Remove from the fridge at least a half-hour before serving. Break out the coffee and enjoy them together!

LAYERED BROWNIES

Layered Brownies image

My take on the layered brownies TikTok trend, using OREO® and Biscoff® cookie layers between layers of my classic brownie recipe batter. My family was begging for more after this was done!

Provided by fabeveryday

Categories     Chocolate Brownies

Time 1h25m

Yield 12

Number Of Ingredients 10

1 ½ cups white sugar
¾ cup all-purpose flour
½ cup unsweetened cocoa powder
½ teaspoon salt
¼ teaspoon baking powder
¾ cup unsalted butter, melted
3 large eggs
1 teaspoon vanilla extract
½ (14 ounce) package chocolate sandwich cookies (such as Oreo®)
½ (8.8 ounce) package speculoos cookies (such as Lotus Biscoff®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.
  • Mix sugar, flour, cocoa powder, salt, and baking powder together in a mixing bowl.
  • Whisk butter, eggs, and vanilla together in a separate bowl. Add butter mixture to the flour mixture and mix until well combined.
  • Pour 1/3 of the batter into the prepared baking pan and smooth out with a spatula. Add OREO® cookies in an even layer, then spread another 1/3 of the batter over top. Add Biscoff® cookies in an even layer, then spread remaining batter over top. (The Biscoff® layer should be two rows of 5 cookies, plus a row of 2 1/2 cookies turned sideways.)
  • Bake in the preheated oven until edges are brown and center is set, 30 to 35 minutes.
  • Remove pan from the oven and let brownies cool completely before slicing and serving, about 30 minutes.
