I'm a "transplant" from Wisconsin currently living in Texas. Even after 20 years, I can't get enough of our wonderful local citrus. This is one way to work it into a main dish. The combination of tangy fruit, spicy jalapeno and distinctive cilantro is perfect over any meat, poultry or fish. We also dip into it with chips. -Lois Kildahl, McAllen, Texas

1 medium green pepper, chopped
1 medium sweet red pepper, chopped
1 medium sweet yellow pepper, chopped
1 medium tomato, seeded and chopped
1 jalapeno pepper, seeded and chopped
3 tablespoons chopped red onion
1 tablespoon minced fresh cilantro
1-1/2 teaspoons sugar
1/2 teaspoon salt
1 medium red grapefruit
1 large navel orange

Steps:

  • In a large bowl, combine first nine ingredients., Cut a thin slice off top and bottom of grapefruit and orange; stand upright on a cutting board. With a knife, cut off peel and outer membrane of fruit. Cut along the membrane of each segment to remove fruit; add to pepper mixture., Stir gently to combine. Refrigerate, covered, at least 2 hours.

3 tablespoons chopped fresh chives
½ bunch fresh cilantro
2 cloves garlic, chopped
2 (14 ounce) cans stewed tomatoes
2 serrano chilis, seeded and chopped
salt and pepper to taste

Steps:

  • Combine chives, cilantro, garlic, tomatoes, peppers, salt and pepper to taste in an electric blender. Pulse until the salsa is to your desired consistency.

1 can diced tomato
1 small onion
1 hot jalapeno pepper
2 teaspoons tomato sauce
2 teaspoons garlic salt
1 teaspoon black pepper
1/2 teaspoon cumin
1/2 teaspoon chili powder

Steps:

  • Chop jalapeno and onion in food processor until chopped but not pureed.
  • Add diced tomatoes, garlic salt, black pepper, cumin, and chili powder and blend for a few seconds more.
  • I like a lot of garlic so you might want to add more for your taste.
  • Serve with tortilla chips or on baked potatoes for a low fat alternative to butter.

8 cups tomatoes, chopped
6 yellow jalapenos, chopped
5 Hungarian wax peppers, chopped and seeded
4 fresh peaches - peeled, pitted, and chopped
⅓ large white onion, chopped
3 cups white vinegar
6 tablespoons chopped fresh oregano leaves
4 tablespoons chopped fresh cilantro leaves
4 tablespoons ground cumin
2 tablespoons white sugar
1 ½ teaspoons salt

Steps:

  • Bring a large pot of water to boil. Place tomatoes in the boiling water and boil for 5 minutes. Transfer tomatoes to a pot of cold water. Drain, peel, core, and chop cooled tomatoes.
  • Combine tomatoes with their juices, jalapenos, wax peppers, peaches, onion, vinegar, oregano, cilantro, cumin, sugar, and salt in a large pot. Bring to a rolling boil; reduce heat and let simmer for 20 minutes, breaking up some of the tomato chunks to create more juice using an immersion blender halfway through cooking time.
  • Meanwhile, inspect 7 pint-sized jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until salsa is ready. Wash new, unused lids and rings in warm soapy water.
  • Pack salsa into hot, sterilized jars, filling to within 1/2 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 35 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

1/2 an apple, peeled and cored
1 orange, zest of
1/2 chopped serrano peppers (about a half a chili, but taste for desired heat) or 1/2 jalapeno (about a half a chili, but taste for desired heat)
4 tablespoons sugar
2 tablespoons chopped fresh cilantro
1 dash limes or 1 dash lemon juice
1 dash salt

Steps:

  • Combine cranberries and apple in a food processor and pulse until coarsely shredded, about 10 short pulses.
  • Combine shredded cranberries, orange zest, chile, and sugar in a medium bowl.
  • Let sit 15 minutes for the cranberries to macerate.
  • Add cilantro, lime juice, and salt to taste.

6 roma tomatoes
7 fresh jalapenos
1 poblano pepper
4 fresh garlic cloves, minced

1 (14 ounce) can whole canned tomatoes
1 tablespoon salt
1 teaspoon black pepper
juice of1 to 2 lime (use 1 add more if necessary)
1 small white onion
1 teaspoon cumin

Steps:

  • Boil romas until the skins start to pop, or are easily removed.
  • Chop onion, jalapeños, set aside.
  • Roast poblano on grill or burner ( for a hint of smokiness).
  • In a large blender add canned tomatoes first then all other ingredients.
  • Pulse blend to desired consistency.

My husband and I lived on a small island in the Azores for two years. Fresh foods were hard to come by at times, so our group of friends all found many recipes using canned foods. This recipe is from a friend named Bobbie and I still make it today, even though I can now find a multitude of fresh ingredients. This is also good when used as a topping for hamburgers. If you want to make it spicier, you can add chopped jalapenos or hot sauce to taste. Cook time is chilling time.

2 (15 ounce) cans diced tomatoes
1 onion
2 (4 ounce) cans chopped green chilies
1 (4 ounce) can chopped black olives
1 teaspoon vinegar
2 teaspoons garlic salt
4 tablespoons olive oil (I use extra virgin olive oil)
salt and pepper
tortilla chips

Steps:

  • Drain tomatoes well, reserving juice.
  • Put peeled and quartered onion in a blender, then top with remaining ingredients.
  • Pulse blender until ingredients are chopped as finely as you wish.
  • By putting onion in the blender first, it will chop more finely than remaining ingredients.
  • If salsa seems too thick, you can thin it by adding some of the reserved tomato juice.
  • This can be eaten immediately, but tastes best if allowed to chill for 2 hours.
