LEMON POUND CAKE
According to my dad, every Southern woman knows how to make a good pound cake. My version is based on my grandmother's recipe. She always added lemon, and I've followed suit with loads of bright, tart lemon in both the batter and glaze. To get the cake out of the pan, I'm sharing a trick that guarantees your loaf won't stick or break-equal parts softened butter and flour get mixed together and generously brushed in every nook and cranny before filling.

- For the cake: To prepare the pan, mix 2 tablespoons softened butter and 2 tablespoons flour (equal parts of each) in a small bowl until combined. Use a pastry brush to generously coat the inside of a 10-cup Bundt pan or two 9-by-5-inch loaf pans and set aside. (Alternatively, spray with nonstick baking spray with flour.) Place a rack in the middle of the oven and preheat to 325 degrees F if using a bundt pan or 350 degrees F if using loaf pans.
- In a stand mixer fitted with the paddle attachment, beat the remaining 1 cup softened butter and the cream cheese on medium-low speed until smooth, creamy and well combined, about 1 minute. Beat in the vanilla and salt.
- With the mixer running, pour the sugar into the bowl in a steady stream. The batter will start to take shape. Increase the speed to medium and mix until the batter becomes pale, fluffy and has lightened in color, 4 to 5 minutes.
- Add the eggs two at a time, mixing until they are completely incorporated before adding the next, about 1 minute for each addition. Add the lemon zest and lemon juice and mix until just combined.
- Stop the mixer and use a rubber spatula to scrape the bottom and sides of the bowl. If the batter appears broken from the addition of the final 2 eggs, don't worry-it will come together in the next step.
- With the mixer off, add the flour all at once. Mix on low speed just until no streaks of
- flour remain. Scrape the sides and bottom of the bowl and mix in any bits of flour that were
- not fully incorporated. Scrape the batter into the prepared pan or pans and smooth the top.
- Bake until a cake tester inserted deep into the center of the bundt cake or loaves comes out clean, about 1 hour 20 minutes for a bundt and 50 to 60 minutes for loaves.
- Cool on a wire rack for 10 minutes. Use a small angled spatula or butter knife to loosen the cakes from the pans by running it around the loaves or around the inside and outside perimeters if you baked a bundt. Invert the cakes onto the rack and cool to room temperature.
- For the lemon glaze: Whisk together the lemon zest, lemon juice and confectioners' sugar in a small bowl. If necessary, add a little milk until the glaze reaches a pourable consistency. If it is too thin, add more confectioners' sugar. Set aside.
- Once the cake has cooled completely, drizzle the glaze all over and allow to drip down the sides.

- Butter and flour a round 8-inch cake pan. Set 4 ounces of semi-sweet chocolate and 2 tbsp. rum or coffee in a small pan, cover, and place in a larger pan of almost simmering water; let melt while you proceed with the recipe.
- In a mixing bowl, with a wooden spoon or electric beater, cream 1 soft stick butter and 2/3 cup granulated sugar together for several minutes until they form a pale yellow, fluffy mixture.
- Beat 3 egg whites and a pinch of salt in a separate bowl until soft peaks are formed; sprinkle on 1 tbsp. granulated sugar and beat until stiff peaks are formed.
- With a rubber spatula, blend the melted chocolate into the butter and sugar mixture, then stir in 1/3 cup pulverized almonds, and 1/4 tsp. almond extract.
- Turn the batter into the cake pan, pushing the batter up to its rim with a rubber spatula. Bake in middle level of preheated oven for about 25 minutes.
- Allow cake to cool in the pan for 10 minutes. Run a knife around the edge of the pan, and reverse cake onto a cake rack. Allow it to cool for an hour or two.

- Preheat your oven to 350ºF and butter a 22 centimeter ceramic pie plate with the room temperature butter.
- In a large bowl, whisk together the eggs, sugar, and salt. While whisking, slowly pour in the milk followed by the vanilla extract, melted butter, and finally the flour. Whisk the batter well so that no lumps remain then pour it into the prepared pie dish. Gently scatter the cherries over top of the batter. If you want to be a little extra fancy and more Julia-esque, dot the cherries over the batter so that they are all cut side up. Some will sink but that’s ok.
- Gently transfer the clafoutis to the oven and bake for 35 to 40 minutes or until the edges are puffed and the middle is almost set. Allow the clafoutis to cool slightly or all the way to room temperature, dust it with icing sugar, and slice into wedges for serving.
- Note: The texture of a clafouti is like the perfect balance between a thick crepe, flan, crème caramel, and almost a pound cake. Really, it’s like nothing else and that is such a good thing!

- Preheat your oven to 350¼F and lightly grease or butter a 22 centimeter springform pan, line the bottom with a round of parchment paper, and dust the sides of the pan with flour, tapping out any excess.
- In a large glass or metal bowl or the bowl of your stand mixer, whip the egg whites and salt together until soft peaks form. With the mixer running, gently sprinkle in one tablespoon of sugar and continue to whip until stiff peaks form. Transfer the whipped egg whites to a separate bowl and set aside.

In a small bowl, combine the espresso powder, rum, and almond extract then, with the machine running, drizzle it into the chocolate and butter mixture. Beat well to combine.

- Remove the container from the bread machine. Pour 1/2 cup of the milk into a small saucepan and add the butter. Swirl the pan over moderate heat only until the butter has almost melted. Remove from the heat and cool the liquid by pouring in the remaining 1 cup of milk. If you are using the starter, stir 1/2 cup of it into the liquid; it will not break up completely. Pour the liquid (with or without the starter) into the container and, without stirring, add the salt, sugar and flour. Then make an indentation the size of a soupspoon in the flour and add the yeast. Replace the container securely and set the machine at least 1 foot from the edge of the counter. (Machines can walk when then kneading is vigorous—Julia Child's did.) - Remove the dough from the container and give it a vigorous 1 minute of kneading on a lightly floured work surface. You should have a smooth, supple dough. Return the dough to the machine for its second rise. In 1 to 1 1/2 hours, it should have risen to the top of the container again; a slight overrise will not hurt it.
- Transfer the risen dough to your lightly floured work surface. With lightly floured hands, firmly press and pat the dough into a 10-inch rectangle with the ends to your left and right. With the side of your hand, firmly press a lengthwise trench along the center of the dough and fold it in half, bringing the top long edge down to meet the bottom. Press firmly to seal the edges. Rotate the dough, seal side up and repeat the process. Transfer the dough, seal side down, to the prepared pan.
- Drape a lightly floured towel over the pan. Let the dough rise at 72° to 75° until the pan is four-fifths filled; this should take no more than an hour. Meanwhile, preheat your oven to 425° and set a rack in the lower third of it.
