SHEET PAN PECAN PIE
Layers of toasted pecans, a rich gooey filling, and a flaky, buttery pastry crust make this Easy Pecan Pie a heavenly dessert. Made with either a homemade crust or a store-bought one, this is a pie that you're going to love.

Steps:
- Preheat the oven to 350°F. Line a 9x13 pan with parchment paper. Roll out the pie crust to fit the pan and crimp the edges. Place the crust in the freezer while preparing the filling.
- Combine the eggs, corn syrup, brown sugar, butter, and vanilla in a mixing bowl. Whisk to combine. Stir in the pecans.
- Take the crust out of the freezer and pour filling into the crust. Transfer to the oven and bake for 45-50 minutes, until the center is set and the crust is golden.
- Cool completely before cutting into squares. Enjoy!

JUDY'S PECAN PIE
This is the best pecan pie I've ever tasted.

Steps:
- 1. Mix sugar, syrup, butter and salt. Then add beaten eggs, vanilla and pecans.
- 2. Place in a preheated 400 degree oven for 10 mins.
- 3. Then reduce heat to 350 degrees for 35-45 mins until the middle doesn't jiggle a lot.

- Beat eggs lightly with an electric mixer or fork until combined.
- Stir in corn syrup, sugar, butter and vanilla extract.
- Stir well.
- Stir in pecan halves and pour filling into crust.
- Bake in a 350 degree preheated oven, for 45 minutes or until knife comes out clean.
- Tip: Cover edge of pie crust with aluminun foil for first 25 minutes of bake time, then remove for remaining 20 minutes, to prevent the crust from burning.

JUDY'S CHOC. PECAN PIE
Steps:
- Place pecan halves in unbaked pastry shell; set aside. Combine semisweet chocolate and butter in a medium, saucepan; cook over low heat until chocolate and butter melt, stirring until mixture is smooth. Remove from heat. Add corn syrup, sugar, vanilla, salt, and beaten eggs to chocolate mixture, mixing well. Pour mixture over pecans in pastry shell. Bake at 350℉ (180℃) for 1 hour or until knife inserted 1 inch from edge comes out clean. Serve pie warm, or let cool

OLD-FASHIONED PECAN PIE
It's impossible to go wrong with pecan pie. Especially one that is really loaded with nuts, has a little verve from orange zest, and isn't overly sweet-exactly like the one here. Taking the time to track down new-crop pecans will push things right over the top.

- Preheat oven to 350°F with a baking sheet on middle rack.
- Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12-inch round and fit into a 9-inch pie plate. Trim edge, leaving a 1/2-inch overhang. Fold overhang under and lightly press against rim of pie plate, then crimp decoratively. Lightly prick bottom all over with a fork. Chill until firm, at least 30 minutes (or freeze 10 minutes).
- Meanwhile, melt butter in a small heavy saucepan over medium heat. Add brown sugar, whisking until smooth. Remove from heat and whisk in corn syrup, vanilla, zest, and salt. Lightly beat eggs in a medium bowl, then whisk in corn syrup mixture.
- Put pecans in pie shell and pour corn syrup mixture evenly over them. Bake on hot baking sheet until filling is set, 50 minutes to 1 hour. Cool completely.

- Preheat oven to 350°F.
- For cookies: Beat butter and sugar on medium speed of an electric mixer until creamy. Add egg and vanilla and mix. Reduce speed to low and add flour and baking powder. Beat until well mixed.
- Shape dough into 1 1/4-inch balls. Place 2 inches apart on ungreased baking sheets. Make an indentation in each cookie with your thumb; rotate thumb to hollow out slightly.
- Combine all the filling ingredients (pecans through vanilla) in a small bowl. Fill each cookie with 1 rounded teaspoon of filling.
- Bake for 8-12 minutes or until lightly browned. Cool for 1 minute on baking sheet then remove to cool completely on a wire rack or sheet of aluminum foil.
