JOSH'S SORT-OF CARBONARA OR CHEESY BACON PASTA
This is my fiance's recipe from the days when the only kind of meat he could afford was bacon! It really only bears a passing resemblance to traditional carbonara recipes, but it's awfully good just the same. Use any kind of pasta like rotelli, tagliatelle, etc., that will catch the sauce.

Steps:
- Boil water for the pasta and cook per package directions.
- Meanwhile, cut bacon into 1/2 inch or 1 inch squares and saute 5 minutes on medium heat.
- Add the onion and saute until bacon is crispy and onion is soft.
- Add pasta, stir.
- Add parmesan and stir continuously for about 1-2 minutes.
- Add half and half and stir continuously for about 1-2 minutes.
- Serve on warmed plates.

EASY CREAMY CHICKEN & BACON PASTA
Great easy pasta, kiunda like a carbonara with a few differences. You can choose whateva pasta you want to have it with. I would really like to put a few herbs in there but not sure what will go. please help if you have any suggestions. Thanks

Steps:
- Heat pan med temp with oil, add garlic and onion till browned (2 mins approx).
- Add chicken and bacon cook till browned (5 mins approx).
- Pour in liquid stock simmer till reduced.
- Add mushrooms.
- Add half cream and half cheese stir till cheese has melted contiune adding cream and cheese till they are all in there. Keep simmering till the sauce has slightly thicken.
- You can either pour pasta in and fold through the sauce then serve or pour sauce over served pasta, choice is yours.
- Finish off with a bit of pamersan.

- Cook pasta according to package directions; set aside.
- Cook bacon in large skillet over medium heat until crisp; remove bacon; reserve 2 T.
- drippings in skillet.
- Crumble bacon and set aside.
- Saute sliced mushrooms and garlic in reserved drippings 3 minutes or until tender.
- Stir in pasta, parmesan cheese, whipping cream, and pepper; simmer over medium-low heat until sauce is thickened, stirring often.

- Place a large pot of lightly salted water (no more than 1 tablespoon salt) over high heat, and bring to a boil. Fill a large bowl with hot water for serving, and set aside.
- In a mixing bowl, whisk together the eggs, yolks and pecorino and Parmesan. Season with a pinch of salt and generous black pepper.
- Set the water to boil. Meanwhile, heat oil in a large skillet over medium heat, add the pork, and sauté until the fat just renders, on the edge of crispness but not hard. Remove from heat and set aside.
- Add pasta to the water and boil until a bit firmer than al dente. Just before pasta is ready, reheat guanciale in skillet, if needed. Reserve 1 cup of pasta water, then drain pasta and add to the skillet over low heat. Stir for a minute or so.
- Empty serving bowl of hot water. Dry it and add hot pasta mixture. Stir in cheese mixture, adding some reserved pasta water if needed for creaminess. Serve immediately, dressing it with a bit of additional grated pecorino and pepper.

ULTIMATE SPAGHETTI CARBONARA RECIPE

- Put a large saucepan of water on to boil.
- Finely chop the 100g pancetta, having first removed any rind. Finely grate 50g pecorino cheese and 50g parmesan and mix them together.
- Beat the 3 large eggs in a medium bowl and season with a little freshly grated black pepper. Set everything aside.
- Add 1 tsp salt to the boiling water, add 350g spaghetti and when the water comes back to the boil, cook at a constant simmer, covered, for 10 minutes or until al dente (just cooked).
- Squash 2 peeled plump garlic cloves with the blade of a knife, just to bruise it.
- While the spaghetti is cooking, fry the pancetta with the garlic. Drop 50g unsalted butter into a large frying pan or wok and, as soon as the butter has melted, tip in the pancetta and garlic.
- Leave to cook on a medium heat for about 5 minutes, stirring often, until the pancetta is golden and crisp. The garlic has now imparted its flavour, so take it out with a slotted spoon and discard.
- Keep the heat under the pancetta on low. When the pasta is ready, lift it from the water with a pasta fork or tongs and put it in the frying pan with the pancetta. Don't worry if a little water drops in the pan as well (you want this to happen) and don't throw the pasta water away yet.
- Mix most of the cheese in with the eggs, keeping a small handful back for sprinkling over later.
- Take the pan of spaghetti and pancetta off the heat. Now quickly pour in the eggs and cheese. Using the tongs or a long fork, lift up the spaghetti so it mixes easily with the egg mixture, which thickens but doesn't scramble, and everything is coated.
- Add extra pasta cooking water to keep it saucy (several tablespoons should do it). You don't want it wet, just moist. Season with a little salt, if needed.
- Use a long-pronged fork to twist the pasta on to the serving plate or bowl. Serve immediately with a little sprinkling of the remaining cheese and a grating of black pepper. If the dish does get a little dry before serving, splash in some more hot pasta water and the glossy sauciness will be revived.
