BBQ BAKED BEANS
No Southern BBQ is complete without baked beans! Beef, peppers, onions, and a dose of Sweet BBQ Pit Sauce provide a terrific complement for smoked meats.

- Sweet BBQ Pit Sauce: In a saucepan, combine the dry ingredients and mix well to break up any lumps. Add ketchup, melted butter, water, vinegar, and Worcestershire sauce. Bring sauce to a simmer over low heat. Continue to simmer, stirring the entire time until the sauce has reduced and thickened, about 15 minutes. (Keeping the heat low helps prevent the butter from separating and the sugar from burning.)
- Sauce is done when it thinly coats a spoon and has reduced by about ⅓. Cool to room temperature, stirring occasionally so it doesn't stick to the bottom. Store in a covered container in the refrigerator. (It will keep for months, thanks to the vinegar.) Makes about 3 cups of Sweet BBQ Pit Sauce.
- Prepare the vegetables and beef: Trim onion and pepper, then cut into chunks. Dice using a vegetable chopper, or use a knife to small dice (¼-inch pieces). Heat oil in a medium-sized skillet over medium heat. Sauté onion and pepper until softened, 6-8 minutes. Add ground beef, stir to break up meat, and continue cooking until meat is no longer pink, 6-8 minutes. Drain fat from skillet and set ground beef mixture aside.
- Preheat oven to 375 F. In a large bowl, add ground beef mixture and Sweet BBQ Pit Sauce to the drained beans; stir to combine. Place in a 13x9-inch baking dish and cover with foil. Bake until brown and bubbly, 20-30 minutes. (Alternatively, a thermometer placed into the center of the beans should register 160 F.)
- Remove dish from oven and remove foil. Stir and serve. Note: This is a great dish to make ahead of time. Vegetable-beef mixture can be cooked and refrigerated up to two days in advance. On the day of serving, simply mix bean ingredients (Pitmaster Jones calls this a "bean set") and bake as directed. Since you're reheating meat, use a digital thermometer to make sure the beans reach 160-165 F for safe consumption.
LOW-FAT BEEF AND BEAN TORTILLA BAKE
I found this recipe in a little betty crocker magazine called simple healthy meals. This recipe is so good because it is made with on hand ingredients so I use this as an easy, last minute idea when I cant think of anything to make for dinner. This dish is very healthy and doesnt taste like it is. The few changes I make to the recipe are I just use all black beans, since they are healthier than pinto beans. I use extra sharp full fat cheddar, you dont need very much anyways being extra sharp so why not? And I like to add a can of my favorite el pato tomato sauce (yellow can) to the meat mixture also. And also I just lay out the tortillas tearing them so they fit in the pan. the strips are extra work I dont think that is neccesary. I like to serve this with a little bit of sour cream.

- Heat oven to 350 degrees. In 12 inch skillet, cook beef over medium heat 8-10 minutes, stirring occasionally, until brown; drain, stir in beans, tomatoes, seasoning mix and water. Cook 2-4 minutes. stirring occasionally, until heated through. Stir in 1/2 cup of cheese.
- In an 8 inch square glass baking dish, spread 2 cups of beef mixture. Top with half of the tortilla strips. Spoon half of the remaining beef mixture over strips. Add remaining tortilla strips; top with remaining beef mixture.
- Bake uncovered about 30 minutes, until bubbly and heated through. sprinkle with remaining cheese and bake 5 minutes longer, until cheese is melted.

- HEAT oven 180 degrees.
- BROWN meat in pan until brown; RINSE and DRAIN; return to pan.
- ADD green chilli diced, diced onion; COOK until soft.
- ADD kidney beans, canned tomatoes and tomato paste, frozen peas and spices; mix well; SIMMER uncovered 15 minutes.
- NOTE: If mixture appears to be dry, can add 1/2 cup water.
- Spray 2 Quart Casserole dish with no fat cooking spray.
- PLACE one tortilla, 1/2 the mixture.
- ADD another tortilla and rest of mixture.
- ADD third and top with cheese.
- BAKE 15 - 20 minutes until cheese has nice and brown.
- CUT into slices and serve with rocket and feta.
- ENJOY!
- NOTE: I used green chilli diced and included the seeds; can use red or green and deseed; personal preference.
- NOTE: Taste sauce and add spices according to personal taste (I like it HOT :) ).

- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet over medium high heat, combine the ground beef and salt and pepper to taste. Saute for 10 minutes, or until well browned. Add the tomato sauce, onion and Worcestershire sauce. Reduce heat to low and simmer for 10 minutes.
- Prepare potatoes according to package directions. Place beef mixture into a casserole dish. Layer the beans over the beef and smooth prepared potatoes over the beans.

BEEF & BOSTON BAKED BEANS

- Tip the beans into a large pan, then pour in enough water to cover the beans by 5cm. Add the bay and leave to soak overnight. The next day, drain the beans, return to the pan and pour in enough fresh water to cover the beans by 3cm. Bring to the boil, reduce the heat to a simmer and cook for 20 mins until the beans are tender (you may need to top up the water slightly as they cook).
- Heat the oven to 140C/120C fan/gas 2. Heat the oil in a large casserole or ovenproof saucepan, and fry the beef for 5 mins over a high heat until evenly browned (you'll need to do this in batches). Transfer to a plate using a slotted spoon. Add the lardons and onion to the pan, and cook over a medium- high heat for 5-7 mins until the onions are turning golden and the lardons are starting to crisp.
- Stir the beef back into the pan. Add the beans along with the cooking liquid, and stir in the garlic, treacle, tomato purée, mustard powder and cloves. Season, then top up with some water so the beans are covered by 2-3cm. Cover and bring to a simmer, then transfer to the oven for 2 hrs 30 mins. Remove the lid, stir and return to the oven for 1 hr 30 mins until the meat is tender and the sauce rich. Once cooled, the beans can be frozen for up to three months (see below). Serve with jacket potatoes or bread and coleslaw.
