CHRISTMAS CAULIFLOWER

A Swiss cheese sauce gives this vegetable casserole an extra special taste. I have served it for Christmas for the past 20 years, and my family says the meal just wouldn't be as delicious without it. -Betty Claycomb, Alverton, Pennsylvania

Number Of Ingredients 10

1 large head cauliflower, broken into florets
1/4 cup chopped green pepper
1 jar (7.3 ounces) sliced mushrooms, drained
1/4 cup butter, cubed
1/3 cup all-purpose flour
2 cups 2% milk
1 cup shredded Swiss cheese
2 tablespoons diced pimientos
1 teaspoon salt
Paprika, optional

Steps:

  • Place 1 in. of water in a large saucepan; add cauliflower. Bring to a boil. Reduce heat; cover and cook for 6-8 minutes or until crisp-tender. Drain and pat dry. , Meanwhile, in a large saucepan, saute green pepper and mushrooms in butter for 2 minutes or until crisp-tender. Add flour; gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Add pimientos and salt. , Place half of the cauliflower in a greased 2-qt. baking dish; top with half of the sauce. Repeat layers. Bake, uncovered, at 325° for 25 minutes or until bubbly. Sprinkle with paprika if desired.

This is a Taste of Home recipe. I like it because with the exception of the cauliflower, I usually have the other ingredients on hand. So whenever cauliflower goes on sale, I will usually make this recipe. The decorations of using black olives for the mouth and eyes and using carrots for the nose are cute, but I rarely do that.

Number Of Ingredients 11

6 cups cauliflower florets
1/4 cup diced white onion
1/4 cup unsalted butter
1/3 cup all-purpose flour
2 cups milk
1 cup shredded swiss cheese
1 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon white pepper
10 black olives
1 baby carrot

Steps:

  • In a large saucepan, cook cauliflower in a small amount of water for 6-7 minutes or until crisp-tender; drain well.
  • In a medium saucepan, saute onion in butter for 2 minutes. Stir in flour until blended; gradually add milk. Bring to a boil; boil for 2 minutes, stirring constantly.
  • Remove from the heat; stir in cheese until melted. Add salt, garlic salt and pepper. Place half of the cauliflower in a greased 2-1/2-qt. baking dish; top with half of the sauce. Repeat.
  • Bake, uncovered, at 350° for 20 minutes or until bubbly. Add olives for eyes and mouth and a carrot for the nose. Yield: 6-8 servings.
