Bold seasoning, a sweet/heat flavor combination, and some time on the grill turn an inexpensive cut of meat into an irresistibly delicious meal. My brother Jim's Grilled Country Style Ribs are unforgettable.

6 bone-in country style ribs (approximately 3 ½ pounds)
2 teaspoons Lawry's Garlic Salt (or to taste)
2 teaspoons McCormick's Montreal Steak Seasoning (or to taste)
1½ cups sweet chili sauce (like Mae Ploy )
1 cup Kinder's Mild and Hot BBQ Sauce ((½ cup of each) or brand of your choice, for basting)

Steps:

  • Season the ribs with garlic salt and steak seasoning on all sides. Place in a large dish and add the sweet chili sauce, turning to coat the ribs. Cover the dish and refrigerate for a minimum of 2 hours or overnight.
  • Prepare your gas or charcoal BBQ (preheat or get the charcoal going).
  • Place the ribs on the grill and cook, covered, over low or indirect heat, turning occasionally. While the ribs are cooking, combine some of the mild and hot BBQ sauce in a small mixing bowl to achieve the heat level desired. After about 45 minutes, baste the ribs with sauce. Increase heat and continue to cook, basting every now and then and turning often, for another 15 to 20 minutes or until cooked through and nicely caramelized.

2 tablespoons garlic powder
1 tablespoon salt
1 tablespoon pepper
2 cups of your favorite barbecue sauce

Steps:

  • Preheat oven to 325.
  • Place ribs meaty side up in an ungreased baking dish.
  • Sprinkle with garlic powder, salt, and pepper.
  • Cover with foil and bake for 2 hours.
  • Drain liquid.
  • Brush ribs generously with BBQ sauce.
  • Bake uncovered for an additional 30 minutes in oven or on the BBQ.
  • Add more sauce half-way through.

2 racks pork baby back ribs (about 5 pounds)
1/4 cup soy sauce
1/4 cup dried oregano
2 tablespoons onion powder
2 teaspoons garlic powder
1 liter lemon-lime soda
1/2 cup unsweetened pineapple or orange juice, optional
BARBECUE SAUCE:
1/2 cup sugar or packed brown sugar
1/2 cup hot water
1 cup ketchup
1/4 cup honey mustard
1/4 cup barbecue sauce of choice
3 tablespoons lemon juice
1-1/2 teaspoons white vinegar

Steps:

  • Brush ribs with soy sauce. Combine oregano, onion powder and garlic powder; rub over both sides of ribs. Transfer to a large shallow roasting pan; refrigerate, covered, overnight., Preheat oven to 225°. Add lemon-lime soda and, if desired, juice to roasting pan (do not pour over ribs). Bake, covered, until tender, about 3 hours., Meanwhile, make barbecue sauce by dissolving sugar in hot water; combine with remaining ingredients, thinning with additional lemon-lime soda or juice if necessary. Reserve 1 cup for serving., Remove ribs from oven; discard juices. Brush both sides with barbecue sauce. Grill ribs, covered, on a greased grill rack over low direct heat, turning and brushing occasionally with remaining sauce, until heated through, about 10 minutes. Cut into serving-size pieces; serve with reserved sauce.

1 large onion, cut into 1/2-inch rings
1 bottle (18 ounces) hickory smoke-flavored barbecue sauce
1/3 cup maple syrup
1/4 cup spicy brown mustard
Thinly sliced green onions, optional

Steps:

  • Sprinkle ribs with salt and pepper. Place onion in a 6-qt. slow cooker. Top with ribs. In a large bowl, combine barbecue sauce, maple syrup and mustard; pour over ribs. Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
1/4 cup apple cider vinegar
1 teaspoon crushed red pepper flakes
2 bay leaves
2 1/2 cups chicken stock
Creamy Polenta, recipe follows
2 tablespoons chopped fresh parsley, for garnish
Vegetable cooking spray
1 1/3 cups half-and-half
1 cup milk
2 tablespoons butter
1/3 cup coarse polenta, or corn grits
Kosher salt
1/2 cup grated Parmesan
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Pat the ribs dry and sprinkle with salt and pepper. Heat 2
  • tablespoons of the oil in a Dutch oven over medium-high heat and brown the ribs
  • on all sides, working in batches if needed. Remove the ribs and set aside. Add
  • the remaining 1 tablespoon of oil to the Dutch oven and reduce the heat to medium.
  • Add the carrots, celery, onions and some salt and pepper and cook until soft,
  • about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add
  • the tomato paste and cook, stirring, to remove the raw flavor, about 3 minutes.
  • Deglaze the pan with the vinegar, and then add the red pepper flakes and bay
  • leaves.
  • Add the ribs back to the pan and add enough stock to reach
  • halfway up the sides of the ribs. Bring the pan to a simmer, cover and place in
  • the oven. Braise until the meat is tender, about 1 1/2 hours. During the last
  • half hour, uncover to allow the liquid to reduce and the pork to brown.
  • Serve the ribs with Creamy Polenta, spooning the sauce on
  • top, and garnishing with parsley.
  • Spray the insert of a slow cooker with cooking spray (for easier clean up) and preheat on high.
  • In a medium saucepan, add 1 cup of the half-and-half, the milk, 1 tablespoon of the butter and the polenta. Season with salt and bring to a boil over medium-high heat, whisking constantly to keep the mixture lump-free. Boil for 2 to 3 minutes. Pour the mixture into the slow cooker and cook on high for 2 hours, stirring once or twice per hour.
  • Once you are ready to serve, open the slow cooker and whisk in the remaining 1 tablespoon butter, the remaining 1/3 cup half-and-half and the Parmesan. Salt and pepper conservatively since the polenta will be served with a robustly salted dish.

1 1/2 teaspoons hot paprika
3 tablespoons extra-virgin olive oil
3 medium onions, peeled and cut into wedges
1 12-ounce bottle amber ale
1 1/2 cups low-sodium chicken broth
2 bay leaves
6 sprigs thyme
2/3 cup apple cider vinegar
3 tablespoons honey

Steps:

  • Preheat the oven to 425 degrees F. Pat the ribs dry, season with salt and sprinkle with 1/2 teaspoon paprika. Heat the olive oil in a large Dutch oven over medium heat. Add the ribs in batches and cook until browned, about 8 minutes per side. Remove to a plate. Add the onions and cook until browned, about 10 minutes. Add the remaining 1 teaspoon paprika and season with salt.
  • Add the beer; bring to a boil and cook until the liquid is reduced by half, about 8 minutes, scraping up the bottom of the pot with a wooden spoon. Add the chicken broth, bay leaves and thyme; when the liquid begins to simmer, return the ribs to the pot and transfer to the oven. Cook, uncovered, turning the ribs once or twice, until the meat is almost tender, about 1 hour.
  • Mix the vinegar and honey in a measuring cup. Remove the pot from the oven and place on the stovetop; bring to a simmer over medium heat. Add the vinegar mixture and bring to a boil, then return the pot to the oven. Continue to braise, uncovered, until the ribs are tender, 15 to 20 more minutes. Return the pot to the stovetop and transfer the ribs to a plate. Bring the sauce to a boil over medium heat; skim off the fat and cook until thickened, 10 to 15 minutes. Grill 15-20 minutes longer or until a thermometer reads 160°, turning and basting occasionally. Serve with the remaining sauce.
