JIMMY CARTER DESSERT
A fitting tribute for the 39th president of the U.S.A. This pie is larger than life, and is topped with the peanut farmer's favorite nut. Serves enough for a Habitat for Humanity work crew.

Steps:
- Combine graham cracker crumbs, sugar, and melted butter or margarine. Press firmly into the bottom of a 13 x 9 inch pan.
- Mix the cream cheese and peanut butter together until smooth. Stir in 2 cups of the whipped topping and the confectioners' sugar. Pour mixture over crust.
- Mix the pudding mixes and milk together, and pour over peanut butter layer. Spread remaining whipped topping on top. Sprinkle with chopped peanuts and shaved chocolate. Chill.

JIMMY CARTER DESSERT
Steps:
- 1. Crust: Mix 1 cup peanuts with 1 cup flour and the softened stick of butter.
- 2. Blend together and press in 13x9\" pan.
- 3. Bake for 20 minutes at 300.
- 4. Cool.
- 5. First Layer-Cream the cream cheese with the peanut butter and 1 cup confectioners\' sugar with electric mixer.
- 6. Blend in 1 cup whipped topping with a spoon.
- 7. Spread on cooled crust carefully.
- 8. Second Layer-Blend instant puddings into cold milk.
- 9. Spread on top of first layer.
- 10. Third Layer-Spread remaining whipped topping on top of 2nd layer.
- 11. 4th Layer-Drizzle chocolate syrup on top of whipped topping.
- 12. 5th Layer-Sprinkle with remaining half cup chopped peanuts.
- 13. Freeze.
- 14. Remove from freezer 1 hour before serving.
- 15. Refrigerate or refreeze leftovers.

Steps:
- For Crust: Mix 1 cup peanuts with flour and the softened stick of butter or margarine. Blend together and press in 13" x 9" pan. Bake for 20 minutes at 300 degrees F. Cool. Cream the cream cheese with the peanut butter and confectioners' sugar with an electric mixer. Blend in half of the whipped topping with a spoon. Spread on cooled crust carefully. Blend instant puddings into cold milk. Spread on top. Spread remaining whipped topping on top of that. Drizzle chocolate syrup on top of whipped topping. Sprinkle with remaining chopped peanuts. Freeze. Remove from freezer 1 hour before serving. Refrigerate or refreeze leftovers.
JIMMY CARTER CAKE
This is more a layered dessert than a cake. Its very good. This is from an old newspaper clipping. Is all I had on hand was golden roast peanuts, but they worked great.

Steps:
- First Layer: Combine flour, margarine and peanuts and blend like pie crust.
- Press into bottom of 9 x 13 pan and bake 20 minutes at 350°F (Note: It takes a little work to make the crust cover the whole bottom, but it does and its worth it!).
- Cool.
- Second Layer: Blend all second layer ingredients together and pour carefully on top of first layer.
- Spread to even it out.
- Third Layer: Blend third layer ingredients and pour on top of second layer.
- Let pudding set up a little before putting fourth layer on.
- Fourth Layer: Put remainder of Cool Whip on top and garnish with the shaved chocolate and peanuts.

CORN FRITTERS PRESIDENT JIMMY CARTER'S

Steps:
- In a mixing boil combine corn kernels, sugar, salt, pepper and diced red pepper. Stir in egg yolks, one at a time. Fold in flour. In a clean bowl beat the egg whites until stiff. Fold into the batter. In a large cast iron skillet heat oil over medium heat; gently drop in heaping tablespoons of the batter to make around 12 fritters.
- Fry fritters to golden brown turning to cook evenly; allow two minutes frying time for each side so that the fritters are puffed up and cooked through; using a slotted spoon transfer onto paper towel. Drain well and serve hot.
- For breakfast dish arrange in a baking sheet and dust with confectioners sugar. Glaze under hot broiler for one to two minutes and serve at once with honey or maple syrup.
